I paired this with a salad of shaved fennel and apples with sticks of Manchengo cheese and toasted walnuts with a shallot sherry vinegarette it was awesome with the lentil salad.

And i've always cooked mine regular lentils, (not the split red), into a soup with, garlic, onions, bellpeppers, carrots celery, cilantro or parsley, sausage and spices. The split red lentils cook so quickly in about 7 minutes. I think that's what this recipe calls for.
It reminds me of what we call cowboy caviar, here in the South central USA. Only that is made with black beans instead of lentils. People often use this type of thing as a dip on some good organic corn chips. Yummy.

Ciao, this looks very delicious, gracias :) i don't know, maybe i commented the following again, but i have a recipe from my grandfather in southern italy, total easy to do, personally i love to dip White bread into the olive oil..so here we go: let's start with cooking some potatoes and cut them, put them in a bowl, cut some paprika into stripes, fry them in olive oil and put them in the bowl too.. cut some tomatoes and garlic and put them together with some olive oil and salt into the bowl, mix all together and have a good appetite.. you can eat some white bread with it..
Canned lentils aren't exactly commonplace where I live, but we have dried lentils coming out the ears. Can we just cook and rinse the dried lentils instead?
Will need to make some substitutions (for raw garlic/ bell peppers), but this looks interesting. Might experiment with black-eyed peas for an earthy flavor.
Am I the only one who keeps the water tinned beans, peas and lentils come in, especially if I'm cooking with them but in the case of beans also if I eat them cold. It's starchy and delicious and it replaces an oily calorific vinaigrette. For example kidney beans in their water + salt & vinegar + sliced onions + microwave garlic = deliciously healthy and slimming
