    Hello I don't understand what is the x axe ? It's the time but why it's not the date as the name of your images?

      using ARCGIS you can make a single layer in geotiff etc then same procedure.

    given that the area is a polygon how will the time series look

      The video explains how to extract time-series data for a pixel, not area. To proceed with time-series data extraction by a polygon (let's say, the average of pixels within the polygon), there are way more complex ways to do it. One easy way is to use SAGA gis or even the SAGA plugin for QGIS.
