monkfruit powder, erythritol, or any sweetener recommended on a keto diet is calorie free, doesnt spike insulin and is CRAZY sweeter than table sugar! (i use monkfruit in everything!)

I find it tastes even better after a few days in the refrigerator. I used Cabot Creamy Greek Yogurt, plain. I did not use a low fat. It shows it has 310 calories per cup, not 200 like you used. What Greek Yogurt did you use? How long can this Greek Yogurt Mayo last in the fridge? Also, your recipe above calls for 1 egg yolk hard boiled but then you have 2 in parenthesis. Which one is it, 1 or 2 egg yolks?

Grace Plata Just use only lemon juice without the vinegar. Maybe you can add honey to it. Normal mayonnaise is very high in fat. Making it with yoghurt is much better.

Now, with that being said, this seems like a great sauce starter for perhaps a Greek salad dressing, but mayonnaise it is not. 😊😊😊

Meaning 1600 calories per cup, and 192 grams of fat. …according to their nutrition label, which doesn’t make sense because 1 gram of fat=9 kcal. 9x12 is 108kcal not 100 but I digress This on the other hand, depending on the Greek yogurt, can have around 200 calories, 25 grams of protein and about 4.5 grams of fat. Per cup. One is most definitely not like the other in regards to health. No nobody eats a cup of mayo by itself but.. chicken/tuna salad, Devilled eggs, macaroni/potato salad etc all use a lot of mayo. So if you’re actually health conscious and want something similar to mayo, without the calories. Yes this is the way to go.

The only fat is from the egg yolk -- one egg yolk is 4.5g of fat. Two tablespoons of this recipe would be just over 0.5g of fat (0.2g saturated fat).
