    Okay as an Italian I need to explain the pesto thing. Pesto is a preparation made by oil, nuts, herbs, veg or herbs, and cheese if you want. The popular basil version is the basil and pine nuts one, but it’s also great in many others combinations. I’ll share my personal recipe: sundried tomatoes, olive oil, cashews, basil, garlic, salt and pepper :)

      @@ilikepancakes3458 I honestly never measure ingredients, but around 100 grams of cashews (boiled but you can also avoid it) , a handful of basil, half a clove of garlic, around an handful of sundried tomatoes and oil to blend (like 2/3 tablespoon). Salt and pepper to taste :)

    Pesto comes from the verb "pestare" which means "to crush" in Italian. The most famous is done with basil but in Italy there are even other flavors. If you ever go to Eataly they have a pretty vast selection of them. ;)

      I love making pesto from sundried tomatoes in oil, you can add walnuts or crushed almonds and the oil you need usually comes with it so it’s very quick :)

      ​@@TetiH most of them is just adding ingredients to the traditional recipe. Such as mentioned by @epona lee, sundried tomatoes make a fabulous pesto. One I love is Pesto alla Trapanese, which is a Sicilian type with cherry tomatoes and pecorino cheese (just change it with cashew or almond). Another favorite is the yellow and red peppers roasted in the oven before being pounded (personally I add a bit of dry calabrese pepper to spice up the sweetness from the other peppers but that's just personal taste :p ).

      dude when i was in italy for a semester abroad, my italian teacher hyped us up for a field trip to Eataly, and was really confused that it was just a grocery store. i mean i get it's innovative for Italy, but it was basically an American Whole Foods or Trader Joes which are very commonplace here. Lol.

      @@Shadeadder Other than visually speaking, I don't know if I agree with the comparison between Eataly and Whole Foods (or similars). Yes, both are grocery stores but while one is all about organic and natural from anywhere, Eataly is about promoting the variety of real Italian gastronomy that most foreigners don't know about. Most ingredients in Italy, for quality reasons, are only available in the region they are produced or in small specific shops which makes very hard, specially to foreigners, to taste a good one (and you probably notice that people here is very passionate about their local food tradition). So the hype about Eataly and why people suggest a visit, is because it tries to put together the best of each Italian region all in one place (to students is an easy way to learn which product comes from which part of the country). And to be sincere, even though in Italy I never go there, it's a blessing whenever I'm passing a long time abroad. at least my true "espresso" is guaranteed. Lol

    He works out a lot and is withdrawing from pain medication at the moment. He explained in a video that thats the reason he is skinny.

      He also has only one adrenal gland and it’s hyper active which drives his metabolism into overdrive. Sometimes people say they have a high metabolism, but like, this guy actually has a medical condition that causes it even when he isn’t active

      While he did say this and to a degree these could affect your weight, I just get the creeping feeling it’s an excuse/smokescreen for what could be disordered eating
      Multiple things
      Like saying you’re thin from working out- firstly working out is like 10% of what controls your weight, food is still most of the factor, so you won’t be super skinny or underweight from any amount of working out if you’re still eating normal/good calories
      And secondly, even if that’s the case and you’re underweight on a normal correct calorie intake because of how much you work out, then why not either work out less or eat more calories as an obvious easy solution? You’re essentially saying you’re deliberately knowingly staying thinner
      And the coming off pain meds
      I didn’t hear him specify what or how much meds
      But even if he’s coming off a huge dose of strong opiate like morphine, withdrawal doesn’t last long enough to significantly affect weight and not for long term either
      And that’s worst case scenario
      Idk something feels off
      Just the fact he brought up these excuses as defenses and addressed it specifically is the whole reason I actually thought critically about it
      Because it felt weird somehow
      Especially if he’s known to have had an Ed before too

      He also has a history with eating disorders and still has orthorexia which is obvious when you look at his channel, almost every video is about what he eats and this for > 4 years. Orthorexia nervosa is the compulsive obsession with "healthy food"

      I've been everything under the sun when it come to diet and I can tell you that eating "healthier"and eating more produce can increase your food bill some, HOWEVER, if you're purchasing from farmers markets and avoiding anything organic, it's not too terribly expensive. I currently do eat meat (chicken and fish only) but my grocery list consists of 70% produce, 20% carbs, 10% meat and meat substitutes and monthly it cost me and my parents, thats 3 people, about $150-$200. If I were to live alone maybe $100 a month?

