    Pie season is upon us and you need to know how to make a buttery flaky keto pie crust. This recipe for keto pie crust is the only recipe you need. And I show you how to make a keto apple pie without using apples. Instead you can use peeled and sliced zucchini or chayote squash. Both have similar textures and appearance to apples once sliced and they have a neutral flavor so we can turn them into "apples" with some spices and apple flavoring extract.

    Serves: 12
    Flaky Keto Pie Crust
    2 c almond flour
    6 tablespoons coconut flour
    2 t xanthan gum
    1 t salt
    1 c unsalted butter, chilled and cubed
    2 ounces cream cheese, softened
    2 eggs
    1 tablespoon rice vinegar or apple cider vinegar
    egg wash (1 egg beaten + 1 T water)
    Apple Pie Filling
    2 tablespoons butter
    2 pounds zucchini or chayote, peeled and diced
    3/4 c sugar free sweetener
    1/2 t ground cinnamon
    1/4 t allspice
    1/4 t salt
    1 t arrowroot powder
    1/2 t xanthan gum
    1 tablespoon apple cider vinegar
    2 dropperfuls apple flavoring drops or 1 teaspoon apple extract
    1️⃣ 00:57 - To a food processor, add almond flour, coconut flour, xanthan gum and salt. Give a quick pulse to combine. Add chilled cubed butter and cream cheese. For the flakiest low carb pie crust, freeze the butter for 30 minutes before use. Pulse until coarse crumbles form.
    2️⃣ 02:06 - Add egg and vinegar to crumbled pie dough. Pulse until combined and a dough ball forms. Don't over mix or the butter may melt. Divide dough into two balls (one ball using 2/3 of the dough for the bottom layer, one ball using 1/3 the dough for the top. Wrap pie crust dough in plastic wrap, flatten into a disc shape and refrigerate for one hour or freeze for 10 minutes. This helps to keep the butter flecks from melting while we roll out the pie dough.
    3️⃣ 03:37 - Place the larger chilled pie dough in between two sheets of parchment paper and roll out dough to a flat circle. Start rolling from the center and work your way out in all directions. If the parchment paper crumbles beneath the dough, either carefully stretch the paper out or flip the parchment paper sandwich and stretch out the paper. Continue rolling until dough is 1/8 to 1/4 inch thick and your circle is at least an inch wider on all edges than the pie pan you want to use. Add pie dough to your pie plate and flute the edges. Place pie crust in freezer or refrigerator while you work on the keto apple pie filling.
    4️⃣ 04:52 - To a large skillet over medium-high heat, add butter and zucchini or chayote slices.
    5️⃣ 05:13 - Sprinkle in sugar free sweetener, cinnamon, allspice and salt. Continue to cook until squash has softened (10-15 minutes depending on the thickness of your squash).
    6️⃣ 05:33 - Sprinkle in arrowroot powder and xanthan gum. Cook for 2-3 minutes while stirring. Remove from heat. Stir in apple cider vinegar (or lemon juice) and apple flavoring. Set aside and let cool
    7️⃣ 06:25 - Add the keto apple pie filling to your pie pan on top of the bottom crust. Roll out the second layer of pie crust similar to step 3. Place on top of pie filling or cut out lattice strips and drape on top. Brush top crust with egg wash. If covering pie with whole layer of pie crust, cut slits in the top crust to allow for steam to vent. Bake in a 350 degree oven for 30 to 35 minutes or until crust is golden brown.

    You should talk about the “pro tip” of using a moist paper towel under your parchment paper to stop it from sliding all around the counter. You can use the same method with a cutting board. Looks delicious!

    If you can find them (hard to find in my corner of Canada) Jicama might also make a great apple substitute. Crisp and tart/sweet like an apple but only around 22 net carbs/lb. Chayote squash is around 14 net carbs/lb for comparison.

      The only problem is that jicama never gets soft. I love them and they actually taste a little bit like an apple, but all the cooking in the world and they still remain slightly crunchy.

    Hi there is a fruit call papaya, I’m Puerto Rican and we make it green papaya and it tastes exactly like apples I thought I mention it since it tastes same not the ripe one green one we cook it and add same ingredients as if you were making apple pie like in your video until all water is absorb since is like the chayote has a lots of water I hope you try !     I wanted so much for this pie crust to be as easy as you made it look. Oh, yes, you can roll it out, but good luck getting it off the parchment! I chilled it multiple times trying to make it work. I ended up scraping it off and putting it into the pan like a patchwork quilt. I will try it one more time with a little more of each of the flours. UPDATE: I baked the crust, and it baked up pretty well. For those who wonder how it tastes, it doesn't taste like non-keto pie crust, and there is a strong scent of creamed cheese, but it is crispy enough that it is adequate as a vehicle to hold a tasty filling.

    Gr8 video. Here in Australia commercial apple pies, have mixture of apples and choko. My mum had a choko vine, when I was a kid. It grow wild with little care. The choko take on the flavour of what you cook it with. Being one of six kids. My mum use to add it to mash potatoes and Sunday roast.

    Somewhere I have a 100 year-old recipe for pie crust and it calls for similar ingredients, egg, vinegar, etc, so this will work great, thanks so much. (It did call for lard, so appreciate your recipe even more.)

