The shapes I make in this video:
SUCAREDDI (also known as PICI in Tuscany) -- basically a fat spaghetti
MALLOREDDUS -- textured from rolling on a fork
ORECCHIETTE -- small circular cups; "little ears"
The water/flour quantities I used for the doughs in this video:
-300 grams semola (durum wheat) flour, 150 grams water, 1 teaspoon turmeric
-200 grams semola (durum wheat) flour, ~70 grams water
Notes:
-orecchiette wants a drier dough for shaping
-if you use all-purpose flour, remember that is absorbs MUCH more water, so you'll definitely need to adjust (try to get your hands on some durum wheat flour!)
-the birch wood board I use to work the pasta on is called, in Italian, "lo spianatoio"

I remember my Italian mama saying tomorrow we make pasta. But the next day she made something else. I asked where is the pasta? Why aren’t we making it? Her reply, the weather is not good today. lol

I LOVE that this pasta can be made without a fancy pasta machine! All you need is regular kitchen stuff -- a fork and knife!

Also you might consider the use of something like Marcato's Tacapasta (no affiliation - I just use it!): Kind of a hanger or rack where you hang the pasta on. Ciao.
"Fresh pasta is just a different beast". I grew up with fresh (homemade) pasta made with family wheat, ground in the village mill, and made by my grandmother ... I had a moment of emotion (which really comes to me every time I see a package of spaghetti Number 5 in the supermarket).
However, the orecchiette were aesthetically ugly but absolutely functional for the purpose (and very good I suppose), Brava!

What I like about pasta being made from scratch is that when you master making it from scratch, it makes any Italian dinner special, especially homemade lasagna with everything made from scratch (sheets and sauces by hand). 😤😤😤

Bravissima. Perché non compri la farina al mulino? Quando sono in Puglia cerco sempre un mulino per portare a Bologna la semola. Una volta in aeroporto quasi mi arrestavano per il sacchetto di farina che sembrava essere un'altra cosa 😅

Nice. Love this video! I've made sourdough pasta a few times recently- super tasty! Not as pretty as your shapes though. I was surprised that your traditional pasta recipes don't have salt in them! Is that typical in Italy?
I just do what The Pasta Queen tells me and the results are delicious! PS SOURDOUGH PASTA!? wooooaaaahhhhh tell me all about this plz.
@@TheQKatie there is one recipe which is called Cicelieviti or Cecamariti from Central Italy. but it's essentially bread dough.

"Cucina povera" (i.e. poor cuisine) is the authentic everyday italian food.
Cucina povera means also incredibly good desserts.
Just like one of the traditional cakes of my region: the "paciarela".
Probably one of the best cakes of the world. No kidding. If you are able to cook it properly though. 😄

Complimenti Katie per la tua pasta, mi permetto di darti due consigli:
- per una questione igienica è meglio togliersi gli anelli quando si impasta.
Quindi: si tolgono gli anelli, ci si lava le mani, poi si inizia a lavorare.
- per utilizzare meglio la forza di tutto il corpo e non solo le spalle/braccia, è meglio impastare stando in piedi.....alternando le due mani. Prova la nuova posizione e vedrai quanta forza svilupperai in più ( = meno fatica).

Really interesting how the different flours and fresh vs machine made affect the pasta. Do young people still make pasta or is it a fading practice?
I'm not sure. I'd have to guess younger people do it less. But Alessandra proved to me that there's still lots of interest!
please, please, make a video about gnocchi di patate, a fresh pasta made with flour, eggs and potatoes really popular here in verona. it usually goes with 3 sauces: ragù di carne (meat sauce), pomodoro, burro e salvia (butter and sage). this pasta is tipical of Carnival here, we eat it in friday, Venerdì Gnocolar. i know you're in puglia, so it's not tipical there, but if you try it you will like it ;)

Hi, may I leave you a bit of advice? When you make pasta, you should be standing while kneading. In this way you may use your own weight and the shoulders to knead energetically. When I make egg pasta (I am from Emilia region) I knead for about 15 minutes, until the dough is elastic. If I press a finger on it, the fingerprints bounce back.
Haha I definitely learned this on my own when I turned the camera off to finish kneading and realized it was SO MUCH easier standing up than sitting down. I felt silly. Thanks for watching and thanks for sharing!
