Cinnamon Cheesecake Coffee Cake

  • This low carb coffee cake is simple to make in spite of the need for two mixing bowls. There’s a layer of cheesecake hidden between two layers of cake. The pecan, cinnamon, sweetener topping gives a great texture and crunch. Be sure to put the pecans on top first so that they are less likely to burn. It the top gets too dark, cover loosely with a piece of foil. Remember that the coffeecake will continue to bake a bit as it cools, so if the center is just a bit jiggly, it’s probably done.
    This coffee cake is best when cooled to room temperature and can be rewarmed or enjoyed cold with a hot coffee!
    Cinnamon Cheesecake Coffee Cake
    Makes 12 servings
    1 ¾ cups almond flour
    2 tablespoons coconut flour or 1/3 cup oat fiber
    ¼ cup sweetener
    1 teaspoon baking powder
    1 teaspoon cinnamon
    1/4 teaspoon salt
    6 tablespoons unsalted butter, melted
    3 large eggs
    1 teaspoon vanilla extract
    ½ teaspoon maple extract (optional)
    Filling
    12 ounces cream cheese, room temperature
    ½ cup sweetener
    1 large egg
    2 teaspoons vanilla extract
    Topping
    ¼ cup chopped pecans (optional)
    1 scant tablespoon ground cinnamon
    ¼ cup sweetener
    3 tablespoons melted butter
    ½ teaspoon maple extract (optional)
    Preheat oven to 375 degrees. Grease an 8x8 pan.
    Whisk almond flour, coconut flour or oat fiber, sweetener, baking powder, cinnamon, and salt in a large bowl. Use a hand mixer to beat in the melted butter, eggs, and extracts. Set the cake batter aside.
    To prepare the filling, use a hand mixer to whip the cream cheese and sweetener. When it is smooth and creamy, add the egg and vanilla and whip lightly until just combined. Do not over mix.
    Pour half the cake batter into greased baking dish and use a spatula to smooth it into a layer. Top with dollops of the cream cheese mixture, using a spatula to gently spread the filling as evenly as possible.
    Dollop the remaining cake layer over the top of the cream cheese layer. Smooth the top layer over the cream cheese until the cheesecake layer is mostly covered.
    Sprinkle the pecans, cinnamon, and sweetener over the entire dish. Mix the maple extract, if using, with the melted butter and pour over the top of the coffee cake making sure to coat as much of the surface as possible.
    Bake for 45-50 minutes or until the top is deep golden brown and just set. The coffeecake may still be slightly jiggly in the center, but will firm up as it cools. Let cool at least 15-20 minutes before serving.

    Kristi!! Thank you!! Keep’em comin please!! You are my inspiration. On 10/1/2019 I went keto and found you. I was type 2 diabetic and within 2 months was non diabetic. I lost 30 lbs but find it is a challenge to stay keto but always stay low carb. Thanks again for all you do!!

    Totally making this! I’ll mix the cinnamon and sweetener for the topping together (like for old style cinnamon toast) so the cinnamon is easier to distribute. This recipe looks like another Kristie winner! ❤️

    Kristie, I was so excited to see your new video post! I ordered my maple extract and plan to make it this coming week. Coffee cake and cheesecake? My favorite! I was eating Keto and then thought I would be fine eating carbs for a while but it didn’t work out so well. Between meds that cause weight gain and eating carbs, I gained too much this summer and cannot stand to see myself in photos. Also, my A1c went back up into the diabetic range so here I am, back eating Keto. Thankfully, I have your cookbooks and have marked my favorites so it doesn’t seem so hard this time. Even while eating carbs for a while, our family kept cooking our favorite ‘Kristie Recipes’ like Crack Slaw. Thank you for bringing so much to the Keto community!

    I loved seeing Kristen before and brought her cooking books and I lost weight but now I'm into a cleaner keto that uses a more healthier oils and
    we limit the sweets.
    Will eventually try to make this cake after I put it in carb manager, and cut it into 15-16
    slices

    This looks awesome, but lower the carb count by using "buttermilk" by subbing out the butter (use heavy cream and lemon juice, like in her pancakes) and also, cut back on the almond flour by subbing in some vanilla whey protein. Tastes exactly the same but the carbs are much lower and the protein is much higher. Just ideas to help the Keto group. I'm sure there are many other ways to less the carbs in the recipe, the cream cheese is a lot.

    You can chill the pan after you put in the cheesecake layer so it's easier to put on the top layer of cake.

      I’m going to HAVE to portion it and freeze it, just to help maintain self control. I imagine it will do just fine in the freezer for reasons stated in the above reply.

      slynnish Yes THAT is what I took away from this video. She has a channel that represents health and WEIGHT LOSS. So of course she needs to be transparent with the viewers and address the weight gain. I’m not the only one who feels this way. Look through the comments!

    But i have a question why do u use unsalted butter and add salt, why don't you use salted butter? Then you don't have to you use extra salt.

    I watched 5 years ago and just started again. Disappointed to see weight gain. I am not criticizing, just trying to understand if keto the whole time or if went off keto then returned. Heart issues and I can't afford to gain any more. My heart goes out to you

      Normally erithritol, xylitol, etc. I assume that they don't name it to give viewers the choice of which low carb sweetener to use.

      I'm keto for 7 years. It's worth it just for how much better I feel. When I deviate from plan, I'm stiff and achy again. But we are only human and sometimes have a hard time keeping on track. You look beautiful Kristi!!! Glad to see you back here helping us and being real!!! xoxo

      @@carolschedler3832 yes indeed. I can tell the next day when I deviate from keto. MY shoulder hurts, my eyes are puffy....i feel overall disgusting. This pandemic has been a M*F*er....I'll be glad when some normalcy returns!
