- The Bebinca is the most gorgeous among Goan sweets and, certainly, the most technique-sensitive. It, however, is not difficult and only needs time; time for both, preparation and cooking. The Bebinca, especially when freshly made at home, is smooth, melt-in-the-mouth soft, delicately layered and heavenly delicious; no wonder it is considered the 'Queen of Goan Desserts'!
Many thanks to my sister, Natly, who taught me this recipe step by step and who still bakes the best Bebinca in all of Goa!

Ingredients:
Caramel
4 cups of Coconut Milk (from 3&1/2 cups or 320 grams of freshly grated Coconut)
10 Egg yolks, lightly beaten
1&1/4 cups or 150 grams of All-purpose Flour (Maida) [*Made an error in the video*]
1/4 piece of Nutmeg (powdered)
2&1/2 cups or 500 grams of Sugar (granulated)
Melted Ghee for greasing the tin & each layer
For the Caramel:
4 Tablespoons of Sugar
2+5 Tablespoons of Water
Note:
Tin size: 9"x4.5"x2"
Thinner the layers, the better the appeal. I used one ladle of the batter for each layer (one ladle measures 1/2 a cup; understanding the quantity of batter for each layer is a trial-and-error process)
Preheat the oven at 180 degrees Celsius for 15 minutes.
First layer must be baked at 180 degrees Celsius for 15 minutes, all others must be grilled (top rack) for 9-11 minutes.

I remember my father's colleague in goa sending this with him as a token of appreciation. It was the first and last time I ate bebinca but I always remembered how much I liked it. Glad to have found your recipe video for it😁

Wow this really looked like a labour of love. I really love trying new desserts, esp the ones which are unique and not the usual cream and cake layered ones. I'm from the Philippines the origin of our Bibingka came from you guys . But with a different twist . We make one similar to this and we make one on different adaptation more of a rice cake bready texture.

@@FlorencyDias I'm also from the Philippines. Even our PUTO (rice cake) came from India. I think it's the medieval trade that made these dishes their way to the Philippines. One savory dish called CALDERADA in India is called CALDERETA in the Philippines. LOL.
For us puttu is fried rice flour and grated coconut layered and steamed in a bamboo
With so much sugar this is a Great recipe to Kill Sweetly.

Thank you Florency for this recipe. I never thought that making Bebinca would be so easy. I used readymade coconut milk as didn't have fresh coconut and added 2 cups of sugar instead of 2.5..and it came out perfect with those beautiful layers..just the way shown in your video..I am so happy :-)
May I please ask you how many tins of coconut milk did you use ? I want to try this amazing recipe.
@@vionapereira5292 hii..I just used the coconut milk we get in tetra packs. I used 3 cups of coconut milk and 1 cup of water as I felt that 4 cups of just coconut milk would make it thick.

@@caronace Hi Caron, I used 1 and half tin. 1 tin = 400ml and diluted with water to get 960ml. Hope this helps.

Hello again. Could you please suggest what I can prepare with the whites.
Hi Florency, I have made bibinca in the past, but never managed to get the caramel batter correct. But using your process, the caramel layer was perfect. Was happy with the outcome. I used canned coconut milk. The only issue I had was when unmoulding, the bottom layer stuck to the baking tray. I have always had this problem. What is the solution? Is it lots more ghee when we start the process?
Let it rest and once its cool you need to heat the base of the tin You baked in to release it and then with the plate over it flip it

Wonderful recipe, and video production. Reminds me of going to Goa and finding many stores, all “specializing” in Bebinca and claiming to be the “best”. A lovely, rich dessert that reminds me of celebrating Christmas with my Goan Catholic friends many years ago. I’m hoping to try it this year after watching your recipe. Merry Christmas from the USA!
