  • Easy Raw vegan strawberry shortcake! The perfect dessert to make for your loved ones or even yourself! 7 layers of sweet, fluffy heaven! BE MINE?!
    A special Valentine's Cake to make for your loved ones or even for yourself! This recipe of EPIC MEAL TIME proportions will win the heart of ANYONE!
    Ingredients for the crust:
    2-3 lbs of pitted, fresh dates
    1-2 cups of dried, raw mulberries
    1-2 cups of raw, dried figs (white or black)
    1 pinky of vanilla bean
    1 tbs of cinnamon
    Run all ingredients through a food processor until the mixture reaches a crust-like consistency. Push the crust into the bottom of a pie pan or a cake dish, and get ready for the next layer! If you want your cake to slice smoother, feel free to add wax paper lining on the bottom of the cake.
    Add a sliced layer of strawberries onto your crust.
    FullyRaw Cool Whip Ingredients:
    2 cups of freshly prepared almond milk
    Either 1-2 frozen bananas or a half cup of raw cashews
    The meat of 2-3 young coconuts
    Note: if you want the cake to be lower in fat, use the bananas instead of the cashews and replace the almond milk with coconut water.
    Blend all ingredients in a high speed blender like a Vitamix. Spread this FullyRaw "Cool Whip" onto your first layer of strawberries. Add a second layer of sliced strawberries on top and get ready for another layer of Cool Whip!
    For your FullyRaw Strawberry Cool Whip, simply use the remaining white cool whip and blend it with a few strawberries to turn it pink! Spread this layer on top of your second layer of sliced strawberries and top it with ANOTHER layer of sliced strawberries!
    Ingredients for the Strawberry Glaze:
    Half to one pound of fresh strawberries
    Half a cup of fresh, pitted dates
    Blend the ingredients for the strawberry glaze and spread it on top! Add your final layer of sliced strawberries! Place your cake into the freezer for approximately 4 hours to harden it. When ready, take it out, slice it up, and ENJOY! Share with family and friends!

    For those who are complaining about the cost of this recipe, I made this in a mini personal version in a ramekin! In all I used 1 banana, 5 strawberries, 1/4 cup of almond milk, and 3 dates! Much cheaper and still the same delicious taste:)

      Yes I do love her videos but when I look at everything I said to myself "wow this is really expensive!". And finding some of these Fresh Products around my area is really really hard. I also said to myself "how much of this am I going to eat? Because is a lot!". Lol. so thanks for making a smaller version because I know more people are going to be motivated to make it. I am also going to have to make sure to buy a small cake pan to make the small version. Lol

      it's not because people hate joy, it's that she's a very insincere person, who claims to be an ethical vegan, but wears shoes made of leather/baby goats/cows, she has 8 fridges, she buys organic produce - which to grow organic you need a bigger field - meaning more animal displacement . . . she thinks 20 dollars a day is a cheap - she bought a porche with leather interior. . .
      she makes bombastic - over the top claims about how her diet will cure cancer and prevent the need for prescription pills - which isn't 100% true,
      she claims to not support whole foods, but has her book being sold there
      i can keep going, but she's a very bad person doing it for money

    Omg yes!! I never thought a vegan dessert could ever look so good lol that may sound bad but keep in my mind that I've JUST started researching about vegetarianism and raw food diets for barely a wk. I stay up all day & night watching UA-cam videos and following blogs about it so that I can make a conscious, well thought out decision.     I did a calorie breakdown just in case anyone was wondering. Without the glaze, this cake is 3,389 calories, 565 per slice. The dates alone are the same as a whole cheesecake LOL

      I've been vegan for years, but to say that an excessive amount of calories and sugar from fruit is good and all animal products are unhealthy is just wrong.

      Hugh Mungus actually is not. I thought the same for years! The reason We believe that Myth is because of the idea put in our minds about diabetes.
      But when bodies does not create enough insulin IS NEVER Because we eat Too much Sugar.
      Now Refine white Sugar Have Some Health Threat.