      @@leahrose8004 I don’t know what you’re talking about with farmer’s markets... I’ve never, ever in my life been to a farmer’s market that has cheap produce, even when it’s in season. It’s always expensive. I just stick with aldi to keep healthy food cheap

      @@Becky0494 yeah we tend to go to aldi's, mainly because it closer, but produce at our farmers market tends to be incredibly cheap; rustic beefstake tomatoes for 30ish cents, heads of lettuce for less than a dollar, bulbs of garlic 3 for dollar, carrots/parsnips for a dollar or two a bunch, cucumbers for 20ish cents, potatoes for 3 dollars for 20lbs. Not to mention the "ugly bins" where you can get some, otherwise unsellable, produce for pennies if not free. Theres no doubt there are farmers market that charge outrageous pricing but they tend to talk about "organic" or "all natural" and just hike up the price on normal foods.

I can't really eat well where I'm living and I know that sounds stupid I eat the best I can but... When I move from here I'll be up on 20 acres and there's nobody for hundreds of Acres around except for one neighbor way up above on the mountain and one way down below. And the only choice I will have is to eat vegetables and legumes I'm going to have to make my own tahini Maybe?

      I had fresh tahini once. It was a revelation. Totally different to the supermarket stuff. Soooo good. Tahini from a jar kinda sucks.

    Whenever I see people just dumping plain water in soup I’m like “why?!” I’m a huge fan of the better than bullion veggie broth base because I’ve tried a ton of veggie broths and in my opinion it tastes the best. Plus it’s a paste you mix with water so you’re not filling up your cupboards with cans or boxes of liquid that take up a ton of space.

    Pesto just means “to pound” and references any sauce where the ingredients and pounded together in mortar and pestle. Pesto with basil and pine nuts etc is pesto a la genovese.

    Adding salt at the beginning of cooking is better than salting at the end. It dissolves better, and it's absorbed by dried stuff like beans. Also, salt helps onions, and mushrooms lose their water faster, so, when it's fairly dry you can add oil and it will result in improved frying and maillard reaction.

      Particularly when cooking beans from dry, it's suuuper important to add aromatics like bay leaves, a couple whole garlic cloves, some tasty herbs... the beans absorb a lot of the cooking water so that's a great way to make them flavorful and yummy on their own, let alone when adding them to a recipe!

      Yeah, seasoning as you go definitely adds more flavour rather than all at the end. I'm not sure about beans cause I use tinned but for lentils, you shouldn't salt them until the end of cooking or they become tough

      I salt my beans at the end, when they're almost done because I don't know if my stove sucks but they take already too long to cook with overnight soaking, if I salt them first they'll probably take 2h.

    Italian here, pesto litterally means pounded. It has to be a sauce with a base of nuts and oil but you can do any kind of combo, the basic ones are the basil and sun dried tomatoes but there are a lot of variants:)

    Hi from Italy! Original Italian Pesto has olive oil, basil, garlic, salt, pine nuts and Parmesan cheese. You can make a tasty vegan version using blended Macadamia nuts, they give the right creaminess! 😊

      Honestly homemade pesto is so good
      The basil is really the star imo so making altered versions like this I could totally see working great! I think the fresh basil and a good amount of salt + something oily/fatty like nuts is really the main thing that makes it so good

    He pretty much works out/ is intentionally active throughout the entire day.
    Most of us have more normal lifestyles and are in school/work/etc. so we don’t work out as much and therefore don’t have the extreme hunger he has.

    i make avocado bread instead of avocado toast sometimes lmao. when i lived in the uk i did that with beans on toast, but they were beans on bread. people told me i was a monster, but i treat it more as a sandwich - i.e. an open sandwich with avocado, hot sauce, hummus etc. it's really good :D

    I love him. He has great smoothie recipes and he prepares so many different dishes with veggies and fruits in season. Roasting veggies in the oven or a quick smoothie, he makes everything look delicious and he's so cute🥰

    Also, it’s good to salt the onions while you’re cooking them which does deepen the flavour but helps to release the water

    Cooking tips: yes, when you start cooking your base such as garlic, onion, carrot etc. you need to add salt and herb, similar to all spices that need to be heating in oil as the first step (actually those can also categorize as a spice)

    Tip for water for soups and stews. Potatoes (especially new summer ones) contain a lot of umami. Save the water from boiling potatoes and use it in stews and soups (but be careful about adding too much salt).
    For Christmas I made an awesome potato/root vegetable mash with carrots, selleri, onion, garlic ect.
    The boiling water became sauce and soup the next day. Only thing is that its not completely clear

    Hearing a vegan say they don't like most veggies is kind of refreshing to me!
    Most people think vegans eat carrots, salads and broccoli all day. Which I do but that's not because it's the only option in the plant-based world it's just what I like..

