    During the Austro Hungarian Empire , which included also big parts of Romania, Czech Republic, Slovakia,etc, many dishes of one particular nation of the Empire were also popular in others. Thats why there is Goulash, Chimney Cake in the surrounding countries and us Hungarians also have Austrian food , like Schnitzel, or Czech food like dumplings with beef etc. It was a one big melting pot, where people, food, culture were all mixed to produce something we might call central-eastern European

    We were in Budapest in the Spring time, and stayed across the road from the Central Market. We loved Budapest! We then took the train to Vienna for a few days (another awesome city)👍

    Hungarian language is one of the hardest, if not the hardest to learn. Most of the Romanian deserts are actually Hungarian deserts. Some of these, you can buy in Garden Grove CA, International Meat and deli store. Langos, kurtos.

    I really miss Budapest last time i went was just before corona came out, been there so many times but still luv it, it has something real special, it can be very quiet and relax but also crowdy and fun, the food is fantastic and all those cafés are the best in Europe in my opinion, most people are nice and friendly to

    Oh I love Budapest so much! The food, the buildings, the river, the culture, the bars, the nightlife.. It's really an incredible city, one of my favourite capitals in Europe! Tommy, I am sure I am more obsessed with chimney cakes thank you! Nobody beats me! hahaha 😅... I overdose every time I am there but it's totally worth it! Loved the video, you guys! 😊

    Hi Sammy and Tommy, what a great video. Glad that you go to experience the Hungarian Goulash as it is so famous. That one cake with the Pistachio and Raspberry looked really awesome. It was mouth watering to watch you both experience it. It is a really nice touch with your videos were you feature some shots and poses of the local people.

    Guys, Gulyas is a few 100 years old Hungarian food, and its a soup! The thick version is stew. Other countries around Europe only sell the stew thicker version for gulyas, because they can sell it easier..

    Yes, Gulyás is the soup.
    Ágnes may not eat horse meat, but quite a lot of us do.
    They would have starved even Hortobágyi meat pancakes, lángos, stuffed cabbage, fruit soup, rooster testicle stew, etc.I know it should have taken more time.Sincerely, Laci

    Gulyás is the short version of “ gulyásleves”, leves means soup. So basicly gulyás is a soup, the foriegner used to cook like a stew, wich is wrong.

    Small correction.
    I apologize to Ágnes.
    There are four types of ground paprika, with three types of spiciness.
    1:50 gray cattle in front of mangalica.
    Both are traditional breeds, together with the third, the racka juh (English spelling: ratska). (The latter inspired the mascot of the World Athletics Championships)
    1:56 it's definitely not a little mangalica because mangalica puppies are striped like wild boars.
    The wild boar has straight hair, while the mangalica has curly hair.
    Mangalica is of Serbian origin, but it was created in Hungary.
    At the beginning of the 18th century, such curly-haired breeds were already known. For now, it is not known whether the 4 names are place names of one breed or 4 separate breeds.
    In 1833, however, animals called sumadia breed arrived, which were crossed with the szalonta breed. The end result is a type of mangalica today.
    Horse meat sausage has been made and sold for a long time. But it's not popular. People ate horses out of necessity during wars and famines. It is likely that the collective consciousness remembers this. The Hungarian people respect the horse, consider it valuable, a companion, not something to eat. This is an ancient relationship, even if it has almost been forgotten today.
    Pig cheese is "cheese" because the word "sajt" (shayt) means pressure. During the making of the cheese, the water is squeezed out of it in a press. In this dish, the excess fat is squeezed out during preparation, just like with cheese.
    The "medvesajt" ( bear cheese). Relax. Is a bear because there is a bear on the packaging. This is a normal cheese made from cow's milk. :)
    The "fröccs " has a secret. It only works with good quality sour wine.
    There are many versions, they differ in the proportions of water and wine. Of course, each variant has its own name.
    10:05 Drum cake. His story is very interesting. József Dobos, the namesake, was not a confectioner, but a businessman. Many people do not know this. His name was a brand because he sold many things, but only the best products. Only he sold this candy.
    However, the cake of the time was not like this, the recipe has been modified for today's version.
    Today, pig killing in the form described by Ágnes is rare.
    Traditionally, it took place in the winter, as there was no need to cool the meat at that time, as it was cold. On the other hand, the animal reached the slaughter size by this time.
    Getting up early is essential, because processing the animal takes a lot of time and must be done the same day. So drinking a lot of pálinka is not possible. There is no time for it, and you cannot work drunk. In the best case, you will spoil the meat, in the worst case, you will injure yourself or someone else. Pig blood can cause a very serious infection in a human wound.
    As we used to do:
    In the previous days, we agreed with the pig breeder about the animal and the time of delivery.
    Departure around 6:00 am. The breeder kills the animal, we collect the blood and then measure it. This is a good bit of wrestling, because it is very difficult to move a 120 kg helpless mass. This can be horrifying because the pig can be very loud while killing it.
    We will take you home after payment. Heat water in a large pot. We fry the blood with onions this breakfast. It's time for palinka, and that's all about drinking.
    We burn off the fur and the top layer of the skin with a gas torch. This is also disinfection. The water is so hot, wash the burned part with it. We turn it onto a prepared wooden sheet and burn it on the other side as well, and wash it. From now on, let's "disassemble" the animal.
    We throw away the intestines, bile, and bladder. The offal will be part of the hurka after cooking. 18:33 the two brunettes. Rice seasoned with boiled marjoram is placed in the loop, but there are also boiled barley or dry breadcrumbs.
    It's about 8 pm already. Everyone is tired, but the last things still need to be done. This is the cooking of hurka and pork cheese. After cooking, the cheese also needs to be pressed.
    Pickling meats, ham and fatty bacon in brine is a daily job for another 2 weeks. So it's not so funny, but very hard work.
    We call that small green pepper the cherry pepper. When it's ripe, it's as red as a cherry. The other one is called the apple pepper, because its shape is similar to an apple.
    Chimney cake is also known in Slovakia..