    OMG! Epic dessert!! Who cares about the fat when you are making a cake like this! It's probably as healthy as a tiered cake would get! I will save this recipe for a special day. And go all out! I think I will use coconut cream instead of almond milk for extra thick and creamy fudge/ice cream texture. Thank you so much for this heavenly masterpiece!

      coconut is a natural fat burner, regardless of the high calorie and fat content, it actually burns fat, trust me its true. :)

    DO THIS TO MAKE IT BETTER
    mix oats with the dates ( you can skip the figs/mulberries if you'd like ) 1-2 pounds of dates, about 1-2 cups of oats.
    form the crust on the sides of the pan all the way to the top, like a high crusted Pie, put in the oven for 10-15 minutes at 350degrees Fahrenheit.
    this crust makes it taste so much butter, also, triple the amount of vanilla, if you dont have the beans, use four table spoons vanilla extract, in both the whip and strawberry glaze.

      What would happen if I ate over 2,500 -3,000 calories raw whenever I wanted not caring about how many nuts or avocados what if I ate this slice of cake everyday or many times a week or a month is it just weight gain that's a problem and if so would your body get thick or can you look cellulite big

      @@beereina6998 That's what I'm saying. I know people have certain dietary restrictions, so I understand the alternatives. However, if the issue is just counting calories, eating that many calories just because they come from healthy foods doesn't seem worth it.

    What a really good recipe! Do you realize this would also be fantastic with fresh, ripe peaches? Cherries? Figs? Blueberries layered separately with raspberries and blackberries for an epic "Berry Shortcake?!!!" How about using pistachio nuts in the date "crust" instead of mulberries, and no cashew nuts? Would really increase the crunch factor and decrease fat. This recipe is really good for a potluck dinner "gift." Ohh! Just had an idea. . . Dip a few of those berries on top in "chocolate" (carob powder recipe)!! Now THAT is "Epic heaven!" Happy Valentine's Day! And congratulations on a truly blessed (and beautiful) niece!

    For everyone that is saying its too expensive to eat healthy... When you stop drinking 5 dollar starbucks coffee everyday, spending all your money on fast food, shopping and alcohol and clubs on the weekends, ONLY THEN will you have enough money to spend on fruits and veggies! Get organized, get healthy. Don't blame other for your poor decisions

      I have to agree with you. People can easily shave off between $100 - $300 if they want to (once of course, they are working) and use that money to afford to go raw or semi-raw. At the moment I cannot, but if I am considering changing my diet maybe not fully raw but raw till four or something like that. Between that and the tips she has already given: to buy in bulk, to store things adequately, etc I don't see a problem.
      Also people just need to buy seasonal and local fruits and vegetables first and foremost and then "indulge" in non seasonal and non local fruits and vegetables to do something special like this from time to time.
      Everything is expensive but if one wants to get something done even within limitations it can happen. Perhaps some people will have to do more vegetables than fruits. It is just a matter of being creative.

      Here in Germany it is sometimes actually cheaper to eat healthy, depending on where you shop. A hamburger might cost EUR 1,00 to 1,20, but e.g. two bananas cost about the same if not less. If you are prepared then you can also buy in bulk or go to your local market or supermarket just before closing time and ask them if they give you fruit and veggies for less, some also offer it themselves without asking. If you cannot buy organic, wash your produce with baking soda, it will get off much if not all of the pesticidic wax. If you like a quick fix, buy yourself one of those apple cutters that core and cut at the same time. Preparing raw meals is actually quicker than cooking and easier, so that it takes time is no excuse at all, either.

      If you live somewhere like Canada, where not many fruits grow and most are imported, then fruits and vegetables can be more expensive than fast food and processed foods. If you live in a warm climate where fruits are inexpensive, great for you, but don't generalize.

