      Before I ask my question let me praise you for doing such a hard effort to make tempeh (or tempe actually without "h"). Where did you know about tempeh? Also are you interest in southeast asian food??

    As a native Indonesian, I have to say you made a perfect tempeh and explained it clearly.
    For people who haven't eaten tempeh, I recommend you to try this because the taste is literally just like soy bean. The mold doesn't give any taste at all. Oh, if you don't want to cook tempeh right away, don't forget to store it in the fridge at least for 3-5 days.

      we used to call it "yeast". all the traditional markets has it.

    In my house (a native Indonesian here), we always dip them in spices before we fry them.
    Crush one garlic and some coriander (you can use powder one). Add a little bit of salt and then give them 2 or 3 spoons of water. Dip them for a few seconds before you fry them. That way the mold will go down and you will have tastier tempe.

      i live in Florida and i have banana tree in my back yard but it has never had banana's, i guess its a banana tree it looks like one, will it that work?

      maybe it`s False Banana tree, it cant produce it fruit. African ussualy just eat the skin of that trees.

I've used spinach, cabbage and mustard greens, they all work just fine as long as the leaves are perforated with a needle 1/2 inch apart before placing the leaves down ready to be covered with inoculated soy beans or other substrate, such as ground peanut, lupins etc.

      @@magiccheeseball banana is not tree but its like tree in term of taking care. What i mean is banana need exposure of sun in open space and not working in soil with hard rock under, if u want banana to grow a fruit. And remember banana just grow fruit only once in its life time. Hope this make u illuminate.

    My wife is Indonesian and we decided to make tempeh by following your recipe. It turned out to be better than the tempeh that we eat in Jakarta. We are not vegetarians but we love to incorporate vegetarian meals in our diet.

    I tried the tempeh recipe and it came out perfect. It's so good. So much better than the store bought tempeh. I love the mild nutty flavor. Delicious!! I put them in ziplock bags, between two cutting boards, in the oven and I left the light on. I made them on Thursday night and they were perfect on Monday.

    I've been looking at a lot of sites to see how to make tempeh without a special fermenting container and your presentation was the clearest and simplest to follow. Anyone can tell that you're a master at it. I made natto yesterday by putting natto starter in sterile containers with the cooked beans in them and putting them in the oven with a lit bulb to keep them warm and everything worked out fine. I was planning to do the same thing with the Tempeh, but was a bit apprehensive because I've never done it before. Seeing you do it so successfully has given me a lot of confidence that I can break through. Thank you.

    I make tempeh professionally in a small family-owned shop (about 1,000 lbs per week), and your technique and knowledge are really impressive! We dry dehull our beans by splitting them first; it is impressive that you get such good tempeh without dehulling. Cheers, keep up the good work!

      Removing the hulls reduces the excess iso flavins that are plant estrogens, making for a more healthy food. Most people should not have plant estrogens as it gives a hormonal imbalance so when you make for the public, this is a better way to do it. I’ll never remove the hulls, but now I am going to.

    I’m so into fermented foods right now! Growing up In North America, we were always taught any mould or fermentation was bad. Now we’re finding out probiotics are the cornerstone of health. Thanks for the video

    This is a beautiful work of art. Thank you for such an easy to follow recipe like this.
    I'am Indonesian and i do really love tempe (we call it Tempe not Tempeh here) especially when you deep fried them and eat it with hot steam rice, a sambal which is made from thai chili palm sugar and garlic, and also lalap (it's kinda raw edible leaf, vegetable or fruit like tomato, cucumber, green eggplant, stink bean, sweet basil, and lettuce).
    The non vegan version is to add some shrimp paste to the sambal, and you eat it with fried tempe or tofu, and also crispy salted fish with all the stuff i mentioned earlier. Then you eat it near the waterfall, or in the middle of rice plant when the sun is heating the earth. Oh God, it tastes like a heaven. :)

    I had no idea tempeh is an Indonesian food. Very cool! I'm starting to notice that many eastern countries eat natural and healthy foods unlike in western countries.

