I love shortbread and make it frequently. Protip: form your dough into a log as wide as you want your cookies to be (2.5-3") then wrap the log and chill it for several hours. When it's cold slice your cookies right from the log. No cookie cutter necessary.

She would separate the dough and add food coloring and flavorings to each. There were green wreaths and Christmas trees in one batch and pressed through a cookie press into the shapes. The other batch had peppermint, divided into white and red (food coloring). Each color was rolled into long “ropes” and cut into equal lengths. She then wound braid each color together and shaped them into candy canes. Each one was about 3” long. Every cookie was soft baked. They were tender, soft and only baked until they were “set”. I waited all year for those delicious cookies! No one baked like my grandma! She was born in 1891 and all of her recipes were in her head and from “scratch”! They all tasted buttery and I’m pretty sure they were shortbread cookies.

She used real lemons and lemon zest in the batter and the “icing”. The “icing” wasn’t really that. She made a lemon filling, much like the lemon part of the lemon meringue pie and covered the whole cake with it! Sometimes, the filling was too heavy for the cake and it would start to fall apart and she’d have to use toothpicks to hold it together. Also keep in mind. being raised in the 1890’s, cakes were about 12 inches in diameter and the 2 layers were about 2” thick! You can’t get that from any packaged mix! That lemon cake was the best ever! I waited all year for it. And even though I’m a chocoholic, I preferred her lemon cake for my birthday! I truly regret not having her write down her recipes for the Christmas cookies and the lemon cake. But I was a kid and thought she’d live forever. 😢😭😥
I made a batch of these, (with a modification in which I added vanilla extract. I also used one stick of butter and added vegetable oil to make up the difference.) Made about 25 cookies. I couldn’t stay out of them. I had them all eaten within about a week.

I must admit that while rolling the dough it was breaking apart, but I managed with what I had and the end results were fantastic, I just would like to know what I did that caused the dough to break apart? When I make shortbread biscuits, I always use slightly less sugar and flatten half the mixture to cut into rounds and the other into an inch and a quarter width fingers, prick each finger with a fork.😊 Once cooled, I dust the shortbread biscuits lightly with caster sugar.
