    Jerk sauce - blend 4 cloves of garlic , bundle of thyme ,half onion , 3 spring onion , Quarter scotch bonnet , teaspoon mixed herbs , teaspoon black pepper whole , 2 tablespoon olive oil - blend for 5 mins
    Marinade - add 3 tablespoons of jerk sauce
    Optional teaspoon of ginger
    Teaspoon chicken seasoning
    Teaspoon all purpose seasoning
    Pinch of ground pepper
    Pinch of mixed herb seasoning
    Splash of olive oil
    Mix together
    Bake for 30 mins on gas 9
    After 30 mins
    Add sauce
    - mix ketchup
    Sweet chilli sauce
    And honey
    Brush over chicken then place back in over for 10 mins on medium heat

    This recipe makes the dish very accessible for those of us who don't have a outside grill. The oven method is the next best way. I've tried this and it's great really simple and tasty. I like it with rice &pease and green salad on Sundays. Thank you Chef Ricardo.😀

    He said comment if you LIKE the recipe. Not bad mouth him if you don't. I am Jamaican I do agree he should have called the recipe something like special jerk chicken etc. but this is his way to make jerk chicken, so if you don't like the recipe just find a more traditional recipe. I'm going to make this recipe today, and I'm sure my family will enjoy it. It might not be the traditional jerk chicken but I'm almost %100 it will taste super good.

      What!!! No I don't! Ugh. You say everyone has a right to what they feel... Well thats what I feel ok. It was pretty good! And just because you don't like something you can say you don't like it, but you don't have to go all out on why you don't like it.
      Anyway it seems like you agree with them, which is fine, but just don't go tell me that I don't have a right to what I think. Sorry if it sounded like I was trying to make others believe they have to like this, but I was just commenting that others still might enjoy this.
      I shouldn't have answered this comment. It probably sounds like I'm a mean person. But I was just commenting on what I thought and saying it was a little weird to have so many people saying how bad it is. I would stand up for any you-tuber in that situation. And just because someone stands up for somebody doesn't mean they "like" the person..
      Anyway. I'm kind of making this a big deal. The summary is I thought the food was pretty good, yeah it wasn't traditional Jamaican, but it was good.
      BTW did you make it? What did you think of the actual taste?
      Sorry I hope this didn't sound rude. Sometimes I take things to a whole other level. If you like the recipe enjoy it. If you don't thats ok. We all have our different tastes.

    I am glad you said 'oven jerk' to clarify. Jerk chicken is not just seasonings; it is a method of cooking which involves cooking over an open flame using pimento wood. Otherwise it is just baked chicken with jerk sauce. There are many Jamaicans who do not know the right way to make jerk.

    IM not even Jamaican and I understand the twist in this recipe. because jerk seasoning can be very spicy, relax people He's a chef. He knows what He's doing, everyone doesn't cook the same IM sure in Jamaica or your Food would be Boring. Amen.

    Some ppl just negative suh and never like to learn new things can image if man did not invent and come up with new tings everyday we would still live in stone age doing the same old tings day by day....there is the old fashion jerk chicken recipe which is original but there is also new ways of adding to all old recipes to make it fun and new if u dont like the new ideas dont worry about it move on instead of talking shit about the chef thats why he is called a chef he is an artist in the kitchen his job is to create new ideas...not cook say old recipe that most jamaican already kno how to cook already smh

      Jan. Ni: I used to waste lots of hot peppers. I tried freezing them and now they go directly from the supermarket to the freezer and they come like rocks but they are very gentle when I chop them, the same flavor as fresh

      It takes away the smell and it kills any germs. Washing any meat or chicken with water, salt, lemon and vinegar is a must before cooking.

      basil, marjoram, oregano and thyme is generally the herbs in Mixed herbs which is sold in a jar as "Mixed herbs"

      Most jamaican like myself always like to take the skin off of chicken, mainly because of fat and we always wash our meat, rice etc before cooking, that's all Caribbean people.. you should try cooking jerk chicken trust me it's lovely.

      Yes in Jamaica and mexico or those sections of american grocery stores look for bags in the seasoning sections where you ll get vague mixed herbs. He does a good job but a little bit of adjustment on the specifics would be appreciated. He keeps cooking his chicken recipes for 30 min. So I'm expecting at 450 degrees.
