    Hey guys I just wanted to share this Tutorial on how to make my Sunday Dinner from start to finish with You guys. As always the steps are very easy to follow and you really don’t need any kitchen experience to be able to pull this off.     Ingredients Lists for All Recipes
    ---------------
    Oven Jerk Chicken
    ----------
    1 kg chicken drumsticks
    1 tbs mild jerk seasoning
    1 tbs green seasoning
    1 tsp browning
    1 tsp salt
    1 tsp black pepper
    1 tsp garlic powder
    1 tsp maggi all purpose seasoning
    Bake for 1hr 10 minutes on 200•C
    Baste every 30 minutes and also baste when it’s cooked after taking it out the oven
    For Sauce
    ------
    1/2 cup barbecue sauce
    1/2 ketchup
    1 tbsp honey
    1/4 cup water
    Simmer for 2 minutes on low it stirring all the way.
    Rice and Peas
    -------
    2 cups dried kidney beans (soaked for 2 hours)
    2 garlic cloves
    2 spring onions
    3 sprigs thyme
    1/2 can coconut milk
    1-2 tsp salt (salt to taste)
    2 1/2 cups rice - (to 3 cups water)
    1 tsp all purpose seasoning
    1 tsp brown sugar
    Coleslaw
    -----
    2 medium carrots
    1/4 medium cabbage
    1/2 tsp white sugar (or honey)
    1/2 tsp vinegar
    1/2-1 cup mayonnaise (or preference)
    Plantains
    ------
    *2 medium ripe plantains
    *Slice into three then each piece into half
    *Fry on low to medium heat for 2 minutes each side
    *remove from pot, press flat, then fry again for a further 1 minute on each side or till golden :)

      @@tabitha3316 Depends - can be a few minutes to overnight. I do mine for about 5/10 minutes max but I grew up seeing my mum do it overnight. I don't think it matters though. You can do lime or lemon juice (fresh or shop bought) with salt and/or vinegar.

    FINALLY! A woman that can REALLY cook! I can't begin to tell you how much I enjoyed this video. Many people have no idea how to properly wash chicken, beans etc. How many times have I seen dirty kitchens that have turned me off completely? I was thrilled that this was not the case. Your instructions were clear and concise and more importantly easy to follow. As a cook/baker I rate this video most highly. My Southern and Caribbean roots were properly represented here.     This definitely brings back memories of when my mom would take her machete, crack open the coconut, peel out the flesh, then make me grate it, while the peas soaking in the pot.

    my Cole slaw recipe, Apple cider vinegar, sugar or honey, celery seeds, miracle whip mayo, splash of pineapple juice, 2shakes of powdered garlic, I use shredded red cabbage, green cabbage, carrots & dried cranberries.
    I'm going to try using coconut creme & see if that works.

    My mom is from El Salvador and she cooks the same food! It’s crazy how it’s a different culture but the same food is cooked there as well.

      Are you of Garifuna descent. If you are its because they originally from St Vincent .Most Caribbean island cook the ssme.Plus alot of Caribbean migrated to South America over the years.I seen Jamaican food in Panama,Nicaragua and Costa Rica.

      I’m puertorican and yes we also cook the same food and it’s almost cooked the same exact way just not spicy. Puertoricans also have a mix of African too.

    Here in Ghana, we have a similar dish just like rice and peas
    We call it Waakye. It is a popular dish often eaten in the morning And the plaintain is called fried plaintain.

    Wow !! We in El Salvador 🇸🇻 and the Rest of Central America cook the same things : we are so familiar with Rice & Beans , plantains, coco Yam ( Malanga ) and Fried Cassava ( yuca ) , and Salvadoran coleslaw...we love Jamaican food 🥘 🇯🇲 ,

    I am Jamaican and this is a lovely variation of jerk and rice & peas. Your method of cooking plantain is very interesting, will give it a try. Been scratching my head over what to do for Xmas this year. As i live in UK i usually do roast chicken/turkey, roast potatoes, gravy etc. But this has given me a great idea....ill have a jamaican Xmas this time...i might even light the BBQ and end the chicken process on a BBQ to gv that smokey taste.the coleslaw lovely the only change is to cut up tiny pieces of spring onions and throw in there.       I haven’t tried this exact recipe but as a half Jamaican (half Ghanaian) woman, i can tell you her methods and recipes are 👌🏾👌🏾 if you cook it exactly as she instructed then your food will definitely bang. Also from 🇬🇧 💞

    This brings back memories of a typical Sunday. Get in all happy from Church, Nanny would step out of her Sunday best and straight into ‘house clothes’ and into the kitchen, while we’re all chilling in the front from with Grand Father watching God TV (yes we would have to watch Church services after coming from a 2 hour church service) preachers like the late Apostle R D Henton, Bishop G A Patterson and maybe Bishop TD Jakes. Then the call comes ringing from the Kitchen, “ Sunnay (Sunny, Jamaican accent) dinner! Then we’d all be called to collect our dinner. Prayer of Thanksgiving, then eat! Then relax for the evening, awaiting the evening church service. Happy Memories ❤️

    So I wound up making this plate last night and also your green seasoning. Instead of Cole slaw I made your collard greens. GIRL! You are the truth and my left overs right now is bomb.     I used to date a guy who's parents were from Jamaica and his Mom was THE best cook , she also made rice, peas(kidney beans) and chicken , my goodness this takes me back, it was SO delicious I may have to make this for myself now , I never knew how she made the rice and peas so tasty , now I do, thank you so much.

      I agree! I don't eat West Indian food for this reason. However, you can keep the chicken as a staple. Omit the plantain and rice, but keep the beans and have no more than a 1/3 cup on a cheat day. Make you're own bbq and ketchup sause or use the brands that don't have sugar and then you control that part yourself.
      ...but....this classic can still be enjoyed(as is on a cheat day) Fry in coconut oil. Eat on Sunday early evening or even for a late lunch. Then water only or dry fast on Monday and go OMAD on Tuesday. This should use up all that liver glycogen you just stored on Sunday.

    Terri-Ann THANK YOU THANK YOU! I am NO chef but after watching this I know that I am not as hopeless as I think. I am ok with plantain, jerk chicken I am okayish using natural ingredients not the one from the shop, learned from another youtuber. The rice and peas.....I have not yet reached perfection neither the coleslaw BUT after this video, I will try and aim for near perfection lol.
    Regardless of the island....it's all from ONE tree...that's why the taste/seasoning/food etc is so similar. We are all from the same tree whether Haiti, Brazil, Guyana, St Lucia, Trinidad, Cuba, Jamaica, El Salvador, Ghana....Africa........1 tree folks just different branches. My humble opinion anyway. I will have to subscribe if I want to be a better chef! Enjoy the cuisine.

    Hi Terri-Ann. For the plantain, try slicing it diagonally so you don't have to fry it twice, that way it stays flat. This is how we slice it here in Nigeria. PS: Looking to learn about Jamaican food and your content has been the best I've watched so far. Well done!
