      The entire point of Wagyu is its texture and the manner in which the cut is marbled with fat running throughout. If you grind it up it's just like literally any other ground beef, only absurdly fatty, which probably entices Jack.

      Which he could have achieved by grinding almost any fatty cut but, then again, it may not have been actual Wagyu but a blend with other beef because as long as it's a certain percentage, they can still sell it as Wagyu. So Walmart Wagyu.

      Naturally! Heat was too high so instead of a sear, he saw it burnt and that made him take it off earlier than he should've done. 05:30 - the middle is pink.

      @@recruitmentch Yep, and if you do that you're supposed to put it in the oven to finish cooking the burger. It's perfectly fine to overdo the sear if you like the burnt taste for some reason as long as you're prepared to finish cooking the burger in the oven.

      @@jolteon345 An even easier step would be to reduce the heat to low, add a splash of water to the pan and put a lid on. Then just check on it, turn once or twice until you reach the required doneness, and then place on the cheese for 15 seconds until it has melted. doesn't really need to go into the oven as that will just work to dry out the burger.

      @@recruitmentch I haven’t had burgers dry out using the oven to finish them off. I also haven’t burnt my burgers so fast that they were raw and burnt at the same time. However, the splash of water method has been hit or miss on if it ruins the texture, but maybe my former roommate just sucked at making burgers anything less than overly well done.

      @@jolteon345 well my friend, if it works for you then that's the most important thing. You don't put the water on the burgers. Just pour 2 tablespoons into the pan and then put the lid on. It basically allows the steam to cook the burgers and hence keeping its moisture. Here in italy we make healthy meatballs in a slightly similar way. Where half of the meatballs are submerged in a broth and then we put the lid on for it to like broil and steam.

      It fueled me with rage! Spices are expensive, this much will suffer from two things, lose their taste, and later mold. Spices should be bough by grams, not whole cups!

    Jack's thoughts on smashburgers are all you need to know about how he approaches food.
    A quick little note, though, searing meat doesn't actually lock in the juices. That's a myth. It adds flavour and is something you should do pretty much all the time when you're cooking meat, but the sear doesn't create a "seal".

      Should check out his "food vlog" videos. He doesn't like ANY food at ANY restaurant. He is extremely arrogant about his cooking, completely unable to say anything good about something he didn't make. And that's ignoring how he talks down to his son and wife for actually liking something, made even sadder considering it's probably the only time they get to eat good food- when Jack doesn't cook. He's just a prick in general, and I can only imagine what 4 strokes does to someone like that's personality.

      Correct, you want a dry, tasty sear but you still want some moisture inside. Right cooking temps do that and that's hard!

      I don't see any issue with most of the ingredients. Sun dried tomatoes and habanero Jack cheese aren't weird for a burger (I like portabella mushrooms with Gruyere cheese on my burger). August might have his own personal taste but, it doesn't mean they are awful. The only things I was disgusted by was how he cooked his burger. Burger patties are patties for a reason and not a slab of seasoned ground beef. Patties keep the burger edible to anybody who isn't a snake and can unhinge their jaws. It also like August said, Keeps the fats and flavors in. In the end it was a raw piece of ground beef surrounded by bread, cheese and veggies. I notice this with Jack he never cooks anything. ITS ALWAYS RAW! also no salt and pepper in literal seasoned meat.

      That patty is almost certainly undercooked if not raw in the middle, the top of it was burnt when he flipped it. It takes long to cook through when its that thick.

I usually cook my meat (I don't eat steaks, they are too expensive for their taste) at a lower temperature because it gets less burnt, more evenly cooked and is easier to handle. When I make burgers I usually make the German/Danish/Poilsh meatballs and use them instead of the pure beef patty. They are made by mixing ground beef, eggs, onions and soft bread or breadcrumbs and seasoning. They stay together very well, taste better than pure beef and if you made too many, just eat them the next day.
      I just make the ones for the burgers a bit flatter.

      but he still didn't make it well. The heat in the pan was too high and you can see it isn't a sear but burnt. And if you pause at 05:30, look at the middle of the burger and it's pink. I'm from Italy, and so not a burger pro. But. All of that mayo and especially the handful of chopped sun dried tomatoes are not only contrasting flavours, but they're also very overpowering. As for adding basil as a seasoning for a burger....hmmm! he also added no salt to the meat.

