    I’d usually mix my noodles in the sauce before stir frying. Then add it last after most of my vegetables are cooked. My favorite Japanese street food are hiroshimayaki & takoyaki. When i make my own, i always add finely grated nagaimo into my batter. It makes it nice & fluffy yet crispy on the outside.

    Yes yakuisoba is one of my go to recipes to use up vegetables. The only thing that I always add are onions. I never added any tofu. I sometimes make a variation on yakisoba with green onions egg and stirgry that with tsuyu seasoned mayonaise. I also love adding the beni shoga ginger pickles.
    I always make okonomiyaki as it is easier. I don't think I ever have hiroshima yaki. Same with monjayaki. I would love to try those variaties. Perhaps I should try to make them sometimes.
