Hey Gemma, Your recipe looks delicious. I went to Scotland last summer and tried millionaire shortbread and when I got back home my grandma sent me a recipe and I tried to make it. Soo good. I can't wait to try it again. I hope you have been well lately. I think I will make these for St. Patricks day.
I love seeing how different people make the same recipe. I recently also made this recipe but English style :) My grandma taught me the unwritten rule that your shortcake should be the thickest layer then the caramel again thinner than the previous later and the chocolate the thinnest layer, that way as a bar it's not too overpouring. For anyone who wants to make this recipe: I think 1 can of condensed milk + 1 or 2 tbsp of butter is enough for a 8x8 or 9x13 pan. I followed the recipe exactly (2 cans) and found the caramel layer to be EXTREMELY SWEET, even with salt added and as someone with a sweet tooth! I cant even eat 1 whole square with how sweet the caramel layer is. The shortbread is perfect though, but be sure to slightly underbake so it doesn’t get too crumbly! I baked mine for around 27mins instead of 35. It cooked a bit more as it cooled. For the chocolate, make sure to use DARK chocolate and add sea salt flakes on top! I used semisweet and even that was still too sweet 😂 So dark is the way to go! Make sure to score your chocolate before slicing so it doesnt crack. Thumbs up so others can see 👍🏻 Still so yum!!

I made these for my mom for mothers day. We are from the Irish Loop in Newfoundland and LOVE shortbread. These were/are the best I've ever tasted! Never had shortbread before so, I gave it a try yesterday. I don't know how it actually tastes but mine tasted more like Twix chocolate. My first try of shortbread to me was, what Gemma says 'gorgeous' and yummy. Oh, I loved it so much. Thank you!
This caramel is what we call "beijinho" in Brazil, just ler it cool down, roll it into truffles and then roll them in shedded coconut. Delicious staple children's party candy 😋🇧🇷

😚The best Mama's know when to make the rules and break the rules. I still remember to this day particular times my Mama broke the rules for me, so we could get closer. This Mama is starting really early, and I think she will be fondly remembered as well.
I made this and I know it’s not part of the recipe but I sprinkled coarse sea salt on top before the chocolate hardened omg I thought I was in heaven. I had to give most of it away because I would of ate it all myself. 🥰
So glad I found you and your recipe!! I just finished making a much more time consuming millionaire shortbread and thought there has to be something simpler. Going to try yours tomorrow. I used to buy Irish butter as a treat here in the states, but have started using Irish butter exclusively last year. Cows are grass fed and given seaweed, in Ireland, which is so much better for us and better for the world, cutting down on greenhouse gases.

I hv a tip for u...u can make caramel more easily by boiling the condensed milk can directly in a pressure cooker on medium to low heat for half n hr...aftr the pressure is released open the lid and take out the can..then open up the can lid and u can see it has caramelized.

I gave some to an elderly friend of mine whom is upset over the mishap of a family member and it just by eating them which also brought back memories of eating something similar as a child. I find when I am topping a square with melted chocolate ( like the Canadian Classic: Nanaimo Bars) it helps to add a small amount ( like 1 level tblsp for a 9X9 pan amount) of Vegetable shortening to the chocolate as it melts and stir in well. It helps the Chocolate to not crack when you are cutting it. These look FABULOUS ! Yum !
Made these 2 days ago to bring as a treat for my Nurse Anesthesia COVID Team at work, Excellent! Everyone loved them. My daughter especially, she likes to microwave her piece for 10 seconds. I did use semi-sweet chocolate, since that is what I had available. It worked well, thank you.

Hi I just found your channel and tried this recipe immediately. It was a huge success and you know my favourite part? The caramel. It's very easy to make and great taste. I saw that America’s test kitchen also had a version and had been meaning to make it however I prefer the proportions of your recipe because I love shortbread so much. It looks like other recipes really skimp on the biscuit portion and he who doesn’t love a proper biscuit and I’m an American with English ancestry

I hate cooking, but love eating sweets. This recipe looks like the easiest thing to make, and the most delicious thing to eat...I’ve bookmarked the recipe, and will make it this Sunday 👍🏻👍🏻👍🏻 Update: It’s Sunday evening, and I’m finally enjoying the fruits of my labors, and let me tell you....oh...my...GOSH!! These are freaking delicious!!! It was super easy, although fairly time-consuming, but bear in mind, I’m not used to baking at all. Having, sadly, been born without the cooking gene, I’m the sort who adheres literally to the recipe. It came out exactly how it should 👍🏻. I will say, mind you, that, after 35 minutes of stirring the caramel mixture, I discovered that I actually needed to turn up the temperature to “medium”. My stove top is is the glass-top electric sort. Had I not done that, I fear I’d still be standing there, stirring it! Anyway, my husband and I are thoroughly enjoying them!