    To celebrate Hungarian culinary innovation, “The Cake of Hungary” (Magyarország Tortája) contest is organized each year on the occasion of the national holiday on 20 August, the day when Saint Stephen founded the Hungarian State. In 2023, the cake called "Spicces Füge Respectus" - an Aszú-flavored fig creation with honey by master confectioner Pál Lakatos from Szigetszentmiklós has been awarded as the winner. The Sugar-Free Cake of Hungary in 2023 is the "Kikelet" by confectioner Zsófia Lawal-Papp from Makó - a cake with a drop of black tea, blueberries, and lavender completed with vanilla white chocolate mousse.
    From August 19, you can taste the cakes in the Várkert Bazaar in Magyar Ízek Utcája and in hundreds of pastry shops across the country.

    I'm glad you liked it! However, many important dishes were left out: langos(flambé), halaszle (fish soup), stuffed cabbage, retes (strudel). All of these can be found on the streets.
    You have to come to our country for a few more days...

    Chimney cake most defenietly wont be enjoyable up to a week. I would say it is perfect when it is fresh, and maybe for 5 more minutes.

      We didn't have snow in many years, just a little every year. Winter can be sometimes very cold, but in the last few years, I would say it was rather warm.

      It was originally called the German-sounding spritzer, then it was changed to "fröcs" in Hungarian.
      When it was called a sprizter, the innkeepers were mostly German-speaking.

      Soda did not have to be invented, it had already been invented in the West, it was known as a low-quality laboratory by-product that was useless. But they couldn't produce it cheaply and in good quality on their own, but a Hungarian priest succeeded and it became the priest's 2nd greatest invention. It was recognized that it improves fires, then in the city of Szeged it was consumed in the square in front of the Szeged Cathedral that same year by mixing the soda with wine. It was a great pleasure in gastronomy. A cheap kind of water that makes bad wine drinkable, so it doesn't stay on the winemaker's neck. The "fröccs" "splash" german "spritz"spread in the region where the wine was not excellent due to the soil, especially in the lowlands.
      And the name of the inventor: Jedlik Ányos, a priest and university professor.
      His second invention is the electric motor.
      As usual, the Germans wanted to steal both inventions. Referring to the soda, it was German, but it was proven that they started drinking it on the street only later. And the electric motor is the famous Siemens! But there is still that letter in Hungary where Siemens asks Jedlik to draw a drawing of the electric motor, because he wants to build it too.

