I tried your blackened salmon recipe as one of my first cooks with 3 lbs of frozen (thawed) sockey salmon from Costco (cheaper frozen), and my wife has never been this impressed. I will have to try wings next time.

We found the best prices on wings to be Sam's or Costco for now. We go through a lot. You sure are right about learning the timing for griddle cooking, it is the final talent acquired.
Love me some wings on the griddle. I do the Buffalo, honey BBQ (mix some Baby Rays and honey) and sweet chili (just sweet chili sauce out of the bottle). I gotta try parm garlic now. Great cook Neil.
My recommendations on two of your wing recipes. I have not tried the Parmesan Garlic wings, but on the Buffalo wings I much prefer Sweet Baby Ray's wing sauce over Frank's Red Hot Thick Sauce. Wayyyyy prefer! Much better flavor! And put them back on the griddle with the sauce for a bit like you did with the other wings. For the Asian wings, sprinkle sesame seeds on the wings after griddling. Just makes it a little better, IMO!!!
Great wing spread! They all look great! Maybe some dipping sauce for each... Bleu cheese / Ranch for the buffalo, Thick creamy vodka sauce for the parmesan, and a gochujang aioli for the Asian. Just a thought.
I've done french fries at the same time as my wings, ok just one flavour, but after I sauce and take the wings off, I slide the fries over and pic up all that goodness. Nice job.

My technique for separating flats and drumettes is to lay the wing down so that the drumette is on the left (whether the wing is upside down or not), then I just feel with my knife at the right edge of the drumette right where it meets the flat and press down; it takes a bit of doing the first few times you do it, but when you figure it out it hits the groove every time and goes through like butter with less effort and less mess than other methods I've seen. I always cut the wing tips off before separating the flats from the drumettes. I'm also a huge proponent of dry brining, but I don't dry brine wings because they're so thin.

Not a chance...i think they all have there purpose...like having 2 great knives. skillets, etc..I do like the portability on the PB and the ease to clean..its not as powerful as the as the others and takes longer to recuperate the heat...I like 4 wheels that move 360 because i have to move a lot..i also like a hood...thats actually why I got rid of the Camp Chef....to many and it did not hit all my personal pros and cons
My local Rouse's Supermarket had fresh chicken wings on sale last week $1.79lb. I never buy them as I have had no recipe's to really use them for, until now. I've never even been to Hooter's so I am not even able to compare the flavors. But doing it at home using these 3 recipe's would be so much fun. I might even do a 4th just to try putting my spin on it, but these are all winners. Some people might add a dipping sauce, but honestly I think they are great as is. I do totally 100% agree with cutting off those wing tips. Also I noticed you used a grill that the cleaning was away from you, and not towards you. Did you have a change of thought on that process. As for the whole cooking process well this is perfect game day food and would be so much fun to make. Now on a more serious note 8 and a 1/2 point underdogs. Well if the Tennessee team I have been watching shows up it's going to be a game to watch. Also congratulations on the continued success of your platform growing. Well i look forward to your comments for sure...thanks for that..as for the cleaning since the blackstone has a rear grease trap its easier to push that way...the Camp Chef had a front grease trap and thats more of what I am used to. Its so hard to gauge Tennessee,,,yeah great year but GA is a different animal. If I had to loose a game it would be to them. Maybe they dont deserve the Number 1 spot right now base on resume but that will take care of itself this week...Man i am tense already..Can you do me a big favor...tell him to respect his ELDERS...hahahaha

@@TheFlatTopKing I do. I’m not good at shaping them. But they turn out well. “Rachel cooks with love” has a good video on them. And so does “Ethan Chebowski”. Lard makes them more chewy than the butter or oil methods in my opinion.
May I ask why you sold the camp chef? I'm going to buy a flat top within the next week and camp chef was leader of the back. Basically I want to buy best available.
I have publicly mentioned this so there is a record....to me its a balance of my pros and cons...having three griddles got old..just to hard to move and protect. Plust my deck was just to full of things. I had to make a choice, the Camp Chef was here the longest and was harder to move.. The Blackstone had 4 caster Wheels and was just as good. The pit boss I agreed to try out and play around with..absolutely nothing wrong with it...just something had to give
You dont have to...its the easiest way..its more important to clean as you go...and that will help cut down time when done...i have a video on How to Clean a Flat Top Grill
Wings on the griddle is a cook I need to do, normally I smoke them, sauce them then on the propane grill to set sauce, I think the griddle would take my wings up a notch, I have a niece that keeps asking when am I going to do wings again
Because all wings are different..size, frozen, fresh, amount of wings on griddle, size of griddle, brand of griddle, what temp you cook on...all that plays a role....
I like my chicken wings boiled first before griddling them. Looks like the wings you bit into were tough to get off the bones. Just my opinion and choice.

Wings are one of my top favorite foods. Oddly, I don't care for hot wings. I have no idea why, unless it's the hot sauce flavor. That doesn't make sense, though, as I love Cajun hot sauces. I love spicy Cajun, Mexican, and Indian dishes, just not wings. Maybe I need therapy.

thawed...I dont use high temps and vary rarely use med...I always cook on low...the griddle will be hot enough for sure

Neal, my wife prefers "crispy" wings. I am also trying not to be behind the griddle for an hr...any tips? Precook in an air fryer first?

Wings are one of my top favorite foods. Oddly, I don't care for hot wings. I have no idea why, unless it's the hot sauce flavor. That doesn't make sense, though, as I love Cajun hot sauces. I love spicy Cajun, Mexican, and Indian dishes, just not wings. Maybe I need therapy.