      Haha, the mould is actually tasty! lol Although the tempeh do need to be thoroughly cooked to deactivate the mould before consuming it.

    Also to add. If the banana leaf is sourced locally, i.e. behind your house, it may be too rigid. Hence running it slightly over a flame can help wilt it a little and allow you to use banana leaves for containing foodstuff without breaking when you fold them. Actually can contain even more than beans. If you make thick things like pudding its also possible. Just requires to form into a cylinder and fold one end to close it off, then add batter, fold the other end and steam for like 15 minutes

    I am start to eat and love tempeh when i had been exposed to the “sambal tempe” by my Malaysian Javanese friend from State of Johore, Malaysia Federation when i am study in a college in 2011 in State of Perak,
    I love it, especially the texture n creamy umami natural flavor of tempeh..
    Until now, i am eat tempeh everyday and i did it by myself to ensure that tempeh is always available,,, not easy to find out tempeh here in my hometown because no one consume tempeh.. heehhe

    liquid out of the garbanzo beans called aquafaba and you can use it as a vegan substitute for eggs in bakery, especially in thing like marshmallows, meringue, macaroons, etc

      Yes. We do have a recipe on the channel with aquafaba - this shortcrust pastry - ua-cam.com/video/0eMkzB27Yd8/v-deo.html and it works great. I've also used it in cookies and other baked goods.
      But the liquid from the soybeans here are mixed with 4 tablespoons of vinegar. So, a lot of that vinegar remains in the water. You could use the liquid as aquafaba only in recipes that call for aquafaba + vinegar (in the same amount as in the liquid here). I don't really know how much of the vinegar is in this liquid, so I tend to just toss this one out. :)

    I miss tempeh sooo much since I can't find it in Japan, my friend actually succeeded in making them but she sells it so expensive :( I love tempeh very much and never miss a chance to eat them when I'm back to Indonesia for holiday.     Thank you for this. The instructions were clear. I just finished and cooked my own tempeh, and it's so much better than the store bought version. It didn't have the same bitterness and funkiness that I dislike in regular store-bought tempeh. I used chickpeas since they're the only legumes I had on hand. It turned out slightly mushroom and, once pan-fried, really juicy, and even meaty since I cooked the beans really tender.
    The tempeh starter cost was intimidating for me at first, but for very little, you can make tons of tempeh. It ends up being much, much cheaper than buying tempeh from the store.
    Highly, highly recommend this to everyone. Thank you again, for making a great quality video on the methodology, it made it much less intimidating/more accessible.

    Teenuja really observes and thinks about what she is seeing. She seems to have a good science background, too. Her variety of tips allow us to save time (No need to hull the beans; add vinegar near end of cooking; no-fuss ways to provide incubating heat). She completely illustrates what she is doing without adding distracting chatter.
    Nutritionally: Allowing the hulls to remain does increase the nutrients. And she points out that the tempeh culture eats up some of the gas-producing substances in beans (YAY for this!!)
    Adding extra ingredients (salt, fats, sugars) when cooking beans and grains can slow down water absorption and increase cooking time. So, as Teenaja says, add the vinegar near the end of cooking.

    The tempe made from the tofu left over is called "Tempe Gembos" here in Java which means "soft/mushy tempe". It's not packed like normal tempeh and taste more like a bread.

    dip them in a solution of water, garlic and salt. then fry them until they're brown and crisp. the thinner the slices are, the crispier. my best childhood junk food ever lololol

      Tempeh is not a junkfood. It's very nutrious, if you fried them then yes it will be high in calories but still it is not a junkfood.

      More likely people who needed to feed their family and couldn't afford to throw out food. We take for granted how cheap and easy it is to buy a bag of beans, but when you grow them and shuck them yourself you appreciate their worth.

