    Laura, sono terrorizzata dall'uovo in camicia ma ci proverò prima o poi. Ogni volta che guardo i tuoi video mi sento orgogliosa di essere italiana! ho imparato a cucinare fin da piccola guardando mia mamma e mia nonna. Ora mia nonna non c'è più ma quando preparo le sue ricette, sento un fortissimo legame con la tradizione ed il passato della mia famiglia. Sono gelosissima delle sue ricette, per me molto preziose.     I made this for dinner yesterday and it was fabulous! i substituted the frisee lettuce with baby spinach and the red wine vinegar with cider vinegar and it turned out very tasty!

    I found a really good way to poach eggs and keep them round. Put some plastic wrap in a rammican and crack the egg into that. Shape it into a circle and make sure the plastic wrap is closed tightly before you place it into simmering water :D Usually works lol

    Mushrooms tend to have a very meaty flavor, they may be a good substitute, especially if sprinkled with a pinch of hickory flavored salt (like J&D's Hickory Bacon Salt, it isn't actually derived from meat products it's kosher and vegan)

    i find that if you turn the heat down after it has boiled and tilt your pan to the side and drop your egg into still water in the middle of the pan, it'll sort of fold over itself while rolling down to the corner/edge because it's at a tilt and they will come together beautifully! but if you prefer the whirlpool method try using like a soup pot and by the time they fall to the bottom of that large a pot they will be like little balls :D thanks for this recipe, i'm making it now for lunch ^.^

    you could also put some round cut biscuits in the water and pour the egg in the cutter so the egg white won't go all over the pot

    Here in america you can find white eggs. Back in my country there are just brown eggs so I was suprised too when I moved here. I think the difference is the bird. I read that white chikens will produce white and red/brownish chikens will produce browns, but I'm not sure because this was lond time ago.

    I know another way! Cut an onion slice so it is like a ring, Cook that with the egg, and its healthy and delicious! Try it out :)

    Poached eggs cheat: Take a bowl, fill it half-way with water, add in 1/2 tsp of vinegar, crack an egg into the bowl, microwave it for 45 sec, then another 30 sec. Perfect round eggs every single time.

    It doesn't melt, no, parchment paper wouldn't really work in the water,try it and see, if it does, it might be a better method :)
