Nice one. Specifically, you would muddle the lime first and then lightly muddle the mint, or, if going to shake with ice, don't muddle the mint at all. What do you think?
This is all correct, however, in my opinion, mint is a delicate leaf and doesn't require you to pulverize it to get the flavors out. So what i would do here, is just muddle the lime only, then add the mint with cracked ice and shake it. The cracked ice (or better yet crushed ice) will act like shards and cut the mint and release the aromas. Nevertheless, great video!
You realize that once upon a time that muddling has been around since cocktail making started >> it went out of style when blenders were introduced, but in the last ten or so years the art of muddling has made a come back.
+grizzlytomahawk according to the leaf ,it takes nothing more than a slap of the leaf with your palm to release all the oils,if you rip the leaf to shreds those shreds will be sucked up along with the drink, and the people your serving will think they swallowed a bug ,also,it makes more work than needed

Why do this in a glass? Why not in a juice presser or doing it by hand? (Talking about the fruit).
grizzlytomahawk not being pretentious or condescending or anything like that but seriously, look it up. I thought the same thing for years but after actually looking and doing research there's chlorophyll in the mint leaves that's very bitter and when you smash up mint like that you release the bitterness into the drink. Mint oil is very easy to extract you just need a very gentle pressure unlike citrus, for which you need to use a lot more force to extract the oil from the rind.
labobo because you're muddling to simply release the fruit/leaves' natural oil and or flavors, while keeping the integrity, or the whole of, the fruit/leaf in tact.
Probably one of the many few "You're Doing it Wrong" videos that shows the proper technique for a specialized art. In my opinion, cooking isn't difficult, but bar-tending can be.
Also they don't do any of this in cuba, the use lime juice, sugar syrup (white, not brown) and fresh clapped mint. Then lighty shaken with big ice or muddled lightly with the back of a bar spoon.
Cool, I actually have the exact muddler he's using in this video, and it's really good. Since it has the little rubber nodules on it, it means it helps crush the stuff faster, so that means less work for you.
@wedacose totally agree, and a mojito doesn't need to be shaken. Thats just extracting more of the bitter take of the mint leaves but breaking it up that much.
You can't do one of these "you're doing it all wrong" things and then do it wrong. Comment from Rap below is correct. Don't destroy the mint. It should not end up in little, hard to drink around pieces. Releasing the oils is the goal and can be done with very little pressure. I really think they need to do this over and get it right.
Question then: When muddling different kinds of fruit together in a glass, it seems like it all should be addressed differently. Do you muddle all rind based fruit as well as cherries and then add mint before building the drink? What would be the best way to go about something like that?
I use both kinds of muddlers. The wooden one (that this guy hates) I use for very gentle muddling... basically if I want to just give some mint leaves a few thumps to express the oil without shredding it. For more aggressive muddling I use a stainless steel/silicon muddler.
The mint is definitely over-muddled. On top of that, he proceeds to give it a hard shake, further murdering the mint. Mint needs only a gentle press. I also agree with the comment that gravity alone just won't do it.
Cutting limes halves with the round side down (2:16)...ALL WRONG!! But he does have some good points. My rules are: Metal muddlers never go in glass vessels of any kind. Cut fruit with the flat side toward the board. Press with your muddlers to extract juice & essential oils, not pulverize. Delicate herbs go in after the citrus, after the hard shake. Sheik Your Booty.
Weird that so many people are so uptight about how someone looks. Who cares. Ridiculous and extreme douchebag facial hair, I don't even know what that means, is there some cosmic law that determines that? I didn't even notice, I was too busy looking at the drink stuff. I'm not a bartender and he gave some good tips. There are also some good tips in the comments. Yours isn't one.
All very true a great muddle is an asset to every bar professional! Although if what he was making was a Mojito then it's all WRONG! YOU SHOULD NEVER MUDDLE MINT!!!!!!! It makes the drink bitter as you can see if you suck then chew the mint, it's the same when the oils have been bruised. Please don't do it, every informed patron will send it back.
umm...you're both wrong imo. Muddling the mint breaks it up too much and you tend to drink it (mint tastes like shit). All you need to do it give it a good slap before going in the drink and stir.
Is it just me or does everyone in these videos have like a weird grey stripe in their hair? I am sure I just saw a woman with the same hair earlier on.
This guy is awesome, you can tell he loves what he is doing, and he wants others to not only do it right but understand why. Thank you so much!
I love this guy's passion for what he does.
You are easily impressed.
drgonzo212 Better than being perpetually bored and cynical.
Meh....
I'm with you Amelia Bee, its nice to see people still taking pride and having passion in what they are doing.
I'm a bartender and I'm not that interesting! Haha
Thanks, R'as al Ghul!
HAHAHAHA he resurrected that drink. 4 years later.... don't care
I've read that a lot of bartenders nowadays aren't even muddling their mint they're simply putting it in a shaker with ice and shaking it really hard.
that effort determines the line between bartender and "mixologist"
Nice one. Specifically, you would muddle the lime first and then lightly muddle the mint, or, if going to shake with ice, don't muddle the mint at all. What do you think?
You're holding the wooden muddler upside down and you smashed the mint into small pieces. Wrong.
@joeyheadset he said wood is ok, he said dont use laquered/painted muddlers
This is all correct, however, in my opinion, mint is a delicate leaf and doesn't require you to pulverize it to get the flavors out. So what i would do here, is just muddle the lime only, then add the mint with cracked ice and shake it. Probably the most useful tips are these, the coctail ones. MORE OF THESE!
You realize that once upon a time that muddling has been around since cocktail making started >>
it went out of style when blenders were introduced, but in the last ten or so years the art of muddling has made a come back.
right on!!!!! done like a real pro!!!
You.. you ripped the mint to shreds. Mint should stay as a leaf, gently pressed, never torn, ripped, or shredded.