    I love love tempeh and now I will attempt to do it myself. Where I used to grow up in a big family protein were expensive ..bear in mind this was 1960's Singapore..so tempeh was a no brainer alternative for us. We ate it in rendang in sambals and even as a crispy fried snacks since potato chips was a rare treat for us kids.I am by no means a vegetarian but tempeh always hold a special place in my heart even after 40 years of living overseas. Actually there is a small area named Kampung Tempeh in Singapore..Kampung is a malay word for village..hence Tempeh Village. Of course it was named so due to the fact that tempeh was made fresh there. I am so excited that you showed us how to make tempeh in an easy to follow recipe. Thank you!

    Thank you so much for this clear explanation. Tempeh keeps intestine healthy. I searched and discovered that you can it eat it raw or cooked. The raw keeps the live cultures act like yogurt and balances the digestive system. I will definitely try with banana leaves and glass containers, so easy and inexpensive way to make tempeh. 😌🙏

    I loved this. I lived in Singapore for 26 years and tempeh was a favourite in rojak. After moving to India I never got to eat this. After lockdown I will get the starter and try this. Thanks a ton.

    Watching this while munching some tempeh. Really, it is one of the Indonesian food that I missed dearly during my time traveling abroad. Tempeh chips and deep-fried tempeh really get your palates going for snack time. Thanks for the recipe ^^

    You make very beautiful tempe! I reccomend marinating in garlic and salt (I usually just go with salt though) and deep frying it instead of just pan frying it. If you slice it thinly you get crispy goodness.
    I sometimes forget that banana trees aren't common in there. You have to buy them in a store... Meanwhile if I need some (usually to make pepes or buras and stuff like that) I just... pick some in my yard 😂

    After I watched your video, I feel so grateful I live in Indonesia. For three tempes that you made, I only need to pay for $1 here. Tempe is best if you deep fried it with only salt and eat it with rice and sambal (Chili sauce) or you can make batter with flour, salt, garlic powder, and leek. Dip the tempe and deep fried it. It taste nice

    This was so interesting. I've never seen or heard about Tempeh before.
    In appearance it looks very much like Turrón which is made from peanuts, walnuts or almonds and a mixture of egg whites and sugar.

    I tried it two ways, with the bags and with the box. I had some black spots, but that's because I left them a little too long because I expected my mold to be as thick as yours. This is so fresh and delicious, no bitterness at all. Thanks so much for this informative video.

    When going to the farmer's market, we always on the look out for tempehs with white spores. This is actually a guarantee that the tempeh will be good, just like how the ones in the video turned out.

    Yeay, food of my hometown 😆 I remember when I was in high school the teacher of home-industry class gave us task to make tempe or tahu (tofu). I decided to make tempe, (with the help of my mom of course, LOL). You are good in making this stuff. Thank you for the video 😊

    I'm so glad to have found this recipe and channel ! I've wanted to make tempeh for a long time but most of the recipes are either too complicated/time consuming or 'fiddly'. Thank you for explaining in a clear and simple way, I am definately going to do this.
    Also I make soy milk and try to use all the okara in various ways, i didn 't think it could be used for this purpose - what a useful bean soy is ! so many ways to use it.
    And I will be trying chick peas as well.

    Thank you for the detailed instructions! I just started two batches, one soy bean only and one soy and chick peas mixed. I've been meaning to get some starter for a while now, but, well, I was in a hurry so some bits of store-bought tempeh torn up and mixed in will just have to do. Hey, the original tempeh got it's mycelles from banana leaves, so why not?
    Now, knock on wood and everything and let's see how it turns out!

    Oh, wow. This is a very informative video, thank you so much for it! I've been thinking of trying tempeh, as I've been vegan for 6 years and never eaten it before and have heard of it from people online in recent years, but I did not know it's made from mold! I'm allergic to mold, such as common household molds, but I don't know if that means I would also be allergic to this specific strain of (edible) mold. I guess I would just have to try it to find out.
    Nonetheless, it would have been very bad and unexpected if I tried out tempeh from a restaurant or store only to break out in a rash! Great quality video with a very informative voice-over. Thank you so much! This seems like a very nice channel and I'm now a new subscriber to you. :)
