    I'm almost 78 and make it regularly for my grand kids. I always add about 1 1/2 teaspoons of vanilla essence to the caramel and tonight's batch is the best ever. I added just over 1 desert spoon of olive oil to the chocolate and it was so easy to cut once set, without the chocolate being too hard and difficult to cut. If you also add a few lines of white chocolate across the top while it's still warm and then draw a toothpick across it at right angles it looks so much more professional. Hope this help's.     1 cup / 125g plain flour
    1/2 cup / 87.5 g brown sugar, not tightly packed
    1/2 cup / 45 g desiccated coconut (US: sweetened coconut flakes, Note 1a)
    4.5 oz / 125 g unsalted butter, melted
    Caramel filling
    1/2 cup / 4 oz / 125g unsalted butter, roughly chopped
    1/2 cup / 87.5 g cup brown sugar
    14 oz / 395 g sweetened condensed milk (1 can) (Note 1b)
    Chocolate Topping
    7 oz / 200 g dark or milk melting chocolate (America: semi-sweet chocolate chips)
    1 tbsp vegetable oil

    Hey if you guys are having trouble with the Carmel thickening up, put it on a higher heat and stir constantly for a couple minutes keep an eye on it though cause It will burn if u stop stirring. Once of the element stir a bit more

    I've only ever made this really well once after that 'down hill'. Why my caramel ends up under the baking paper and my base bubble when cooking. I wonder if my base is to thin. I do have the correct size pan. Dunno what else. Like I said my first attempt wasn't good. Frustrating

      Hi, recipe I use has the following :
      60 ml butter
      45ml Golden syrup (Lyll's is best)
      397 g Condensed milk
      125 ml Caster sugar

    Such a disaster on my part. Cookie base was bready , caramel filling bubbled in the oven and tastes burnt, chocolate didn’t melt so I tried to spread it all over and just mushed with the caramel. Overall tastes like sugar

      Aussies put coconut in and have a thicker layer of caramel than the ones Ive had in the UK

      You add it to pre-melted chocolate. Oil acts as a non-hardener and keeps the melted chocolate soft. For a harder consistency, add a little cream. Just in case you think chocolate is made from vegeble oil, it is not.

    ive never understood why people make it with the chocolate on the top i personally think it's disgusting and when I buy caramel slice I remove it lol
