Looking for a quick and delicious meal idea that’s ready in just 5 minutes? This cheesy BBQ chicken quesadilla has everything you need-melty mozzarella, sharp cheddar, tender chicken breast, and tangy BBQ sauce, all packed into a crispy tortilla. Whether you’re craving a speedy dinner, a satisfying snack, or something to impress at your next get-together, this recipe is a must-try.
Ingredients:
- 1 large tortilla
- 30g grated mozzarella cheese
- 30g grated cheddar cheese
- 100g cooked chicken breast
- 2 tbsp BBQ sauce
- 1/2 red onion
- 1 tbsp soured cream
- 1 tsp Blendship SPG seasoning
- 1 tsp Blendship All Purpose seasoning
- Fresh coriander
Instructions:
1. Chop the chicken breast into small chunks and finely dice the red onion.
2. In a frying pan, cook the onion and chicken in a little olive oil. Cook for 1 minutes.
3. Add the BBQ sauce and cook for 1 more minute.
4. Remove from the pan. Add the wrap into the pan, top with cheese on one half, then add the chicken and onion on top. Sprinkle a little more cheese and fold the wrap in half.
5. Toast on each side for 30secs - 1mim. Or until golden and crispy, and the cheese has melted.
6. Remove from the pan. Chop into 4 slices, top with soured and chopped fresh coriander. Serve and enjoy!

Seriously this looks amazing!! If only i could chop as fast as you! But I have started just chopping or slicing veggies when I get home from the store just to make my life easier (wish I would've thought of this when my son was in school)
