How to Make a Latte Art Heart | Perfect Coffee

    My name is Mike Jones, and I'm a barista at Third Rail Coffee right by Washington Square Park in New York City. I'm going to teach you some basic coffee-making skills.
    Alright, I'm going to talk to you about latte art. Latte art is kind of the exciting part of making espresso drink. It's what gets a lot of people really pumped about making coffee. It's not necessarily a representation of a quality beverage, but it definitely shows that the person who made it cared-it's the mark of a professional, similar to plating with food. Now, the first thing you need is a good shot of espresso. You need the milk steamed properly with good micro foam, and then you have to pour, keeping a few things in mind. This is velocity, so basically how fast you're pouring. And then where the milk is going in the cup, and where it's flowing outwards. It's kind of something you have to feel out and you really have to practice it many many times to get down. So we're going to start off by doing the heart. This is sort of the basic latte art design and then the other one would be a rosetta which is a fern, and then a tulip. So heart, rosetta, tulip are the three basic designs you can do with latte art. So I'm going to start off making the heart, pulling a shot, steaming the milk and then pouring. Alright, so when you're starting to pour latte art, the first thing you want to do is pour from a greater distance up, or from a greater height so that way the milk is actually going to go underneath the espresso and then as you get closer and start pouring faster, the foam rises to the top and this is when you start controlling it. So to make the heart, you're basically just going to be pouring into the center until you see it's about three-quarters full. So I'm pouring into the center there. Then as I get closer, the foam will rise to the top and you just kind of shake it, and then you lift it up at the end to suck it in and cut through. So again, pouring to the center, getting close when it's three-quarters full, pulling up to suck in and then cutting through. That's a heart.

      @@TheGunmanChannel latte art and making quality coffee takes longer than "a few minutes" to figure out. Now most people have their idea of what is good coffee so it's partially a relative term.
      But when you are talking professional barista quality coffee that is a skill take takes time to master and understand. Just like a professional wine or beer maker. It's not something that just happens overnight although the process can be learned rather quickly.

      I’ve been practicing at my workplace for a while! I just only got the technique and even then I still can’t make good looking designs (I’m getting better though) The milk has to be a very specific level of foamy and everything has to be a specific type of way for it to work. It’s super tricky but I find it super fun.

    I'm a barista of mid-level ability and these videos have gone a long way to strengthening my fundamentals while very clearly explaining some of the more advanced techniques. These are things that surprisingly few coffee houses are able to train employees on, and it falls on the barista to train themselves on latte art and sometimes even basic foaming. I would be a much less skilled barista without these fantastic tutorials.

    This is a minor point but as I've struggled to do this for some time now and tonight had a breakthrough in understanding I thought I should mention this: the milk isn't "rising to the top." What happens is as you lower pitcher of milk close to coffee surface the milk foam stays on the top as gravity of a higher fall isn't sending it down. Important distinction. In a way you are "placing" the foam on the top gently to make the design.

    I hate my job as a barista, but seriously gonna try this tomorrow at work!
    I applaud those who have made being a barista their career. Idk how you do it! Definitely the hardest and most demanding job I have ever had!
    Most days I want to throw coffee at the customers' faces.
    At least there will be a heart in their lattes now. So if I ever do it, it'll be with love! 😂

      4 ounce of milk can be steamed with a 10 liter boiler and a 4 hole steam wand in 9 seconds

    This is great and I do this when I make cappuccinos and flat whites etc but where I am (the north of England) a latte is served in a tall glass with a handle, and it's milk poured in first with about a cm/2 cm of microfoam on top then you pour in the shot so it floats, but is this a latte in America? Someone please explain, it's just this looks like a flat white to me

      Eleanor Black A latte is typically a shot with steamed milk poured on top, a cappucino is the same, just with more foam. Some places seem to pour it into a tall glass, it's just a different way of doing the same thing. A flat white is similar but the milk is supposed to be less foamy and the coffee has less milk in it.

      I work at Starbucks and what is shown in this video is a flat white (at least in Starbucks terms). What you described with the shots being poured last is a macchiato (or again, at least that's what it is to us).

      Update! As a change in steaming routines, Starbucks has switched to a 1-3 second aeration, into auto-steam, as opposed to the old method of 3-5 seconds. And yes, like a flat white lol

      Latte and cappuccino are different in every country.We all have a different version of these coffee ^.^ if you go in italy a latte is completly different from our triditionnal latte !

    Do you get much of a head of froth at the top? I have to make these into glass mugs and people get extremely irritable if there's more than about 1cm of froth on top. Am pretty new to Barista work so sorry if this sounds ignorant :/

      You shouldn't get a head at all really. The microfoam should be equal throughout.

      On Lattes there should be only about 1cm of the 'head, and this is what distinguishes it from a flat white.

    THEE best comment ive ever read on UA-cam, im a barista myself and I totally get what your saying. We have regulars come in and they all love me and my colleges for how we talk to them make there coffees the way they prefer and they always leave our counter with a smile and then when they have drunk up they leave saying bye and we see them again always. I love being a barista im proud of my team and what I do and I just wanna learn more and more like you said. Peace to you sir you :) :D