    Also salt specifically being added to onions helps them brown faster because the salt helps bring the moisture out of the onion

    I'm just at the beginning of your video and I'm already feeling this. I'm done getting excited in the kitchen. I'm burnt out. I posted in a local vegan group about how we should ask more companies to take unnecessary animal products like vitamin D out of cereal. 6 oz of vegan cereal cost the same price as 24 oz of the same cereal and it only thing that makes it not vegan is the D vitamin. Vegan products cost a fortune . I have to cook from scratch all the time. It's exhausting. I was met with patronizing and rude comments about how other people can do it and I should want to support vegan businesses. I have been doing it for a very long time I just don't want to anymore. I want some reasonable priced cereal available to me. Apparently that's too much to ask and I'm not vegan enough because I don't want to pay outrageous prices to support vegan companies.

      Try shopping at an organic grocery store. Whole Foods brand cereal doesn't add Vitamin D to their cereal. Really I imagine you could find some in your actual grocery store.

      I am able to find vegan cereal. As I stated in my comment it's grossly overpriced compared to regular cereal. So it plant milk, vegan cheese, mock meats and anything else you don't have to make from scratch. That's the point.

      Our ALDI has affordable mock meats and plant milks (even plant creamers).
      And somewhere online, I could have sworn I saw a vegan cereal at ALDI, video. I'm sorry, I don't have the link.
      Oh, and our ALDI has a burger like Beyond Burger but for less money and no smelly smells after cooking it.
      No burpie burps either (for us, YMMV). ALDI also has protein pastas for a fair price, too.
      Anyway, I'm sorry you're struggling. I hope you have an ALDI and get to give it a go. Prices in my area are very good.

      @@TheHappyWhisk thank you for your reply. We do not have an Aldi here but I think there is one about 30 or 40 minutes from here. I used to shop at Aldi before I moved here and it was more affordable. I should check it out again. Thanks. I wouldn't say I'm struggling so much as just burnt out and can see where it's hard for people that hate to cook to stay positive about this lifestyle. We deserve better cheaper options. I also remember being the super excited to learn to cook new vegan who shot down the idea that preparing food 3 to 5 times a day isn't super fun. Now sometimes I just want to pour my kids a bowl of cereal and still have some money leftover, you know.

      @@lauralee2277 I do get that, Laura. Yes, and I agree. Less expensive items would be wonderful. I found that Target online, sells the Barilla Protein pasta for less money than my local stores. Though Target online is funny. Sometimes they will ship to me and other times not. But it's a cheap way to make vegan buttered noodles for the kiddos. It's not the answer to everything, but just another quick option. I often make extra pasta for the fridge too. Oh ... and have you tried and Instant Pot? Oh my gosh. Such a time saver in that I can dump everything in, and go do what I need to about the house or from my desk. And, we can make extra portions for freezing. I use the Instant Pot for dried beans and then I freeze some so that later in the week, I just chuck those babies into whatever food needs more protein. But I do get being tired and frustrated and just wanting cereal at a fair price. Agreed! Cheers, Ivy.

    I also do the roasting vegetables in pesto thing lol my favorite is broccoli red onion potato cherry tomatoes and asparagus in classic pine nut basil pesto. I put it on a bed of spinach top with goat cheese (you could use nutritional yeast) and that’s lunch all work week!

    do you have sensory processing disorder? i’m autistic and it’s common for autistic people to not be able to tolerate a lot of textures in foods bc most of us have sensory processing disorder. Not implying you’re autistic, since you can have SPD without having autism but just wanted to share my own experience.

    I used to hate tahini too! but found a way to like it as a dressing by mixing it with smoked shoyu (which is smoked soy sauce) maple syrup, apple cider vinegar, yellow mustard, and a little bit of water if it is too thick. Sweet and salty... Delicious!

