I’ve been trying to make roti for years. I could never get it right. I can get everything right but to get the dough soft and thin without it being hard after is my biggest problem. My second attempt at making dhalpuri after my first attempt 3 years ago. This will now be my go to dhalpuri recipe. Thank you for this recipe, its very easy to follow! a couple questions.... what diameter rolling board and tawa do you use and what length rolling pin do you use. Do you also know how much each dough ball weighs? im having trouble with sizing and shaping my rotis. Thank you so much!
The rolling board is just over 12 inches and the tawa is 12 inches in diameter. The dough balls are about 1/2 a cup size. Practice makes perfect, I’ve never weighed them before
Thanks to your recipe Matthew my roti came out soft every time and I used 2 tbsp of butter instead of oil and finished it with oil on the top to rest. Now I enjoyed every time making roti. 💞👍

When i lived in Trinidad ,i attended Progressive high school, in Port of Spain, many many many years ago i am close to retirement,,so you can figure how many years ago,, there was an East Indian woman close to the school ,just around the corner who made Dahlpuri roti, the best,,i ate a roti every day for lunch and i mean every single school day..i can buy Dahlpuri from a couple of people i know, here in the u.s. but i want to do them myself.

I usually make your oil roti and it comes out perfect every time. Do you knead the dough for the oil roti for 8-10 mins like you did for the dhal? I never kneaded it that long but maybe I’ll start.
For the oil roti it's a bit different it doesnt need too much kneading. I would say 5-6 minutes kneading for the oil roti will work. The more you knead anything the softer it comes out so it's a win win situation anyways. Let me know how this comes out if you try it.

Hi thanks for the subscribe! I would say about 2 and a 1/2 cups. (More or less depending on the climate/how dry the flour is). I would start with about 1 or 2 cups and then adjust from there.
Yea!! I did it finally got perfect dhalpuri and my family liked it. Thank you Matthew. Just one thing it didn't rise as much as yours did, maybe the baking powder was old, not sure. I also used ghee instead the oil.
I am glad they enjoyed it! So it is a common misconception that the baking powder makes the dhalpuri rise. But it actually rises based on how well the dhalpuri is filled. Sometimes the dhal spills out and there are little holes in the roti (which keep it from rising/puffing). This happens to me sometimes. Not all of my dhalpuris always rise, just about practice and getting the method right. I am sure yours came out super delicious though.

What’s the size of your rolling board? I’m trying to decide between a 14 or a 15 inch board.
My tawa is 12 inch so I roll my roti to that size. However the board is like 13/14 inches

After cooking is best to freeze. Allow them to cool completely and then wrap in wax paper and then put them in a freezer ziplock bag
