If you have watched my videos about fried rice, you should know about this trick: stir-fry the egg white and yolk separately to draw the lipid out of the yolk, such that the fried rice comes with golden and white bits of egg. In this way, the dish looks beautiful and tastes great, but you may find it too complicated to follow at home. So today I'm going to teach you a home-style 'Egg Fried Rice with Spring Onion'. First, fry both sides of the egg. Add other ingredients into the wok, stir-fry them, and add cold rice into the wok. Finally, season the dish, stir-fry it until 'wok hei' appears, and it's ready to serve! This dish very simple and fast to cook. I highly recommend you to add 'Erjingtiao' chili pepper, which is not too spicy, but rich in aroma and matches well with the spring onion. 蛋炒饭是技术活,疫情期间在家也炒了不少蛋炒饭,饭和蛋的比例是一碗饭两个鸡蛋最佳,蒜苗比香葱更下饭,放一点不太辣的二荆条很有风味,好酱油尤其提鲜。冰箱里放久了的米饭需要微波炉加热一下再炒。
昨天看了王刚的故事。原来是个留守儿童。外公外婆一定是很朴实的人。所以王刚和四伯都很朴实。福报绵长啊

炒饭用冷饭跟热饭没区别,关键是饭要稍微硬一点,也就是干一点。你把饭放到冰箱里,无非是让它脫水變干,一粒一粒炒出来比较香,但是热饭如果水少放一点,照样可以炒出很香的饭来。不知道佳明不明白一个道理,就是冰箱有脱水功能

我是20多年中餐厨师,目前自己开店,刚你炒的饭没炒到火候就出锅了,还有鸡蛋液倒在饭里一半,剩一半在锅里煎7成熟下饭炒,蛋液在饭里遇到热量就会包裹到饭粒上,炒出的饭一粒一粒的,你刚炒的饭打团,不够标准,炒的时间段,过不够热没有锅气味道,要炒出冒烟,才有锅气,我几乎每天都炒饭,而且用珍珠米炒

It's impossible for anyone to lift and toss such a heavy wok with food in it. If you look carefully, you'll notice he's using the edge of the burner to pivot the wok to get the tossing movements and using the spatula to guide the food along with it. For more clarity, lower the video playback speed to 0.25 and you'll observe the movements of the wok and the spatula are in the same direction (not in opposite directions as it might seem at normal playback speed) to get the food to the farther end which then gets thrown back to the nearer end of the wok at the end of each toss. Just my observations and hope it helps those learning to get your toss right.

哈哈,我出国了差不多7年了,几乎都自己做饭,也是最近这一两年才开始会翻锅颠锅了,不容易的,刚哥那个大铁锅更难
我也是,一翻全灑在廚灶上、有次直接灑在手上😅
我会翻锅,但不会左右翻且只能用右手翻。要诀就是在食物要离开锅时将锅稍微向自己的方向收一下,这样不会撒出去。可以用黄豆练习。
哈哈哈哈,主要不是往上翻,是让食物滑到锅的远端之后,把食物颠回来,希望有帮助哈哈哈

bbc那个可能是一种半成品印度米,包装之前预先蒸过,带一股苦香苦香的味道,煮起来不吸水,一般5分钟就能煮好,而且颗粒分明一点不沾
