    There's a reason for tuscan bread to be not salted and that's because it has to go with already very salty food, especially all the tuscan "insaccati", i.e. the salami, sausages and prosciutto and all the kinds which are tipically very salty (also for preservation and seasoning reasons). While watching your video you reminded me of something of my childhood, approx 50 years ago: soon after retirement my grandparents went to live as guardians at a small estate right outside Siena for a rich man who meant to have the place always ready for when he was going with his friends and family. My grandmother was a great cook and my grandfather was good handling basic farm jobs so they thought it could be nice to "retire" in the countryside. I remember my grandfather waking up at 5AM each morning to take care of the daily chores and do some work in the fields then come back around 9AM and sit at the kitchen table to have his breakfast: the cutting board on the table with a loaf of bread and finocchiata, once in a while cipolotti if available, and a fiasco of red wine. My grandfather always drank very little and always with food but he savored his breakfast as sacred, always focused on the simple food and homely situation. Your videos remind me a lot of the "things" and flavours of my childhood...... so thank you Katie :D

      Foccasia, Puccia, pizza dough all fabulous! But loaves of bread…tasteless,very dry and I can’t understand why they can’t make some wholesome whole grain bread loaves. Their “brown” bread isn’t from grains, it’s colored and looks like wonderbread. Sorry, but once you’ve visited a Polish bread bakery, you’ll never be satisfied elsewhere!

    When I first came to Italy I always holidayed up north and all the bread was so sweet , it was more like a dessert .
    So when I bought my boat and decided to stay permanently in Italy first thing I did when I came from England was to bring a bread maker .But instead of going to LeMarche like I was going to do I’ve ended up in Calabria and hey guess what the bread has salt in it 😍😍
    (anyone wanna buy a bread maker?)😂😂

    Being born in Altamura and having my family in Gravina makes me very glad you appreciated this hidden spot of Puglia. BTW it's forbidden to go to Gravina without tasting cardoncello mushroom. Next time. :D
    I wish you'll find a way to taste pancotto as well especially if made with Altamura bread.

    Dovresti fare un tour completo di tutti i paesi che fanno parte della rete "Associazione nazionale città del pane". Prova il pane di Matera, simile a quello di Altamura ma secondo me ancora più buono.

    that's a beautiful bridge but I am against it was used for a film aqwere a car was driving on it and a motorbike. Anyway the bread of altamura is delicious I had it with mortadella salame and prosciutto yummy those tight streets were for horses donkeys and above all the little cute fiat 500

    Ciao ragazzi, non ho mai mangiato il pane di Altamura, immagino sia buono. Secondo me va gustato insieme a qualche intingolo, salsa o, appunto, qualche formaggio locale o cremoso. Ma siete contenti di vivere in Italia? Vi piace? È così profondamente diversa dagli States, in tutto. Spero che resterete tanto tempo qui da noi. C'è tanto da vedere e apprezzare. Katie ma il tuo libro è pubblicato anche in lingua italiana? Un grande abbraccio a voi e tanti baci al bellissimo Kiro 😍😍😍😘😘😘

      @@sasuke65743 io non ho occasione di andare in Puglia. Qui ci sono panetterie e anche super che vendono quello che loro chiamano il pane di Altamura ma non ci credo neanche un po'. Sarà una brutta imitazione di sicuro. Pazienza 😐

    l'Italia è piena di varietà di pane.
    Ti consiglio di guardare nei Presidio Slow Food per avere una mappa di tutte le località dove il pane è fatto come una volta. Ciao!

    "That's how I say my name in Italian" bit made me laugh! I have a slang question for you: when I was in Catania I was told my name (as I pronounce it: Kaz) is slang for "dick" (American slang for penis). Is this true? Is this true everywhere? Or were they just trying to make me stamper?

    Katie, I have a home in Salento and I have been very disappointed in all breads of Southern Italy! No salt, tasteless and dry. Disappointing as I would rather eat bread than anything else. For a country renowned for the best Puccia and pizza dough, it baffles me they can’t make good loaves of bread!! In my travels, I consider myself a bread taster everywhere I go. I can say wholeheartedly, if you are a bread lover, Poland is most definitely the place to visit!! They offer breads made from every grain, seed, nut you can imagine and if you like it dense and heavy and still light and spongy it’s there!!!! It beats France any day! Hope you can experience it sometime.

    katie ha fatto un pò di confusione! Il pane toscano è insipido per via di una vecchissima questione sui dazi di importazione del sale. Stufi di pagare l'imposta, i toscani decisero di fare il pane SENZA il sale: le tante varianti di pane in circolazione sono dovute al tentativo, appunto, di dargli sapore.
    Il pane di Altamura, come quello di Monte San Angelo, è una ruota di circa 50cm ed ha l'eccellente caratteristica di mantenersi fresco per 2 settimane. Il pane anticamente non lo si faceva tutti i giorni ma una volta a settimana, generalmente il sabato.
    La forma a "cappello del prete" è dovuta al forno a legna che è alimentato da sotto, diversamente al forno da pizza che è alimentato ai bordi. Diciamo che ogni costruttore di forni ha stile e metodologie tutte sue. La generalizzazione pane di altamura o di monte san angelo è solo marketing, non farei molto affidamento al DOP.
    Se vai a Napoli e vuoi LA VERA pizza napoletana devi andare nei QUARTIERI SPAGNOLI perché in periferia già i treni deragliano.

    Non ti lamentare delle "Italian streets" quella era una via presumo antica visto che è così stretta quindi cosa pretendi. Non eravate nelle gigantesche autostrade a 45 corsie degli Usa 🙄😏

    Background music while you are talking makes it very hard to understand what you are saying especially the Italian. The music detracts from your message during talking. Enjoy watching your videos you have such awesome content, but please please nix the distracting background music while you are speaking.