      Here in New Zealand you just need to go to the open, orchard 'pick your own' markets that are usually on the outskirts of the cities whereas the inner city vegetable and organic markets + commercial supermarkets are very expensive almost in a way that to 'turn off' most people who think going organic is expensive, this is what I thought until I started google mapping orchards and asking around. So now im pretty set in the fresh fruits and vegetables available at much cheaper prices - it is also possible working a deal with the supermarkets in taking there ripe organics off them for very cheap too, sometimes they just give it away, I get the odd phonecalls to come in and have a look before it gets binned so working up a relationship with growers and auctioneers can work in your favour..

      That's bullshit. I don't drink Starbuck because it's too expensive and I can make coffee at home way more cheaply, I don't eat fast food cause in my country it's expensive. And I don't drink cause I'm not old enough. But I can't afford many fruit and vegetables, I can only afford bananas, lettuce, and carrots. Can't make any of her recipes with thise 3 things.

    All her dessert recipes are insanely expensive. No. Fracking. Way. I appreciate creative raw vegan recipes despite not even being vegetarian, but this is not a realistic recipe/alternative for most people, and if I'm going to make a dessert, I may as well make the real version, especially if it winds up being 1000 times cheaper with even less calories. Hell, strawberry shortcake is one of the healthier, lighter desserts one could make anyway.

      she uses the produce of rawfully organic its her co op so its not expensive, i live in argentina where fruit is not so cheap, so i make my own version with not so many strawberries and more bananas its not so hard you just replace what you cant afford ;)

      Make it your own and use less expensive ingredients. Or only make it if you find a bargain offer for the expensive ingredients. And on the "rich daddy": Kristina runs her own organic produce co-op, she does not need a rich daddy. And she makes a living from that UA-cam channel, too, she is her own entrepreneur. Apart from that her possibly "rich" daddy worked for his money and was a little more fortunate than others, that's just life. Jealousy and demeaning young cute women by making them rely on their "rich daddy" will only harm the one who writes it.

    I am so blessed that my dad runs fresh fruits and vegetables business , i get to eat all them for free, including nuts, seeds, and i am from tropical country, coconuts are cheap, dates are cheap, mangoes,bananas .... my bill will be much lower if i go fully raw @.@

      I am not a vegetarian, but everyone know that meat is more expensive per pound than beans, rice, pasta, oats, flour, fruits, veggies and some nuts.

      maroonghul Eating raw is expensive. I tried it for a week. Couldn't afford it. Sadly meat and other unhealthy foods are cheaper.

      I dont now where you guys shop, but fruit and veggies in most place are less than a $1 a pound and i live in expensive San Francisco. and if you are already vegan or vegetarian going raw is just a matter of NOT cooking the food you already eat. You need to be smarter shoppers and pay attention to how much you pay for food per pound/once.

      foxybiroxy You live in California, even if it is San Francisco. I live in Ohio, heart of the Midwest. Fruit is not cheap here. Even the farmer's markets are expensive and by the time you buy the fruit from there is almost rotten. I am not talking being riped. If I lived in California, Hawaii or some tropical island then of course, fruit and veggies would be cheaper to eat.

      Yeah, I've heard that. I make sure my family eats healthy -- I buy lots of fresh fruit and veg, dairy, white meat and usually a limiting amount of junk food like a box of oreos, oat slices, pretzel sticks and crackers. I feel OK about our diet.

    Wait a minute so these cashews are raw? how does one know for sure if they are raw and not treated? I watched literally all the raw vegan shows and read so much info online and no one even talks about this which is really strange. Don't cashews have to be treated just to be sold on the market ? If im wrong, how can one tell for sure that they are raw, what makes you sure they are raw?

    Hey Kristina, I LOVE what you do.
    I have yet to try your recipes and go on a little fully raw challenge for a month or so. You're very inspirational and creative. But I have a little constructive criticism. I know it might be ok for your American viewers because of their culture, but for others of us (I'm Jamaican) the air licking beside the dates, the drinking out if the large bottle of almond milk and putting your finger into the whip is a little off putting and seems unhygienic. Please see this as constructive, I admire you and I would never want to tear you down.

      Yes, he may be the only one consuming it, but for presentation purposes, as a viewer I don't want/need to see that.
