Before I ask my question let me praise you for doing such a hard effort to make tempeh (or tempe actually without "h"). Where did you know about tempeh? Also are you interest in southeast asian food??
Hi, how do you cook the tempeh - how long do you need to fry it for example, and up to what temperature to make it safe to eat?
Mark Benhill Well, if that's not racist and stereotypical, I don't know what is.
As a native Indonesian, I have to say you made a perfect tempeh and explained it clearly.
For people who haven't eaten tempeh, I recommend you to try this because the taste is literally just like soy bean. The mold doesn't give any taste at all. Oh, if you don't want to cook tempeh right away, don't forget to store it in the fridge at least for 3-5 days.

we used to call it "yeast". all the traditional markets has it.

i live in Florida and i have banana tree in my back yard but it has never had banana's, i guess its a banana tree it looks like one, will it that work?
maybe it`s False Banana tree, it cant produce it fruit. African ussualy just eat the skin of that trees.

I've used spinach, cabbage and mustard greens, they all work just fine as long as the leaves are perforated with a needle 1/2 inch apart before placing the leaves down ready to be covered with inoculated soy beans or other substrate, such as ground peanut, lupins etc.
@@magiccheeseball banana is not tree but its like tree in term of taking care. What i mean is banana need exposure of sun in open space and not working in soil with hard rock under, if u want banana to grow a fruit. And remember banana just grow fruit only once in its life time. Hope this make u illuminate.

In my house (a native Indonesian here), we always dip them in spices before we fry them.
Crush one garlic and some coriander (you can use powder one). Add a little bit of salt and then give them 2 or 3 spoons of water. Dip them for a few seconds before you fry them. That way the mold will go down and you will have tastier tempe.

My wife is Indonesian and we decided to make tempeh by following your recipe. It turned out to be better than the tempeh that we eat in Jakarta. We are not vegetarians but we love to incorporate vegetarian meals in our diet.

I tried the tempeh recipe and it came out perfect. It's so good. So much better than the store bought tempeh. I love the mild nutty flavor. Delicious!! I put them in ziplock bags, between two cutting boards, in the oven and I left the light on. I made them on Thursday night and they were perfect on Monday.

dip them in a solution of water, garlic and salt. then fry them until they're brown and crisp. the thinner the slices are, the crispier. my best childhood junk food ever lololol

Tempeh is not a junkfood. It's very nutrious, if you fried them then yes it will be high in calories but still it is not a junkfood.
anything deep fried qualifies as junk tbh... McDonalds burguers are also very nutritious btw.
More likely people who needed to feed their family and couldn't afford to throw out food. We take for granted how cheap and easy it is to buy a bag of beans, but when you grow them and shuck them yourself you appreciate their worth.

I love tempeh. Especially pan-fried. Hands down one of the best foods in the world.
I've been looking at a lot of sites to see how to make tempeh without a special fermenting container and your presentation was the clearest and simplest to follow. Anyone can tell that you're a master at it. I made natto yesterday by putting natto starter in sterile containers with the cooked beans in them and putting them in the oven with a lit bulb to keep them warm and everything worked out fine. I was planning to do the same thing with the Tempeh, but was a bit apprehensive because I've never done it before. Seeing you do it so successfully has given me a lot of confidence that I can break through. Thank you.

I absolutely LOVED this video. I had no idea I could make this at home. My local whole food store moved to a larger space and their tempeh actually doubled in price. I make tempeh professionally in a small family-owned shop (about 1,000 lbs per week), and your technique and knowledge are really impressive! We dry dehull our beans by splitting them first; it is impressive that you get such good tempeh without dehulling. Cheers, keep up the good work!
Removing the hulls reduces the excess iso flavins that are plant estrogens, making for a more healthy food. Most people should not have plant estrogens as it gives a hormonal imbalance so when you make for the public, this is a better way to do it. I’ll never remove the hulls, but now I am going to.

I'am Indonesian and i do really love tempe (we call it Tempe not Tempeh here) especially when you deep fried them and eat it with hot steam rice, a sambal which is made from thai chili palm sugar and garlic, and also lalap (it's kinda raw edible leaf, vegetable or fruit like tomato, cucumber, green eggplant, stink bean, sweet basil, and lettuce).
The non vegan version is to add some shrimp paste to the sambal, and you eat it with fried tempe or tofu, and also crispy salted fish with all the stuff i mentioned earlier. Then you eat it near the waterfall, or in the middle of rice plant when the sun is heating the earth. Oh God, it tastes like a heaven. :)

Oh my gosh, I didn't know there was mold!! So interesting and awesome.
Haha, the mould is actually tasty! lol Although the tempeh do need to be thoroughly cooked to deactivate the mould before consuming it.
So the mood is what holds it together and actually makes it. I never thought mold would ever be edible in anyway.
The white surface of a Brie cheese is mold as are all the blue spots in blue cheese.
What do you think yeast is? Lots of fermented food are edible mould

I am start to eat and love tempeh when i had been exposed to the “sambal tempe” by my Malaysian Javanese friend from State of Johore, Malaysia Federation when i am study in a college in 2011 in State of Perak,
I love it, especially the texture n creamy umami natural flavor of tempeh..
Until now, i am eat tempeh everyday and i did it by myself to ensure that tempeh is always available,,, not easy to find out tempeh here in my hometown because no one consume tempeh.. heehhe

I tried it two ways, with the bags and with the box. I had some black spots, but that's because I left them a little too long because I expected my mold to be as thick as yours. This is so fresh and delicious, no bitterness at all. Thanks so much for this informative video.

Teenuja really observes and thinks about what she is seeing. She seems to have a good science background, too. Her variety of tips allow us to save time (No need to hull the beans; add vinegar near end of cooking; no-fuss ways to provide incubating heat). She completely illustrates what she is doing without adding distracting chatter.
Nutritionally: Allowing the hulls to remain does increase the nutrients. And she points out that the tempeh culture eats up some of the gas-producing substances in beans (YAY for this!!)
Adding extra ingredients (salt, fats, sugars) when cooking beans and grains can slow down water absorption and increase cooking time. So, as Teenaja says, add the vinegar near the end of cooking.

Yeay, food of my hometown 😆 I remember when I was in high school the teacher of home-industry class gave us task to make tempe or tahu (tofu). I decided to make tempe, (with the help of my mom of course, LOL). You are good in making this stuff. Thank you for the video 😊

Also to add. If the banana leaf is sourced locally, i.e. behind your house, it may be too rigid. Hence running it slightly over a flame can help wilt it a little and allow you to use banana leaves for containing foodstuff without breaking when you fold them. Actually can contain even more than beans. If you make thick things like pudding its also possible. Just requires to form into a cylinder and fold one end to close it off, then add batter, fold the other end and steam for like 15 minutes

The banana leaf tempeh my goodness! Looks so incredible.
The tempe made from the tofu left over is called "Tempe Gembos" here in Java which means "soft/mushy tempe". It's not packed like normal tempeh and taste more like a bread.
Can you explain more (4 years later) I am thinking could i mix the tofu left over with some of the cooked soy beans for the tofu?

This was so interesting. I've never seen or heard about Tempeh before.
In appearance it looks very much like Turrón which is made from peanuts, walnuts or almonds and a mixture of egg whites and sugar.
J Smith i also never heard of it, there's no tempeh here in the philippines, there is what we call turon, slice banana mixed with brown sugar and wrapped in rice paper and deep fried...