    Never balance Tahini with sweetness, it will end up being a Halva which has a completely different flavor profile.

    Do you have any suggestions for those of us who are allergic/ unable to digest the primary protein sources in veganism? I'm allergic to soy, gluten, and legumes, and cannot digest nuts amd seeds (I have gastroparesis and MCAS). I hateee eating animal products, but chicken is now the only protien my body doesn't reject violently.

      Hi Bonnie! Can you eat seeds like quinoa, hemp, sunflower, flax or sesame? For my hubby, who doesn't like quinoa straight up, cook rice, quinoa and millet all together and that's a good sneaky way to add quinoa. Though, he knows it's in there, he like the trio very much. Just an idea. Sorry you suffer from food allergies. Me too! Or, I did more than I do now but I get how much it sucks.

      Quorn uses mushroom protein in their mock meats, you might have better luck with that (be mindful that a lot of their stuff contains egg whites). Ultimately there are some people that are just physically unable to go fully vegan but even if you're able to slightly replace chicken with mushroom protein, it could help. (You'll have to lean more heavily on processed/isolated mushroom protein than just straight mushrooms though because they're so low calorie in their whole form.)

    I'm 60 years old and vegan for 6 years. Began vegetarian diet around age 40. As a result of my metabolism naturally slowing down due to age, I cannot eat huge amounts of food like Miles in the video. I would be very overweight. I see a lot of young people beginning a journey toward plant-based/vegan/fruitarian diets. They often require much more food for energy when replacing meat. But as they age, they will have to cut back on these calorie dense meals or they will be overweight as their metabolism changes with age.

    A Question I have. I was vegan for a few years and then started to study besides work and I became a vegetarian (my partner is one and he started cooking for me), because I just didn`t had the time to plan my meals so I get all the nutritions I need. How can I go back to beeing a vegan when I just don't have time to plan?

      Any healthy diet requires a little bit of planning. The good thing is that once you know the basics of nutrition, it is kind of a no brainer. Maybe just invest a weekend or two into some reading on vegan nutrition and go from there.

      @@19Thunderbird94 I just run food through the cronometer app. Without something like that I would just be guessing at my calorie intake and nutrients. Huel is convenient and allows me to hit all my vitamins and minerals, it’s just a bonus that it’s vegan honestly. I take in 800 calories of it a day to supplement what I was lacking in my traditional diet.

    I really like when you talk about how you are a kind of picky eater... I didn’t touch ANYTHING green for the first 24 years of my life, I have huge texture issues, and also think o fall into some kind of super taster category, so I’ve always had a hard time trying to choose foods that are healthy for me! It makes me feel better and gives me encouragement that I can still eat well in spite of all my eating quirks. 😅

    How is buying cruelty free an effective boycott? Every time I watch a video or read an article about why a person should buy cruelty free it shares a story about horrid things that happen to rabbits without explaining how buying products tested on animals for legal obligations for another market prevents animal testing. Perhaps better understanding this could help me be a better consumer. I like your channel a lot, thank you for your reason based approach.

      There's kinda two lines of argumentation (from the top of my head): 1. Refusing to buy from brands defers those brands/companies from selling in stores in mainland China (where cosmetics testing on animals, even post-production, still happens). As there are now fewer products going to the Chinese market, there are fewer products that can be tested on animals = less animal suffering.
      2. Large, multinational corporations that won't stop selling in China anyway will still have a financial impulse to work on convincing Chinese legislators to ban cosmetic animal testing. Currently, some large companies such as L'Oréal have joined organisations to oppose animal testing. Very cool of course, but they don't invest time, money and resources into something like that purely out if the 'goodness of their own heart'. They have a financial incentive: if they can convince the Chinese government to stop animal testing, they may gain (a large part of) costumers who demand cruelty-free products and thus they will earn more money. However, if the demand of cruelty-free products becomes too small, this incentive will fall away and these multinationals will likely pull out of initiatives lobbying against animal testing policies.
      Long story short, we need as many people refusing to buy products sold by companies who accept animal testing policies.

      In my opinion, companies typically make choices according to the amount of money they can make from the target clientele. So when people care about cruelty free etc., companies change their practices in order to get them to buy their products
