- Meatball is a comfort food with many variations: with sauce, based on raw or boiled meat, fish, vegetarian, ethnic. The first episode of our series dedicated to Italian meatballs begins with the recipe of a Neapolitan chef's grandmother. After the version of the rich Neapolitan ragù, o' Rraù, Antonio Sorrentino presents "e' Purpette". The Chef's meatballs are carnivorous, fried and appetizing: to make them he starts from raw meat, stale bread, aromatic herbs, raisins and pine nuts. Everything is fried in lean lard (but oil is also good!). Enjoy another epic dish, directly from Campania!

se invece della sugna/strutto usassi l'olio, la temperatura di frittura sarebbe cmq 120/130 ° come dice lo chef nel video?

How lovely! In India we've koftas (from the Mughlai cuisine), which are also meatballs and sometimes dry fruits are added to them. These koftas are then served with delicious gravies or are put in aromatic and spiced rice.

I Remember my Nonna making this dish on very special occasions in the 1950s when we lived in Torre Del Greco. Napoli I now enjoy them living in Australia the same way. Saluti from Australia

The recipe looks great, the chef presented it in a very clear and enjoyable way. I especially liked how delighted he was with the meatballs: "aren't they nice, aren't they cute?" Indeed, they looked wonderful! But almost as much did I enjoy reading these comments, and seeing the arguments over whether this is Italian or Neopolitan, many references to nonnas, and if this is autentico, si or no! Google translations weren't exact, but I think I got the sense of what folks were saying. Buona Pascha!

@Father Martin Fox My mum was from Naples and we visited her family often. The chef wasn’t speaking Neapolitan dialect. Great recipe!
I think italians get too caught up in minor details about their food, much of which as not changed since rome. I like italian food, i cook italian food quite well. Who cares if i didn't use beef diaphram for bolognese. I can't even find beef diaphram. Can't find guancale either so i use bacon. I don't think these minor details really matter, old italians need to find a new hobby besides getting angry over food they didn't even invent.

I made this recipe. It was "spectacular". I have never tasted meatballs as good as this one. For me the key ingredients are definitively the Parsley and the Pecorino.

I am subscribed to this channel but I didnt watch any of videos at least 4 months, they wouldnt pop up in news feed but I found this by accident at Facebook and than I searched on yt for this video to make it for dinner tommorow. What I want to say is just that I am confident to say this is one of best channels on yt and we all should appreciate it, it has subtitles and its just perfect in content and also video quality in total. Caro Antonio,
qui a Reggio Calabria mia nonna e mia zia facevano 'u rraú di domenica. Dentro calavano carne, polpettone, polpette, salsiccia (ma da noi si è sempre fatta coi semi di finocchio), il braciolone (ripieno di frittatina, prosciutto cotto e provola), le bracioline (con dentro la sola mollica "cunzata" ) e pure le patate fritte in pezzi molto grandi.
Cuoceva tutta la mattina, mia nonna lo allungava con l'acqua e lo faceva stringere e così via fino all'ora di pranzo, quando prendeva un color camoscio che era uno spettacolo.
Col sugo si condivano i maccheroni.
Il resto come secondo.
La casa d'inverno era freddissima, quello che restava lo lasciavano nel piatto ovale ('a "spirlonga") nella dispensa dentro un reparto con le ante a retina e noi nipoti ce lo mangiavamo per merenda in mezzo al pane, il tutto dopo averlo messo nel forno a riscaldare.
Tornassi indietro osserverei e scriverei tutto.
Nessuno più in famiglia sa farlo come mia nonna e mia zia. Le altre sono tutte versioni approssimate per difetto.
Una volta sola fu chiesto al nonno di girarlo mentre la nonna era a messa.
E lui, dopo, disse tutto scandalizzato a mio padre: "a viristi, a ttò mamma? Mi fici cucinari!"
Mi piace guardarti cucinare . Si nota l'ardore che provi per il cibo, riesco a sentirne l’odore. Vedere il tuo lavoro che traccia sentimenti su un piatto bianco. Provo vere soddisfazioni... guardarti cucinare è il verbo delle emozioni

I've been making these meatballs for about 2 years now, when I found this video. I had to practice the technique a bit but after that they've been a hit ever since! It's one of my favourite thing to make when we have people over. I especially love serving them with polenta.

Seems like an incredible recipe. Him using half of a garlic clove just to express its aroma around the bowl was just poetic and genius. It’s touches like that that really distinguish Italian cooking. It’s all about balance. Funny to think about how much garlic is used in Italian-American cooking.
Garlic is awesome and very good for you but the modern Italians seem to use it sparingly
When the first wave of italian americans came they didn't have great ingredients to work with. Adding more garlic gave more umami to the food, making every ingredient in the dish seem to taste better. But I am convinced the guy in this video just hates garlic, he's almost afraid of it. I don't think he's ever had a fully cooked clove.

Garlic is a very powerful ingredient, italian recipes need its flavor not its presence. My mother puts it briefly and always takes out before starting the real cooking, if you cook altogether all recipe would taste like garlic.

I'm freaking out over this presentation! So lovingly prepared, like he's reading his kids a bedtime story. I'm completely enchanted.
And interesting that he put little raisins in the meat mixture. Later, when he's frying the meatballs: so much for not overcrowding the pan! (like we've all been taught!) I was also hoping he'd find a way to use the fond from the frying in the sauce, but it would probably take away from the nice, clean taste of the sauce.
Anyone remember the movie Big Night? when the chef freaks out over someone ordering some meatballs to go with the raviolis? LOL now we know why!
Lastly, such a lovely, robust man but I couldn't help but keep noticing how small his head seemed for his body. jus' sayin'...
