I recently moved from coastal Virginia (elev. 256 ft.) to mountain Wyoming (elev. 7,000 ft) and I'm having a ton of problems adapting recipes to high altitudes. The fact that water boils here at 196 degrees instead of 212 degrees makes me think that roasting meat at lower temperatures may be called for, but I can't find a resource. Most advice seems to be for baking cakes and breads, not meat, but I tried a country spare ribs recipe today and even though I reduced the air fryer cooking time from 30 minutes to 24 minutes the meat was way over cooked (185 degrees on the instant read thermometer!) Do you know of a resource for cooking meat at high altitudes?

Why are the cooking instructions here so different from the book that comes with it?