    I decided to try this. It was awesome. My husband loved it too. Pastry was great. The Apple flavour was great. I might use a tiny bit less erythritol next time as we don’t mind things a little less sweet. Still can’t believe the chayote squash. Never tried them before. Thanks so much.

    Thank you for this recipe, I did it and it has a good taste! the only downside is that the crust didn't get crispy enough :( I noticed when making it that it was a little too moist, so I had to add more flour... next time I will be adding only one egg instead of two... or maybe not so much apple cider vinegar...

    Something that would take this pie up a notch (as if it really needs it...I'm sure it's spectacular as is) is apple PIE extract instead of apple extract in the filling. Maybe even in the crust! Yum!!

    FYI: I made this pie twice over the weekend...the 1st time it tasted disgusting so I thought it was because I used the wrong sugar free sweetener (I used plain erythritol) b/c the instructions didn't specify which one so I just took a shot...the 2nd one I made tasted 90% better...I suggest using Swerve sweetener instead but I figured out that the problem is the apple extract I used (One On One Fuji Apple) it made the filling very bitter...I believe they have other apple flavors so I will definitely try it again b/c other than that, it came out great! Thanks so much Annie for the amazing recipes! I can't wait to try this again 😋

      I've used Olive Nation's apple extract in my "applesauce" muffins, and along with apple pie spice, you'd never know there was no actual applesauce in them. Not bitter at all. Not all extracts are created equal.

      Steep a couple of apple & cinnamon flavored tea bags and then add that steeped tea to the pan when cooking the chayote squash with the sugar, butter, etc. I heard this was the best way to make the apple substitute taste like apples.

    What would you recommend to make more liquid in the pie? I like pies that have lots of thick fruit (I'm going to call it sauce) filling.

      Cut up some extra filling (squash and zucchini in this case), puree and add spices and thickener.

      Somewhere someone said speak the zucchini in apple cinnamon tea so I used that as part of the water. I only had two zucchini so I tried to cook down the liquid. I still have too much thick sauce but it's so cooked down it's now chunky applesauce. Still tastes great 😃

      You could try tapioca flour. It’s pretty much everywhere and has about the same carbs as arrowroot (actually a few less) and you use measure for measure.

    Saute and zuchini are considered vegetables where I came from. And they dont have near the flavor of real apples, they taste just like vegetables. I will make this with real apples. Little cheat is fine. I would sooner enjoy it. All I care sbout is less carbs. The rest looks delicious so THANK YOU for this recipe.

    Just curious as to what size pie plate are you using? Is it the standard 9"? I would think the size of the dish would be dependent on how much dough you have.

    I did not have high hopes for this recipe, I mean how can you make squash taste like apples. I went ahead and tried it just to see and was VERY pleasantly surprised at how good it was. Thank you. I used the chayote squash and thought the texture of the squash was very similar to apple, not sure how the zucchini would hold up in the heat texture-wise but the chayote was great. When I peeled it, it was like peeling an apple. I also made it a bit sweeter used Allulose and Sucrin gold for the 3/4c sugar sub plus added 20 drops of stevia. To my taste it could have been even a little sweeter; perhaps more stevia sucralose. Anyway it was a very good recipe.

    Did anyone think this pastry is way too salty? I used 1 tsp of table salt. I subsequently checked other recipes, and if I make it again, I would halve the salt.

      Lol! You can use a a pastry blender or cut the butter with a fork. It takes longer and you will have to make sure you butter is very cold to keep it from melting into the crust but it will work. 😄

    I’m sure that the moldable magic of the crust is tied to the xanthum gum. Unfortunately, I am pretty sure xanthum gum gives me digestion issues and discomfort. I don’t suppose the is a good sub for it?

      I usually sub it with a bit of chia seeds, flax and psyllium husk. Seems to work good for me. Haven't tried this recipe yet but looking forward to it.

      Guar gum. Use 2:1 guar gum/xanthan gum when substituting. Gelating might also work but not sure of the ratios.

    I made this exactly as she says. All the same measurements and cooking time. But the Chayote came out as dense as regular apples. They did not get soft like a regular apple would after being in the oven. The chayote was crunchy. Did I do something wrong?

      That's a bummer! You want to cook the chayote until it's softened. It depends on the thickness too so it may take longer than stated.

    Hi Annie! This looks fantastic, but I have to tell you that I almost missed it. I left it sitting in my Notifications, sort of wondering if you’d lost your mind, and went in this morning thinking I’d delete it. I knew I couldn’t eat apples with all their sugar, so why even look, right? But then I got curious. I know I’ve always shared the same idea if keto-acceptable foods, so I just had to see what you did here.
    I’m so glad I stopped to realize you wouldn’t use regular apples and had a look at this recipe! Maybe you could consider putting quotes around “Apple Pie” or even just “Apple” in the title? I wonder how many passed by your wonderful recipe thinking you’d lost it with this one?! 😉
    Can’t wait to try it!
    ETA: I really should have known better! This is pretty much the crust from your single serving pumpkin pie last Thanksgiving and you used zucchini in your Apple Fritter recipe from around the same time. I never made your fritters, but the pumpkin pie was delish and MADE my T-day!

    The now endangered almonds. Can't afford that stuff these days . We need to find those last two almond trees and steal them so we can make more trees to bring that price way down . Looks good though .

    I would just use real green apples.. an apple won’t spike your sugar. It has enough fiber in it to be healthy.
