So I have a comment after I have cooked the green beans and shocked them. After the green beans come out of the ice, what if I want to eat them after they have been shocked? Does that mean I microwave them to heat them again? Just asking because I want to lose weight and I love green beans I just don’t want to over cook them or under cook them before eating them.

At 3:23 she says you can refrigerate them and then re-heat them when needed. That way you get warm beans without losing the colour you would get by simply boiling them.
Wait.. so after everything.. do you season them? Or do you just stick with the salt.... like.. should I take them all out .. put them in a bowl.. and season them to what I like?

You can passive aggressively type“lol” all you want but your lack of understanding reveals an immaturity when it comes to how people perceive others.
That’s why, after blanching but before serving them, you’ll want to sauté the beans for just a minute or two (until warm) in a skillet with a bit of olive oil or butter, minced garlic & shallot. ;)

I bought green beans from Trader Joe’s, and after I froze them, they had freezer burn. They weren’t plump after boiling. I guess these don’t freeze well for another day??
All fruit and vegetables will be soggier/softened after cooking. Best to use frozen veg for soups and to expect it to be softer. Freezing makes the cell walls of plants break down, which is what provides that snap. This is why they don't sell frozen lettuce.

No, I have to disagree. I am from the south and we generally cook our beans to a soft texture, which does taint the color a bit but the tendency is to cook them slowly in stock with bacon, garlic, and onion. I also "string" the beans, to remove that nasty growth stalk that goes down the entire veg, both sides, top to bottom. Otherwise you have that fibrous, indigestible stalk which is unpleasant. To say the least. The crunch might be nice in a cold salad, but for that, after removing the sting I cut them into very small pieces. You still get the crunchy texture but in manageable bites. Down here you can't pass off beans that aren't fully cooked. Sorry. It's a cultural thing I suppose. You're also likely to find some cooks add some style or form of tomato base for added flavor. Even just pureed tomato sauce. That's a way to increase not just flavor but also vitamin c and B4. Iron, potassium. Plus color that makes the greens more attractive, visually. Just plain Green beans are boring, tasteless, and tough. They need the extra flavors and simmer time to really make a deep south dish.

Furthermore, many cultures eat foods that are stewed for long periods of time and nutrients are not destroyed. Yes, some vitamins are sensitive to heat, but it is not a simple process of "food is cooked over x amount of time, food has no more nutrients". You must believe that a tomato sauce for pasta must have no nutrients left in it either then, or any curry, stock, etc.

I do that all of the time! Keep a close eye on them and check at 3 minutes, and each minute after until bright green but still crisp.

I don't like cold green beans
After a quick ice bath, the green beans aren't necessarily cold, they are room temperature and crisp which is way better than overdone and mushy.
