    I am so happy that you posted this recipe. I remember these cookies and I had always wondered what happened to them. I did the dough fine but had a little trouble spreading it out and then folding it back over even tho it was on floured parchment. All is all though it was a fun experience. I love watching you and learning. Thanks for all you guys do.

    My Irish grandmother always had these in her pantry. I loved them!I never see them in stores (USA) any more but have found them online. Unfortunately I the ones I found were not vegan. I am definitely going to try your recipe!!!

    These were my grandfathers favorite cookies. He would have his coffee and I my milk tea. So many wonderful memories. The U.S. version had the slightest hint of lemon. Thank you fo the recipe.

    I grew up in the States and, yes, we did have cookies that look like this. may still have. I liked them, too, as I don't like very sweet cookies. I'm definitely going to give these a try and use my dried, wild blueberries instead of raising/currants. Thanks! I had forgotten all about them. ;)

    Thank you for the recipe! I used to buy the American version when I would go out to sea when in the Navy. It was a special treat that unfortunately wouldn’t last the whole cruise! Can’t wait to make these with my daughter and granddaughter!

    Gastronomic anthropology is fascinating: I have seen Garibaldi biscuits in the Vermont Country Store catalog, and have always wondered about them; I gather that Garibaldi biscuits were a common cookie in the eastern U.S., not where I'm from, decades ago. You are much younger than I, and for you they are a tea cookie you know well. I think the commercial ones aren't vegan, so I very much appreciate your posting this recipe. Hope you two are keeping warm!

    Garibaldi biscuits were war time specials of the 1940's in the UK. Used to be made with leftover pastry pieces. Pastry has to be very lightly sweetened as the dried fruit is very sweet.

    I knew these only as 'dead fly cookies' as a child! I only learned, as an adult they had a proper name - Garibaldi. LOL They are excellent.

    What kind of dough is used? Is it considered a basic sugar cookie dough? Or one you would use for classic chocolate chip cookies, just not adding the chocolate etc.

    The recipe says cake flour, I used cake flour but recipe also said to use baking powder, which I did and the result was more of a cake than biscuit. I understand cake flour to be self-raising-flour

      Hello Sudha, cake flour is not self-raising flour. Cake flour does not contain any raising agents. It is just low-gluten flour, it has lower gluten and higher starch content than all-purpose or plain flour and is suitable for certain kinds of pastries, cakes and cookies. If you are using self-raising flour, omit the baking powder, then remove two tablespoons from the flour and replace it by cornstarch or potato starch. This way you'll have a flour that is higher in starch and lower in gluten. I hope this helps.