This Millionaire's Shortbread recipe looks really delicious Gemma. I really liked how you were showing how to make the caramel for that Millionaire's Shortbread recipe. Normally, the way I've seen caramel made is with warm water and some powdered/ confectioner's sugar. But that technique works just as well.
I noticed that it gets really golden when it's cold down. It reminds me twix bars I really love your cooking. I always try your recipes and I love your microwave mug recipes.
"What butter and whiskey won't cure", huh? Sounds kinda similar to the Finnish saying "Jos ei terva, sauna tai viina auta, silloin on tauti kuolemaksi" meaning "If tar, sauna, and booze don't help, then the illness is fatal." 😂😂
@@keithhanley7796 ...put it in food. There's actually lots of foods and stuff in Finland that you can get in tar-flavor (ice cream, for example). Should be noted, tar in this case (terva, in Finnish) refers to pine tar, the stuff you get by heating pine-wood slow enough, and use to coat wooden boats (and wooden buildings sometimes too) so that water won't rot and ruin them and they stand weather better. It does not refer to coal tar used to fix roads and stuff, which isn't safe to eat. Pine tar has a pretty nice smell, too, but I'm not personally a fan of the taste
@@elsalaiho1699 thanks for telling me about that (and that it wasn't coal tar you were referring to!) Here in Canada our first nations have a tradition of using pine or spruce gum medicinally, as well. And it was also used as chewing gum by the early settlers - some people still use it that way, but only those who live off the land.
It's interesting that you mention it being called caramel squares in Australia because I had never seen or heard of this dessert until I was living in England. We have caramel slice which is almost the same but has a biscuit crumb base rather than a shortbread base.
I've grown up with the cooking secret "How to make something taste better? Add butter and whiskey/beer" It just works. Speaking of buttery bars, try making Nanaimo Bars

Love this recipe. Thank you Gemma. In South Africa, we also call this Millionaire's Shortbread. I think the only major difference is that our caramel is more toffee-like, or pretty much like the darker caramel in a Twix Bar due to the addition of golden syrup and castor sugar to the sweetened condensed milk and butter. One of my favourites!!!

I've had millionaire's shortbread with dark chocolate in London. I loved the combination of sweet caramel and not-so-sweet dark chocolate.

That’s dulce de leche, not caramel. Caramel is made from sugar.

I tried this recipe, it is to die for. I like to experiment so I added vanilla extract and finely chopped walnuts to the cookie dough. I love the stories too 🤗

Hi I just found your channel and tried this recipe immediately. It was a huge success and you know my favourite part? The caramel. It's very easy to make and great taste. However I cut the squares into smaller pieces as they are very rich. Few bites in my mouth,pure bliss. Will definitely going to make it again. Thanks for sharing your great video. ❤️

I saw that America’s test kitchen also had a version and had been meaning to make it however I prefer the proportions of your recipe because I love shortbread so much. It looks like other recipes really skimp on the biscuit portion and he who doesn’t love a proper biscuit and I’m an American with English ancestry

Update: It’s Sunday evening, and I’m finally enjoying the fruits of my labors, and let me tell you....oh...my...GOSH!! These are freaking delicious!!! It was super easy, although fairly time-consuming, but bear in mind, I’m not used to baking at all. Having, sadly, been born without the cooking gene, I’m the sort who adheres literally to the recipe. It came out exactly how it should 👍🏻. I will say, mind you, that, after 35 minutes of stirring the caramel mixture, I discovered that I actually needed to turn up the temperature to “medium”. My stove top is is the glass-top electric sort. Had I not done that, I fear I’d still be standing there, stirring it! Anyway, my husband and I are thoroughly enjoying them!

No technically your pregnant for 40 weeks. Which is 10 months. The US says 9 months but it's the same

Hey Gemma, this looks amazing! Just wondering, if I'm in a country where I can't get sweetened condensed milk, how much sugar would I need to add to regular condensed milk to make this work? Or would the caramel just not work that way?

This Millionaire's Shortbread recipe looks really delicious Gemma. I really liked how you were showing how to make the caramel for that Millionaire's Shortbread recipe. Normally, the way I've seen caramel made is with warm water and some powdered/ confectioner's sugar. But that technique works just as well.
This one is creamier because it has milk. Try it. You will love it.
I noticed that it gets really golden when it's cold down. It reminds me twix bars

@@keithhanley7796 ...put it in food. There's actually lots of foods and stuff in Finland that you can get in tar-flavor (ice cream, for example). Should be noted, tar in this case (terva, in Finnish) refers to pine tar, the stuff you get by heating pine-wood slow enough, and use to coat wooden boats (and wooden buildings sometimes too) so that water won't rot and ruin them and they stand weather better. It does not refer to coal tar used to fix roads and stuff, which isn't safe to eat.
Pine tar has a pretty nice smell, too, but I'm not personally a fan of the taste
@@elsalaiho1699 thanks for telling me about that (and that it wasn't coal tar you were referring to!) Here in Canada our first nations have a tradition of using pine or spruce gum medicinally, as well. And it was also used as chewing gum by the early settlers - some people still use it that way, but only those who live off the land.
It's interesting that you mention it being called caramel squares in Australia because I had never seen or heard of this dessert until I was living in England. We have caramel slice which is almost the same but has a biscuit crumb base rather than a shortbread base.

Love this recipe. Thank you Gemma. In South Africa, we also call this Millionaire's Shortbread. I think the only major difference is that our caramel is more toffee-like, or pretty much like the darker caramel in a Twix Bar due to the addition of golden syrup and castor sugar to the sweetened condensed milk and butter. One of my favourites!!!

Yes. It originates in Scotland, whatever other nationalities say! We had it as kids in the 1960s. It inspired Mars UK to launch Twix in 1967.
These are incredible , the only difficult part is the caramel cause it takes a while but they are completely worth the time and money
