    If you open the cream cheese and put it in a bowl with a lid, then set it out on the counter until it softens you can avoid the "blend and scrape, blend and scrape, blend and scrape" completely. It stirs right into the sour cream with a spatula. The opening before leaving on the counter is only recommended because the foil seal is hard to remove after the cream cheese is soft.
    Also, if you add a packet of ranch seasoning into it the resulting product can be mixed with boiled egg yolks for a stellar deviled egg.

      @1rayne 10 місяців тому +1

      @@randomroses1494 yes, that is true about seed oils. We tend to go through it quickly enough not to have a problem. But I can’t argue about butter. I did make mayo with all butter but it didn’t have the consistency of mayo. It hardened up a bit in the fridge. If you leave out for a few minutes it softens up. I chose the half grape seed oil and half butter because my mom doesn’t like any other oils and was ok with the grape seed. And it was a bit closer to the mayo texture. I was just experimenting to find a happy ground for everyone.

    I make bacon Mayo using leftover bacon grease. I used to use half bacon grease and half mct oil so it stayed soft in the fridge, but trying to go a bit stricter cut out the mct oil. It firms up a lot in the fridge but I don’t mind. Supposedly you can use more egg yolks to keep it from firming so much, but I haven’t done that. I use Steve’s (seriousketo) method for pasteurizing the yolks so it lasts longer. Works great for my family. I don’t do much dairy anymore, but I will try this recipe for my kids. I generally make mayo. Either Baconaise or with high quality EVOO (which is one of the few non-animal fats that doesn't make me sick). It's not always quick or convenient to make depending on what else is going on in my kitchen; better to remake and store in a jar for a recipe I'm making later. This seems a lot simpler since you don't need to perfectly time the emulsion on the mayo and I'll have to try it.

      @@sbg3189You could easily add a big spoonful of onion powder and a bit garlic powder (plus a bit of salt and pepper) to your sour cream and cream cheese blend….the taste of the powders seems to me to be a bit softer and with a lovely mellow flavour hit, so better than raw garlic if you don’t want it overpowering….and don’t forget, the powders are only what they put in the soup mix anyway, plus you can decide the quantities and fine tune it. You can also get powdered mixed vegetables to use as a dry bouillon/stock which would possibly enhance it further. 😁👍🏻💕
