Goan Baath | Semolina & Coconut Cake | No Baking Powder Recipe | Christmas Specials

- Baath (aka Baatk or Batica), a cake with a golden brown crust atop a pale, dense yet airy body, is a traditional Goan cake with Semolina and Coconut as the master ingredients. What weaves them into a buttery, crumbly yet firm cake is the eggs, sugar and butter (of course!). This recipe needs no other leavening agents and bears the flavour of Cardamom.

Ingredients:
1 tablespoon of Dalda (hydrogenated vegetable fat)/ghee
1 and 1/2 cups of Semolina (250 gms)
2 and 1/2 cups of grated Coconut (220 gms or 2 small coconuts)
1 and 1/2 cups of granulated sugar (300 gms)
5 Egg yolks, separated
3 Egg whites, separated
1/2 cup of Salted Butter at room temperature (125 gms)
1 teaspoon of Vanilla essence
1/2 teaspoon of Cardamom powder
2 pinches of salt
Addition of nuts/dried fruits is a personal choice; if adding, do so at the time of combining with the semolina.
The batter must be left to rest for 8 hours at room temperature.
Tin Size: 8" Diameter circular tin; greased with oil, lined with butter paper and again greased with oil.
Oven must be preheated at 160 degrees Celsius for 15 minutes; Bake the batter at 160 degrees Celsius for 45 minutes or till the skewer comes out clean.
Yield: 1 Kg

Hello All My Dear Viewers! I’m glad some of you have tried this recipe, and that some of you will attempt it at some time, especially at Christmas. I’m answering some common questions I’ve come across in the comments:
1. This recipe DOES NOT need Baking Powder. It rises because of the fluffiness of the eggs.
2. Be careful at the separation step of the eggs. If the yolk breaks into the white, the whites will not fluff up as required. Basically, the egg whites must be pure. No contamination in the bowl in which you’re beating the egg white.
3. The batter must be left to sit on the counter (no need of refrigeration) for 8hours. In cold weather, this batter will not go bad. If you’re afraid of it going bad, say in a hot climate, let it sit for 5 hours in the fridge, then bring it out and let it come to room temperature before baking.
4. Different ovens work differently. My oven has a convection, grill and microwave mode. I’ve baked the cake using convection mode. For most cakes, it is recommended to keep it on the middle rack. That allows for heat to circulate around the cake. I’ve mentioned the time and temperature in the video, but you can keep it a little longer if you haven’t received the desired colour. You need to check it by poking the centre with a skewer to know if it’s cooked within or not.
5. Should have mentioned this first. The Rava (semolina) is the medium size grain. It’s not the fat idli rava, and it’s not the super fine rava either.
6. You may use desiccated coconut, but I recommend mixing it with quarter cup water and let it it absorb for some time.Otherwise it will turn into a rather dry batter.
7. Yes, it can be baked on a stove, in a kadai. Just put a base of salt/sand, place a stand in the centre and then preheat the kadai. Then keep the bath cake on the stand. Cover and bake it. You’ll have to check after 45 minutes to see if it’s cooked. I cannot tell you exactly how long, since I haven’t tried it. Please note, that this method won’t give you a golden brown top.

I baked it today it was Perfect. evryone loved it i, baked fr 65 mins 45 mins down and 20 mins on top in OTG oven of Philips company thank you so much.
