Recipe -
Tandoori Chicken -
1.2kg (2.6lbs) - Chicken Thigh, Boneless & Skinless
250g (8.8oz) - Plain Greek Yogurt
2 tsp (5g) - Garam Masala
2 1/2 tsp (7g) - Ground Cumin
1 tsp (2g) - Red Chilli Powder (Optional)
1 1/2 tsp (4g) - Sweet Paprika
1 1/2 tsp (3g) - Ground Turmeric
1 1/2 tsp (3g) - Ground Coriander
4 - Garlic Cloves, Minced
20g (0.7oz) - Ginger, Peeled & Minced
2 - Small Limes, Juiced (1 Large)
2 Tbsp (40ml) - Peanut or Vegetable Oil
Seasoning To Taste
Turmeric Rice -
1 Tbsp (14g) - Ghee or Clarified Butter
320g (11.2oz) - Basmati Rice, Washed
1 1/2 tsp (3g) - Ground Turmeric
640ml - Chicken Stock
3 - Bay Leaves (Optional)
Salt To Taste
Raita -
170g (6oz) - Plain Greek Yogurt
1/4 - Cucumber, Grated
3/4 tsp (2g) - Ground Cumin
3g (0.1oz) - Coriander (Cilantro), Roughly Chopped
3g (0.1oz) - Mint, Roughly Chopped
Seasoning To Taste
Chicken Cooking Methods -
Griddle Pan -
Heat the griddle over high heat, add in the chicken, and sear for 5-6 minutes on each side or until lightly charred. Remove & rest.
Flat Skillet -
Heat the skillet over high heat, and add in the peanut or vegetable oil instead of adding it to the chicken beforehand. Sear for 5-6 minutes or until golden. Remove & rest.
Oven -
Preheat oven to 200.c - 390.f. Line a baking tray with parchment paper. Lay out the marinated chicken, ensuring it's not overlapping, and bake for 16 minutes, flipping it halfway. Remove & rest.
Chicken Breast -
If you wish to use chicken breast, follow the same recipe but butterfly the chicken and sear for 3 1/2 minutes on each side.

also if you want authentic smokey flavour, you can torch up a piece of charcoal and put it in a small bowl in same container as your marinated chicken. before covering the chicken add few drops of any oil on the charcoal and cover it up…. it will give the chicken a really smokey flavour and you can oven/panfry/grill it later.

@@winxclubstellamusa use wood lump charcoal if possible by any will work. Let it heat on your stove then put on foil and add oil to hot coal then cover pot with lid

Excellent recipe.. thanks chef! For anyone feeling lazy like me, you can get a jar of ginger garlic paste from any asian shop / world food aisle (can be bought mixed or in separate jars). It won’t taste as good as fresh I guess but makes cooking a tad bit easier.

Another beautiful recipe, though if i may suggest something: i would choose the way to cook something based off of which way you think most viewers would do it, and in this case that would definitely not be on the bbq. Anyway i think most of us are capable enough to cook things with a written instruction aswel so its really no big deal, just a small detail! Thanks for another delicious meal prep Jack!

Excellent. If you want to bump up the protein and lower the carb count (no need, this is great), you can swap out the basmati for lentils and use the same flavor profile.

Really good recipe and techniques ( and glass storage containers) my only tip would be to add a little milk to the yoghurt dish as Greek yoghurt and all those things you added will make it quite thick and it should be a little runny

Lovely recipe. U can also use the same recipe and make wraps as I do. Spread the raita on the wrap add strips of cooked tandoori chicken and roll up the wrap. Good to go :)
