Jack had several strokes, can't use one of his arms anymore and still keeps doing what probably caused all of that. Amazing
He's also fortunate that the rest of his faculties seem fine. He can walk, talk with no fog or aphasia, no drooping in the face, etc. Just that bum arm. I thought maybe he was recovering from an arm injury.

Eh, for a man who has had several strokes, this is not in the category of safe to eat. We kind of see fat and sugar as unseen threats, you just eat things and don't think about it, but this dish was not hiding the grease oozing out of it.

If you are looking for an actually cheap and easy recipe with the meatballs here is what I do:
Get a pack of kings Hawaiian rolls
Cut them in half horizontally
Grease a 9x9 baking dish and lay down the bread
Top with meat balls and marinara sauce
Sprinkle with some parmesan and mozzarella
Top with other half of bread
Bake at 400 for 9-12 minutes
Let cool
Flip onto a cutting board
Optionally top with parsley and serve with extra marina
Easy pull apart meatball sliders!

Tbh this is probably one of the most edible things Ive seen Jack make. It’s lowbrow basically, not healthy, ton of sodium, probably tastes fine tho, at least compared to most other things he makes, unless he didn’t cook it right and it just *looks* okay
I've thrown together meals based on the weirdest ingredients, basically whatever is left, and this could work. This could be even easier (lazier) if he got the portions correctly sized and named. He basically made a bad chili with taco seasoning.
I always have a bag of meatballs in the freezer for fast dinners...spaghetti, teriyaki meatballs, meatball sandwiches...so I understand what he was going for here. And I've also thrown dishes together using the odds and ends that I have in the fridge or freezer, but I try to make it a balanced meal.
But, this didn't work. Instead of packaged taco seasoning, he could have cut way down on the salt by using actual spices instead of a seasoning pack that's just a salt bomb, and he could have made it a more complete meal by serving it over rice with a veggie (any veggie...even just some frozen peas) on the side.
Meat, tomato and cheese obviously always works

Ya know, unlike many of Jack's other "dishes" this is actually safe to eat, because those are pre-cooked meatballs, but when he scooped out that pile of greasy, cheese covered meatballs, for some reason it put me off my stomach. And I had Pizza Hut today.

The fact that meatballs and gravy was one of your recommendations at the end for what he *_could_* have done gave me nostalgia like crazy. My mom used to always make that for her and I when I was growing up for something simple. Always with rice and always awesome. Not a not of people ever mention it and it's an underrated classic.

My family is Dominican and my step dad is from Guatemala so because all we cook is these latin american dishes we buy those huge bags of mozzarella cheese especially since all my mom makes is pupusas lmao

WAIT A MINUTE, I just realised, Jack wanted to use the meatballs because he was worried about them going bad, so he essentially gave his wife a tray of meatballs to share with her co workers that he thought were close to expiring

For a cooking show, there`s not a whole lot actual fresh ingredients being used. He`s using highly processed garbage. Its just junk food, how does this even count as "cooking". Throwing a tomato here and there on top of 5 jars of canned waste does not count as cooking.

The one saving grace are that these frozen packs of meatballs are already precooked so there's no way he could possibly undercook them
Usually those frozen meatballs taste terrible and are full of fat and sodium. Its not that hard to make homemade meatballs, no point in being lazy on that part lol.

Several years ago, I tried his other "Lazy Man's Enchiladas" recipe, the one full of tortilla chips from the video featuring a lady he went to church with, and it was the worst, most wasteful thing I've ever cooked. No amount of sauce could make that vaguely corn flavoured cement go down easier. I'm not surprised he cut out the corn entirely this time around.
It's amazing how Jack went from having a healthy skin complexion complete with a naturally colored beard to now looking as if he's pushing over 90 and moderately showing the aging effects. It's hell man.
I had quite a bad day today at hospital, as a medical student, and I wasn't feeling too great.

it was clever of jack to add the taco seasoning the enchilada sauce because we all know that enchilada sauce is just water and red dye as opposed to something with a very distinct, identifiable flavor that people and restaurants add to things other than enchiladas to give them a punch of flavor. I'm glad he saw through the con.
The fact that he spends the time browning the meatballs, he could have just made proper filling. If he HAD to use the meatballs, let them thaw enough that you can use one of those ground meat breaker/mashers, brown the meat, add rice, veggies, seasoning... Then quickly wrap and assemble. It's not difficult to make echiladas! They're like Mexican lasagna (◍•ᴗ•◍)❤ and so good!

I think we the community deserve a new series where you go back and re visit all the cooking with Jack videos and re-create his meals exactly how he shows and does it and then you yourself enjoy them and review them so we can get a real-world perspective from you! In Costa Rica, enchiladas are puff pastry with spicy filling. But these are rather unknown compared to the Mexican enchiladas.

@@brbrdeng9122 It's easy, though I don't have the recipe. As I said, it's out of puff pastry, so it's a snack and not a full mean. The puff pastry is shaped like a small pocket, and the filling is mostly with finely diced potatoes. No idea about what peppers, but feel free to experiment.
Honestly, of all the meals Jack has made, this one looks the most edible, but of course, that's not saying much.
Truth be told this cooking recipe is alot more tame compared to what else I seen people cook.

I actually have done my own meatball casserole which was like an Italian dish but first of all I would never ever use frozen meatballs, I made them fresh from scratch and secondly calling Jack a chef is like calling Jeffrey Dahmer a pacifist.

I may be wrong but if I remembered correctly, Jack had a stroke some time back and probably lost some neuro/motor movement.
He's on stroke the third so he has a dead hilshire farm summer sausage arm, also too lazy to do the rehabilitation therapy or PT properly so likely he'll never regain use of it.
@@InvadeNormandy I had a right side flaccid stroke (ultimately due to cancer) from my shoulder down. It was back in Feb. '22, and I worked my butt off in therapy. I have a little outside weakness but full mobility of my arm and leg. Even doing immunotherapy and radiation, I'm completely mobile. Everyone is different but if he can do his little show and prepare for it, then he was just to lazy to do the therapy.

I watched this video after the one he did on the brisket chili video so hearing him worried that the meatballs will expire in three weeks so he has to cook up two MASSIVE bowls of meatballs was hilarious to me.

I'm a chef and I've also never seen someone put cheese on the bottom of a pan.
I like to look at Jack's recipes and wonder if I could rescue it at all, and with home made enchilada sauce and meatballs, this might work as some kind of taco bake but you wouldn't call it an enchilada.
Godspeed to you friend if you decide to save any of his recipes. I'm afraid this was a rather tame one.
The only thing that qualifies it , is because of the enchilada sauce with some very liberal uses of onion powder and taco seasoning. The cheese likely would have burnt and the enchilada sauce could likely eat into the pan because it's so acidic. In no other way does this qualify as an enchilada dish.
