    I love watching these videos. The amount of skill cutting is crazy. I can cut but I can’t anything too sharp, I’ll lose skin or appendages.

    I have watched a few of these now, and can't help to notice how different your butchering of the fish is from the taiwanese channels. They have fresh fish too, not frozen, and burned. There has to be a difference in taste as well. All that said, you guys have amazing skills. Very nice sashimi at the end.

    It really shows that this fish was not 🩸 properly. I understand some harvest methods do lend to this practice. This is why bluefin caught on rod and reel typically has higher quality when more care is given to the treatment of the meat. Well done to the butcher crew.

      These guys are clowns. They do NOT know what they're doing, using the wrong blades, hammering on them, sawing slices. The Marx Brothers of tuna processing. Humorous at best, maybe an amateur hour show. There's another video of ONE guy, using two blades to quarter up a tuna and slice into primal cuts ready for a conventional size knife to slice into merchandise for retailers.

    Also it should not be chopped. It should only be sliced. No pounding sound. Even bones should be sliced. Your knives are very dull.

    Nicely done! Love the 2 person technique on the colar side of the loins. Gonna have my sous chef do that with me so he learns to follow the bones correctly.😅

    I’ve never had fresh tuna, just canned. Would love to try it. The only fresh fish I’ve had was the fish my Dad would catch, catfish, carp, buffalo, bluegill, crappy, and bass. Love these fish.

    처음부터 비늘은 제거하고 깨끗한 상태에서 4등분 후 중뼈 제거, 가마 제거, 부위별 절단! 순서대로 잘라야 깔금할것 같군요~~ㅎㅎ