    When we first found this series, my roommate and I went to Jack's channel to see if it's all this bad. Found a Buffalo chicken dip recipe for football season, and this man put chunks of chicken into a dip and we were screaming. Never change, Jack. Or at least change back.

      This. Even when I worked at a shitty little beach front restaurant, the patties came as patties, but we were instructed to further smash them as soon as they hit the grill so the patties would spread and be a more appealing thickness. It also locks in moisture.

      I work in a sports bar kitchen and the only time we do that is to put grill lines on the burger since you can really only do that with flame. However, we fry the burger on a flat top before doing that.

      Common misconception the red liquid isn't actually blood. Also as long as you source your meat from a reputable butcher your burger meant doesn't need to be cooked for it to be safe. The danger is from poor handling and cross contamination not the meat itself.

      @@johnsohn653 excuse me? Ground meat is made from, well, chunks of meat that have bacteria on the outside. Grinding the meat lets the outside bacteria to spread to the inside, so it has to be well done. The only case it’s a little ok is when it’s really fresh

    3:14 eh, no. You aren't "trapping in the juices" when you sear something. It tastes better because of the Maillard reaction & caramelization going on with the creation of the crust, along with concentrating flavors by reducing water. But because you're driving out water, it is technically going to be less-juicy. A smash burger's whole point is to get as much of that delicious crust as possible.

    Just wanted to point out that you can eat a rareish burger... sometimes.
    Don't get it at a restaurant. Don't do it from packaged ground beef. However, if you take fresh meat, grind it yourself, and cook it immediately, it is reasonably safe - like steak tartare. Fresh grinding is key.

      Apparently we're the few who like it this way. I put things like lettuce and onion and pickles on my burgers because I want to taste them with the burger when I take a bite. People try to make inch thick patties thinking they made some awesome burger but maybe they have anaconda mouths. I do not and can't bite the burger and toppings when the burger itself is as thick as a deck of cards. I've found the best way to get it the right thickness is to pat it out about the size and thickness you want and then put the patties back in the freezer until they're really firm but not completely frozen. Theyll cook through without drawing up into some thick ass patty that doesn't even cover the bun.

    So I come from being a butcher so I have knowledge on the grades of meats… THIS JACK GUY RUINED ONE OF THE BEST MEATS YOU COULD EVER GET ON A GRADE LEVEL!!! Wagyu is top notch meat which comes from cows that got raised and taken care of like kings, which makes the meat turn into a fine rich taste with explosion of flavor and juices alone..

      The ketchup killed me. You don't need to worry about moisture with waygu. If you are gonna work with that level of meat, use fresh onions and garlic, not dried stuff.

    "Wagyu is just as good", as apposed to chuck roast or brisket.... both of which have to be cooked for a long time to become edible. I honestly do not think Jack knows what he said when that sentence fell from his mayonnaise disposal hole. I love these reviews man.

    Rare burgers are actually fine if they're grinding the meat in house; that's also how they make tar tar.
    the only time it's dangerous is if you're using prepackaged ground beef.

      I don’t see how that could be true. As I understand it the problem is the bacteria that MAY exist on the outside of the meat hence why it’s okay to sear a steak on the outside and killing the potential bacteria but have an undercooked center. Even if you were to grind your own meat that same bacteria may be on the outside and when you grind it you could introduce it into the inside of the patty so when you sear the outside it may still be on the inside. I really don’t think it matters too much either way, but saying one is okay but not the other is a bit misguided.

    I mean... this man just basically made a basic burger with some slightly different in ingredients and at first glace, its not too bad.
    But there was some parts that made me go "Sir, WTF are you doing?!" I bet that burger was rare to undercooked. I don't think he cooked it enough.

    I agree with Jack on his choice of cheese, I use the same brand and it's yummy spicy. The rest of it, no, no...not for me. The side view of the patty shows pink in the middle, so a definite no on that! If it shows pink on the edge then the middle is prolly raw.

      Yeah the other ingredients aren’t horrible even though I don’t like tomatoes or mayo but if you actually follow the recipe and cook the meat you could probably end up with something relatively average for a burger and actually be able to eat it.
