  • Hi Food Tubers! It’s time to go a little nutty with this festive Florentine recipe. Crispy, gooey and chocolatey, these biscuits are packed with almonds, cranberries and stem ginger.     Oh my goooooodness!!!!! I _love_ these, I usually have the ones from M&S but I've never made my own. Off to my cousins party this weekend and I was going to make peanut butter no bakes but I think i'll try these instead.

    Sharon ... u saved me for lifetime... everywhere the florentine recipes are so complicated... i dont understnd how do u bake them ... they always burn... but hr recipe super easy... yummy tasty.... n no mess n happy heart... u have no idea.... it has helped me so much for my business.... n i have happy clients... love u so much!...Just please let me know...how long do they stay good at toom temperature as m planning to send it to different places

    I often make a very similar chocolate florentine (or no-bake biscuit or müsli-bar or whatever you want to call it):
    I also use almonds (and hasel) and dried fruit, but I don't make it with sugar and butter. I heat honey with spices (great now around Christmas with some star anis, cinnamon, ginger, and so on). Works brilliant.
    And I totally support you on the dark chocolate - balances the sweetness. Wonderful!

    These worked out GREAT. Such a hit. Slightly tricky working with the hot clumps in the end - getting them on the sheet and flattening them out in time. But I guess that's practice. Thank you.

      Sharon Hearne-Smith In this generation of rude comments suggesting only a person's attractiveness matters I wanted to drop a reminder that not everyone is broken :)
      My only concern with the recipe is coming up with creme fraiche in Canada, worried about using sour cream or yoghurt as they reportedly separate at high temperature. Will report back!

    i love this! was thinking of using coconut oil instead of butter for non-dairy... maybe with a bit of vegan buttery margarine and soaked ground cashew cultured yogurt for the creme fraiche.

    Hi Sharon, I hope you still read this after almost 3 years. Do I have to use stem ginger or can I use fresh ginger instead? Another question, I want to toast the almond flakes in a dry pan before they go into the sugar & cream mixture, since I think it brings out their flavor better. Is this ok or might they burn when added to the mixture? Thanks in advance, Joerg.

    Hi, for how long do they stay crispy if I leave them out on a platter ? Since caramel tends to absorb a lot a moisture from the air.

      yes you are right - I would say they will happily sit out for up to a couple of hours - mind you they will no doubt all have disappeared by this time! They can be prepared a few days in advance - obviously be sure to keep them layered between sheets of parchment paper in an airtight container in the fridge. thanks for watching & happy christmas xx

    Just made these, but they were hardening on the spoons! And couldn’t get them into nice round shapes. Probably not working quick enough. They taste good though!

    What's the replacement of brown sugar. Corn syrup is most important for Florentine As I saw other receipe. So please suggest wht to use

    I tried to make Florentines today. My sugar got very dark and there was a little smoke in the kitchen, but that did not stop me. And another thing, I can taste soda, and chocolate melts in my hands when I hold a cookie. Can you help with any of my troubles? Was hoping to make cool presents for new year. Thank you!

      I am not a big fan of candied fruits myself, I suggest to substitute them with more almond flakes, other nuts and / or sunflower seeds and / or pumpkin seeds, whatever you like or whatever is easier to find where you live.

    hi, yes these are delicious, I used HALF the sugar you suggested, and still very sweet. I replaced the mixed peel with lemon orange zest, and some small chocolate nibs. will make another batch with organic coconut!!

    I make florentines every Christmas time and I also have my own fruit cake recipe for cookies fruitcake cookies. That would have been easier to say! What's with the candied fruits in florentines? They are a nut toffee cookie with chocolate. I saw an Australian recipe and I've seen you a recipe and they both used all sorts of candied fruit and raisins and what not. Those don't go and Florentine cookies just whatever type of not you choose and the original is almond.

    For anyone who wants to make their lives easier: don't smear the chocolate on or dunk the Florentines into it, just drizzle quite a bit of melted chocolate on top of them! It really makes life so much easier 🙃

    Lovely tutorial and the presentation ideas at the end were great. I honestly freaked out a bit during the caramel making part! I may try this but the sugar part makes me nervous. Your hair stylist does a great job, your look is stunning. Merry Christmas to you and those you love!

      Hey Mike thank you so much - you really shouldn't worry about the sugar bit - besides just being careful as it gets so hot just be sure to keep it on a high heat and keep stirring - it will look like a mess and as if it has gone wrong at times but it will come good, promise…just stick with it - let me know how you get on! thanks for the beehive love - my stylist did a cute hair bow on the back too - she's great and we have lots of fun with it :) thanks for the christmas wishes and best wishes to you too xx

    This Looks gorgeous! 😍However, i tried it today and failed 😭😭😭 the Sugar turned Really Dark and the mixture tastes burnt 😥what did i do wrong? I did keep it on a high heat but i stirred it all the Time...

      Oh no! Sounds like you just cooked it for a bit too long perhaps? Add the bits & bobs once the sugar mixture is a rich brown colour & smooth.... Hope you give it another try... Good luck x

    did u make the florentine from castor sugar and brown sugar ? coz i didnt see u put florentine powder on ur dough

      Nunu Ahmad: She used equal parts of caster and brown sugar. Florentine powder is not part of her recipe.

    Why need to add Crème fraîche?

    The first time I had Florentines was when I was in Paris. It was amazing! Now I can make it. But here we can't get Creme Fraiche. Is there a substitute? Or is it like a must ingredient?

      I'd say use a little bit of cream instead, or perhaps cream mixed with plain yoghurt.

    hi I try d recipe is very nice but just wonder how to clean burn sugar on d pan it tend to stick on it.

      Add water to the pan and turn on the heat. As the water heats up, stir a bit, the sugar will dissolve, and you can pour it into the sink or into the toilet. But I guess since you asked a year ago, someone else might have told you in the meantime.

    This looked great but was the amount of butter wrong? Mine were too thick & hard. Guessing it should have been 150 not 50g to go with a total of 200g sugar?!!

      My book is #NoBakeBaking (check it out here amzn.to/1saHma5) - so while florentines are traditionally baked in the oven Ive worked out a way to make them without using the oven so as to help encourage those who lack in a bit of confidence in that department! happy christmas xx
