@@scottenge173I’m a fishing guide in Alaska (I fillet halibut, salmon, and rockfish the most), we use victorinox knives and use honing rods after every 5-10 fish. The factory edge will last incredibly long as long as you keep it honed well. Hope this helps.
Theyre not bones. Its cartilage, and its dead easy to cut through them. You dont need a crazy sharp knife, just an adequately sharp knife. I think most people never care for their knives at home so their idea of sharp is horribly skewed

I filleted around 50 king salmon last year between my boat and my dads charter boat for people, and those bones are hard! We both keep a sharpening steel on the boats and touch the blade up after every 2-3 fish because they start to dull that fast.
Steelhead is not Salmon tho, Steelhead are just rainbow trout that have grown up and migrated to the ocean and feed on shrimp which is why the meat turns red/pinkish.

As a knife maker watching this video 1000 times helps me design the perfect fillet knife. amazing technique. i'd love to know what you want out of a fillet knife. thin and stiffer, by the looks of it!
Always bugs me when people throw the carcass away like that. Lots of meat on there still, and you can use it to make a good fish broth for soups, noodles or what ever. Heck you can even use it to feed your plants.
...i mean if youre in a survival situation or in deep poverty, thatd make sense. The amount of work for some broth isnt worth it to most people and the meat on the head is miniscule. Its like saying its wasteful to cut excess fat off a roast. Technically true, but nobody really wants to render their own fat when oil and lard is cheap and easy to find.

This is the technique my fishing guide in Alaska used. So fast, so simple and easy.
It's as most things a mather of practice, it's obv a diff between 5000 times and 20 times.
Where’d you go in Alaska 😅 if you went out of Homer I was a deckhand on a fishing boat and may know the guy! I also used a very very similar method