Ryan King so what do you do? Muddle the lime, slap the mint? - Aspiring bartender to my hood
labobo because you're muddling to simply release the fruit/leaves' natural oil and or flavors, while keeping the integrity, or the whole of, the fruit/leaf in tact.
Very well done and explained
I think this guy is the least pretentious person of the CHOW "You're Doing It All Wrong" series.
Him and the beans guy. I love the beans guy!
Probably one of the many few "You're Doing it Wrong" videos that shows the proper technique for a specialized art. In my opinion, cooking isn't difficult, but bar-tending can be.
Did you act in The Big Lebowski? Any tips on Caucasions?
Holy crap, Serj Tankian's a bartender!
Also they don't do any of this in cuba, the use lime juice, sugar syrup (white, not brown) and fresh clapped mint. Then lighty shaken with big ice or muddled lightly with the back of a bar spoon.
this man is an artist.
Great tutorial!

@@basicweech I want to know the same thing.
Thumbs up! Another good Chow-isode!
Thanks!

What muddled is he using?
was there really a video about how to muddle fruit.
@KickBassify It has to be long, it doesn't have to be this fancy, and it has to be wood.
i learned alot today.
Limeoil from the wedges might smell very nice, but they taste bitter. You should press on them at a maximum of 3-4 times.
'An expression of your work.' Poetry! We should all try to seek expression of our work, no matter how we earn our money.
this guys is a boss
What if I like doing things wrong?
I like this guy
The mint is definitely over-muddled. On top of that, he proceeds to give it a hard shake, further murdering the mint. Mint needs only a gentle press. I also agree with the comment that gravity alone just won't do it.
after all this right and wrongs.. He still ended up muddling and shaking the mint leaves.. hahahaha what a fail
is that Zappa?
i've never heard of muddling before so im just gonna trust the guy with the v for vendetta goatee
I have never wanted a mojito more than I do right now x_x
I love how everyone in the comment section is now an expert lol.
hell yea this is good!
When I saw this video title I thought "muddling for a drink" was slang for sitting at the bar like a jackass waiting for the bartender to notice you.
I want that mojito! and the muddler :)
Michael has very striking features. He should capitalize them and also get a manicure next time for those close ups of his hands. Just a thought…
You’re doing it all wrong, let me show you one more way to do this wrong. I’ll just have a beer, sir.
the first chow video i like
"dude" do you see any brown sugar?
@CocktailsMelbourne SO TRUE ! U DON'T WANT IT TO BECOME ALL WATTTERY . . .
USE A DAMN SPOON !
That's what I thought...I've always rolled or crushed it slightly with the flat edge of a knife. But I'm also not a bartender. ._.
I dont think thats a mojito, wheres the seltzer?
you're doing it all wrong you need a mustache to muddle
length does matter ;)
these videos have the best fucking comments
Good stuff but one tip- clean your fingers and nails before doing close up videos especially when dealing with things you eat or drink.
i want like 5000 of those right now
Mint should not be muddled with lime wedges. That is all...carry on.
i totally agree.
Guy Faulks, is that you?
i want one
this is the way.
This is the only recipe for a cocktail you know?
you should never muddle mint. it bruises the herb and you always lose flavor.
Dude, if you're shaking a Mojito, you're doing it ALL WRONG!!
I like to ice some Doritos Consomme and add it instead of regular ice for that southwestern kick!
Cutting limes halves with the round side down (2:16)...ALL WRONG!! But he does have some good points. My rules are: Metal muddlers never go in glass vessels of any kind. Thank's for the tips, Frank Zappa.
I am now a certified bartender
It's nice to see Frank Zappa alive and well
wrong again...
i officially believe in love at first sight
looks like a mortar from a mortar and pedestal
I think they're both pretty dang hard to do right. :p
Uh, YOU are doing it all wrong. Muddle the Limes first and muddle Mint lightly after.
thanks serj tankian

ummm.... wrong. You are supposed to muddle mint. You don't crush it, you muddle it.
Really? What if I gave you a glass of alcohol and liquor. Would you drink it? LOL!
its not, this isnt a chow tip, this is a "your doing it all wrong"
never ever muddle mint!
no. its frank zappa :P
of course you8r alcoholic dad is the 1 telling me how to do this
umm...you're both wrong imo. Muddling the mint breaks it up too much and you tend to drink it (mint tastes like shit). All you need to do it give it a good slap before going in the drink and stir.
I think the textured muddler also contributed to breaking up the leaves.
Clearly muddled.
He spilled the drink when pouring it....wasted product....that was done all wrong
Is it just me or does everyone in these videos have like a weird grey stripe in their hair? I am sure I just saw a woman with the same hair earlier on.
So when I was taught by Cubans how to make them.. They taught me shake.
I'd muddle my way to some Doritos Consomme.
frank zappa!
absolutely! maybe even add some hot peppers or bits of precooked taco meat!
I did it myself with the Woodprix plans. I think this is the best way to find out how to build it.
clearly wasn't a Mojito
lol he reminded me of borat for a whole sec.. O.O
