INGREDIENTS Butter For Greasing 550g cream cheese, at room temperature 160g Caster Sugar 3 Eggs, lightly beaten 2 tbsp Plain Flour Finely grated zest of 1 Lemon 200g Raspberries (I will probably sub out the raspberries with something else) Try adding a splash of vanilla Method Preheat the oven to 180C and butter a 23 cm spring-foam cake tin. Beat together the cream cheese and sugar. Add the beaten eggs bit by bit until combined. Add the flour and lemon zest, then fold through the raspberries. Spoon the mixture into the prepared cake tin, tapping it against the work surface to remove any bubbles and help the raspberries rise up from the bottom. Bake in the preheated oven for 35 minutes until set on the edges but wobbling slightly in the middle. Now I do not know why it was not included in Ramsay's recipe; however, I find a Bain Marie to be rather a necessity for cooking a cheesecake. So add an oven-safe bowl of boiling water from a kettle into the oven to prevent the cake from cracking. Once cooked, remove from the tin, running knife around the edges to loosen if necessary, and serve. If you use raspberries try serving the cheesecake with a chocolate sauce. Have fun cooking,

Super fast and easy for a cheesecake. Less than 30 min prep time and 35 min bake time! You can turn on your oven and by the time you are done with the prep your oven will be at temperature (if you are quick). Make sure you bring the cream cheese to room temp otherwise recipe will not be fast and easy. 5 to 10 min isn't long enough if the cream cheese is still in foil and carton or container. This cheesecake isn't as thick as other recipes, but that solves a common problem of overcooking the outside and undercooking the inside. Cooling the cake in the oven, avoiding over-mixing while adding beaten eggs and tapping to get rid of big air pockets will minimize cracks on the top of the cheesecake (make sure pan is well greased). This recipe is so versatile. The lemon zest adds brightness, but you can omit it as well as the raspberries if not to your taste or are not on hand. Make a simple caramel sauce instead or throw in some chopped white chocolate with or without the lemon zest. Amazing!

I made this. It was so GOOD. Instead of raspberries I cut strawberries into fourths and used that. Also, we didn’t have a lemon lying around, but I put a little lemon juice in. We sprayed canola oil and put it into a regular cake pan. Also, I sliced up the strawberries and poured sugar over them, and then put them in the fridge to milk for an hour. They made a really good topping. Also, it was way to thick for me to hand stir, so I used an electric mixer.
