      Leif Carney no, I did just to set the chocolate. But after it sets, it is fine stored room temp.

    Can't tell you how nice it is to get a recipe without twenty minutes of talking when I really just want the quick recipe. I've been making my chocolates for a while now and although I enjoy them in this hard form sometimes I add a bit of cream at the end of mixing to get a truffle like consistency. After pouring them in mold I put them in the freezer, later unmolding and putting them back into the freezer for an ice cream like cold treat or letting them warm for a truffle texture.

    Word to the wise, wash that silicone when you get it.
    A releasing agent is used in the factory in order to pop them out of the cast they are poured into.
    Not washing them contaminates whatever you are cooking in it with that releasing agent.

    Thanks! I make Keto chocolate often, but never tempering it. I just usually keep in the fridge till I want to eat it. This will be helpful! I'm currently on Round 2 of Keto (I did Round 1 in 2020 and dropped 70 lbs). I began Round 2 on May 9th, 2023 and it August 15th and I've dropped 22 lbs as of today. I have way more energy and my mood is stable.

    I've been making your chocolate, love it. I've been on a Ketogenic diet with Intermittent Fasting for 3 months. I dropped 15 lbs, all my blood test results reversed. My Hemoglobin A1C dropped from 11 to 7. My fatty liver functions dropped from 112 down to 60 and my LDL cholesterol is even lower. My daily average fasting blood glucose is around 93, when it used to be up around 180. Thanks and keep the recipes coming.

    Simply heating the cocoa butter to a certain temperature won't temper the chocolate. It either needs to be quickly cooled while maintaining a high level of agitation, OR an easier method is to stir in a small amount of solid chocolate (tempered or untempered) as it's cooling. This introduces "seed crystals" to the mix which encourage formation of more beta crystals among the cocoa butter fats.

    I made some keto chocolate bars for myself and they are delicious. I used:
    1/2 cup + 1/4 cup - Cacao butter
    1/2 cup + 1/8 cup - Cacao powder
    3 Tbsp - Swerve
    1 tsp - Orange extract
    a pinch of salt

    This turned out so good . I used stevia in powder form so it didn’t melt completely but did not taste bad. The cacao butter just melted in the mouth

    Dark chocolate & Raspberry work well too. Another combo I like is dark cherry Mio drops in the dark chocolate and another is PB Fit

      @@TheKetoChef You should have made it clear to viewers that the bottom of the glass bowl should NOT touch the boiling water in the pan.

      You can use a metal bowl, most chefs do. You just have to really watch it carefully as it can scorch much easier. Tempering is taking it up to a certain temp then dropping to a certain temp depending on what kind of chocolate you’re making. For anyone melting chocolate for say chocolate covered strawberries melt the chocolate then throw in a small chuck and stir.once it’s melted you an start dipping.

      Bremusa I feel you. I take shortcuts ALL the time and you can’t do that with chocolate. Get a good thermometer and thick glass bowl. Keep it within temp and your Gucci

      I add soy isolate powder to add protein on it, peanut butter powder works too. The taste doesn't even change it's still chocolate, but now with added protein and B vitamins.

      @@chrismccaffrey8256 males need estrogen not near as much as women but if their levels are low it can cause health issues for both sexes. and the phytoestrogen in soy doesn’t actually increase the female sex hormone in males, it’s incredibly nutritious too.

    I had a go with this today, I found I needed to sieve the Cacao Powder to knock any lumps out before adding. The big mistake I made was not grinding the sweetener (UK - Truvia) granules enough so although the chocolate is smooth, there is some grittiness from the sweetener. I think I may get some liquid Stevia to use instead. I added some dairy to a few samples (only had thick Greek yogurt around) which didn't affect it setting at all so I may experiment with some heavy cream to see how far I can push it towards milk chocolate and still have a set texture. Useful video as a starter!

      A sample made with some smooth added wholemeal peanut butter is really good, still set fine but not as dark tasting, almost a bit 'creamy' and very tasty.

      @@TheKetoChef I don't have insta, but I'm thinking kind of tropical like a coconut macadamia. I also have an idea to cook down some raspberries and freeze them in a smaller mold, then drop them in the center for like a berry filled chocolate, or maybe playing around with something like a sugar-free hazelnut marzipan. I'm also exited to try the coffee and orange chili ones you did. Not sure what will work but I'll let you know when I finally get this cocoa butter in the mail!

    You can make a really nice chocolate very quickly by melting a cup of coconut oil in the microwave for 20 or 30 seconds or so then add 2 or 3 tablespoons of cocoa powder or more depending on how dark you want your chocolate and as much powdered erythritol as you like for your taste. Pour into moulds.That’s it, simple. We often added shredded coconut or peanuts, almonds or chopped macadamias. Delicious, simple and keto. Store in the fridge or freezer.

    Just made these, they were good, but I think I will try all liquid Sweetner next time, the powdered sweetener does leave a slight gritty texture when eating, thanx for taking the time for the video.

      You could take Allulose or Monkfruit and grind it into confectionery powder, that will get rid of the gritty texture, and I like the taste better than Erythritol, which has that cool taste (like eating a Certz), not really sweet.

    I followed the recipe exactly but wanted it slightly lighter so I added double cream to make it more of a ganache but was very, very happy with the results.
    Can I please ask that you look up how to say the French words. It’s not that important but it sounds a little better.

    To melt cacao butter or coconut butter - use a dehydrator or yogurt maker - lot easier than ban marie & thermometer.

    I made my own chocolate with this recipe and made peanut butter cups out of it and they came out great. I feel like I had to use too much erythritol to make it tolerable though. Thankfully, just one pb cup is satisfying.

    I would use sucralose, Walmart's knock-off of Splenda. It doesn't trigger a reaction in diabetics so I consider it to be low-carb/keto. It has zero calories and tastes much better than any other sugar substitute (being cracked off of the actual sugar molecule.

    One of the things that makes keto effective for some people is the lack of food variety. Bacon and fatty foods sure sound good but when you eat them day in and out you tend to lose your appetite for them and eat less and less hence more weight loss. When you start adding in all these keto fun desserts you reduce the effectiveness of keto as you cause people to eat more.

    i already have enough issues with keeping under my calory daily limit, so as much as I'd like to try it, I don't have space for it in my menu :P
