Sapienze are a holiday cookie specific to the part of Italy I live in, Puglia, and they also go by the name Sassanelli.

Befana is actually based from an ancient Latin Roman/Sabine Goddess - Strina/Strenua: Goddess of the New Year, gifts, children and family. However the name Bafana comes from Epifania is a Latin word with Greek origins meaning "manifestation, hence the Feast of Manifestation

Difatti io non le avevo mai sentite queste due cose, completamente sconosciute, anche se sono anch’io del sud Italia. Ma ci sono dei prodotti in Italia che sono molto strettamente regionali e magari anche se nella stessa regione, più conosciuti probabilmente in una determinata zona che in un’altra. Questa è la ricchezza culinaria dell’Italia ! Tra noi italiani stessi scopriamo sempre qui e là nuovi prodotti, nuove cose che magari non avevamo mai sentito. Più giri in Italia e più scopri. :) Auguri ! 👋

Ciao katie, ti seguo da tempo, e mi piace quello che fai. Anche io vivo a Trani, e noi chiamiamo di solito questi biscotti mostaccioli pugliesi. Il loro nome deriva da mosto, ovvero il succo dell’uva da vino non ancora fermentato, proprio quello da cui si ricava il vincotto. Quello che hai mostrato tu infatti non è il vincotto pugliese. La sua preparazione è molto più semplice anche se più lunga. Si parte da succo di una da vino appena spremuto. Non si aggiunge nient’altro, si fa solo ridurre sul fuoco per molte ore, e si filtra per una o due volte prima di imbottigliarlo e conservarlo per il periodo natalizio. Non si aggiungono spezie ne zucchero, si fa solo caramellare lo zucchero contenuto naturalmente nell’uva. C’è anche un’altra versione del vincotto, fatto con i fichi, che si mettono nell’acqua bollente per ricavarne tutti i sapori e lo zucchero e poi si fa ridurre il liquido cercando di avere sempre un liquido abbastanza denso, questa versione è però molto più rara e costosa, anche se a mio parere molto più buona in termini di sapore.
Il vincotto in Puglia lo utilizziamo per tantissime ricette, soprattutto per le famose cartellate, che a Trani e in tutta la Puglia del nord sono importantissime a Natale.

Ancora più raro è il vincotto di mele cotogne. È praticamente introvabile. Le mie nonne lo usavano per calarci le cartellate.
Amo i mostaccioli! Sono qui in Campania attualmente e li sto mangiando in questo periodo. E' un dolce antichissimo. Gli antici Romani mangiavano mustacei. Cato maior ne scrisse anche la ricetta (De agri cultura, 122).

"Wisdom" is "Saggezza" in italian.
"Knowledge" is "Sapienza".
"Knowledge" is "conoscenza".
And tecnically "saggezza" = "sapienza"

@@TheQKatie figurati Katie... la verità è che sono parole che assumono spesso stesso significato quindi in realtà vanno bene tutte le opzioni dette.
As esempio "Consapevolezza" potrebbe comunque andare bene, ma assume più spesso il significato di "Awareness"

What about cartellate? They are not for everyone because of the stronger presence of vincotto but they are definitely more "christmasy" in Puglia :D

Hi! I've done some videos about why I chose Puglia! Essentially, it's near where my ancestors lived before the immigrated to the States, and I think it's such a wonderful part of the country!
The Befana leaves sweets for good children and coal for bad children.

Buon anno! katie! non so dove lei abbia preso la ricetta del vincotto ma quella brodaglia li non si avvicina neanche "o vein cutt". Il vincotto non si fa dal vino imbottigliato e NON SI AGGIUNGE lo zucchero raffinato. Il vincotto viene fatto dall'UVA BIANCA DA TAVOLA IN AVANZATA MATURAZIONE quindi con ALTO GRADO ZUCCHERINO: la REGINA LONGA si presta molto bene, l'ITALIA decisamente NO.
Quando torna a Trani trovi qualche nonnina che le spieghi esattamente l'intero processo e come conservarlo. ATTENTA che è letale per i diabetici.