      The Dobos cake is famous, but not widespread, and it is not a favorite here either. However, many other Hungarian cakes do. József C. Dobos (1847-1924). The specialty of the Dobos cake is that it won the Paris food industry exhibition in the 19th century. To the great consternation of the West, he used cream mixed with chocolate and butter softened with cream and sugar between the cake sheets, instead of boiled creams and whipped cream, and he successfully concealed this for nearly 50 years, while exporting it in large quantities, the West increasingly tried to fake it or produce it for itself, without success. Before his death, he made it public and left it to his new foundation owner for the first time. The shape of the "Drum Cake" resembles a percussion instrument with burnt crystal sugar and nuts on top.
      Goulash is a big loss if you don't get it. Fry onions in fat (oil) until glassy. On top !!!!!!!spice "paprika"!!! ground red!!! and not pepperoni-possibly Indian-Caribbean. Throw a lot!!! 3 spoons on the onion. Fry for another 30 seconds. It will have a slightly bitter taste. Lots of water immediately, and chopped meats-anything except poultry.Plenty of salt. Your meat and vegetables are almost cooked. This is done when the meat and vegetables are cooked at the same time! Potatoes, nokedli (flour, eggs mixed with water and chopped into it), cumin seeds, carrots, celery, vegetables and greens!
      How delicious is it? No. 2. There is one more delicious than this.
      Why is goulash delicious?
      Onions are roasted and caramelized!
      You put salt in it!
      Bitter?-grind the red pepper for 20-30 seconds!
      Sour?-red peppers contain an enormous amount of vitamin C, which is citrus-like.
      +Fifth taste: umami!
      +Smoked bacon in the bottom of the pot as fat.

    Thanks for the video! It was great to see you showing us a wide selection of foods here including hidden small gems like pogácsa or cabbage stuffed pickled pepper and the nice sausage trio :)
    The guide was really great, and gave very wise suggestions.
    If you come to Budapest again and if you are able to contact your guide, i also suggest you to try the ice-cold fruit soup, which is a milky fruity nice cold experience at the hottest days of summer, most commonly with sweet/sour red fruits like cherry and it really statisfying to eat at the hottest summer days. If we are at soups i also can suggest the Jókai-bableves which is a bean-soup, its one of my favourite. For main dihes my number 1 favourite is the gipsy-steak (cigánypecsenye) which is pork-neck marinaded in mustart/paprika/spice combo grilled in smoked-bacon fat and served with grilled bacon. Best choice along with it is the croquette or meshed potato (if you choose meshed potato you can mix it up with the melted marinade and bacon fat with the meshed potato). Any restaurants that i visit first time i test them and judge them by this dish. And the 4th suggestion is (Csülök pékné módra) its a potato + pork leg combo at the best possible way: This pork leg is a 3 layered experience with the crispy skin, with the soft fat, and the soft meet. Unbelievable. If you just softly pull a fork on this, the whole thing will fall apart (even whithout using a knife). When you eating this you can easily playing with your senses just eating a layer after another and after that just bite those nicely spiced grilled potato and a sip of beer/fröccs. Ohhhhhh... Ok, i stopping it because i just getting hungry in Hungary :) Thanks again for showing this nice video, i really appreciate it :) And have a nice day :)

    Všetko je to o pôvodnom recepte, môžete mi hovoriť čo chcete, ten pôvodný guláš už neexistuje. Existuje verzia, ktorá je veľmi blízko tomu pôvodnému, Dnes sa do toho hádže čokoľvek a je to ďaleko od pôvodu. Tak isto ako Nemecký ovčiaci, čím viac ich šlachtia tým viac sa stráca to dobré čo bolo. Ako vyzererajú tie psy teraz? Dobre, že nemajú brucho na zemi. To isté platí aj s gulášom, už do toho dávajú čokoľvek, včera som bol na akcii a boli tam párky :):):)

      Already during the Austrian Empire, there were at least 25-30 variations of dishes called goulash.
      Most of them were quite different from today's Hungarian goulash.
      Let's add that today's goulash soup has as many varieties as there are people cooking it.
      What they have in common: a fatty base with onions and peppers, vegetables (without tomatoes) and meat (preferably beef).
      There is another such dish, the Újházi chicken soup.
      It was the favorite dish of the eponymous Ede Újházi. However, in many places they could not or did not want to prepare it properly
      If he went to a restaurant and was offered this soup, he thanked the kindness and asked for other food. He only accepted it from his favorite cook, but he could make it.

    Chimney is actually originally from Romania. It is from Transylvania, from a zone named " Tinutul secuiesc" where ethnic Hungarians live.

    I'm really glad you liked this sample of hungarian dishes. And Ágnes was very kind. BUT. I was a bit appalled by the lazy english she was using. (I'm hungarian) It's okay for an average person not to speak foreign languages properly. Or at all. It's on them who cares. But she uses english for a living. (I suppose. If not disregard what I'm writing rn) I really thought guides left this kind of practice behind since the 90s. Talking in romantic bs panels using special this and special that instead of explaining something properly. Or be able to explain something at all. It was kinda hard to watch as you didn't get a spot on answer on everything. Guides really should do much better than that.

    It's pretty big bullshit that Hungarians don't eat horse meat.Ágnes can be very picky and that's why she said we don't eat.We eat it in the same way as deer, roe deer and rabbit meat.
