    LEARN HOW TO MAKE A VEGETARIAN TOFU MASALA RECIPE TODAY!
    LAY HO MA (how's it going in Cantonese)! Prepare to cancel all your plans to make this extraordinary salty, spicy, aromatic recipe! Join me in this episode and learn how to make the most amazing tofu masala recipe right in your very own kitchen! Let's begin
    Ingredients:
    1 red onion
    1 long green chili pepper
    1-2 pieces garlic
    small piece ginger
    5 shallots
    350g extra firm tofu
    2 roma tomatoes
    4 cardamom pods
    1 tbsp avocado oil
    3 tbsp chili oil ( • Most addictive Red Chi... )
    2 tsp cumin seeds
    1 tsp coriander seeds
    3 dried chili peppers
    1 tsp sweet paprika
    1 tsp smoked paprika
    1/2 tsp cayenne pepper
    1/2 turmeric
    1/2 tsp salt
    2 tsp garam masala
    1/4 + 1/3 cup water
    1/2 cup tomato purée
    1/4 + 2 tbsp coconut cream
    cilantro to serve
    Directions:
    1. Finely chop the red onion and long green chili pepper. Grate the garlic and ginger. Peel the shallots and chop in half
    2. Pat dry the extra firm tofu with a paper towel. Then, slice into bite sized chunks. Dice the roma tomatoes. Use the butt of the knife to crack open the cardamom pods and extract the seeds
    3. Heat up a sauté pan to medium heat. Add the avocado oil followed by the tofu. Sear for 4-5min to get some nice colour
    4. Add the shallots and sauté for another 3-4min. Then, set aside
    5. Bring the sauté pan back to medium heat. Add the chili oil followed by the cumin seeds, coriander seeds, dried chili peppers, and the seeds from the cardamom pods. Fry in the oil for a couple of minutes
    6. Add the red onions and sauté for 3-4min. Add the garlic, ginger, and green chili pepper. Sauté for another couple of minutes
    7. Add the sweet and smoked paprika, cayenne pepper, turmeric, salt, and garam masala. Sauté for a couple of minutes
    8. Deglaze with 1/4 cup of water. Give the pan a good stir and cook for a couple of minutes. Add the roma tomatoes and cook for 3-4mins
    9. Add the tomato purée and cook for a couple of minutes. Add back in the tofu and shallots. Give the pan a good stir. Add 1/3 cup water and give the pan another good stir. Then, cover and cook just under medium heat for 10min
    10. Add the 1/4 cup coconut cream and stir to combine
    11. Plate and garnish with some fresh cilantro and a drizzle more of coconut cream

    I'm back to say that I made this tonight - OMG, it is so good!! The tofu came out perfectly with the shallots. The sauce was so flavorful. I'm not as spicy as you, Wil, so I left out the cayenne. 😄 I used the beloved ❤ chili oil ❤️ from your recipes. Served over coconut rice. No leftovers! We loved it!!

    So, I just have to say. My wife’s birthday was a couple of weeks ago and I tried two of your recipes for a birthday dinner. Chili pineapple fried rice and smashed chili potatoes. And they came out excellent! For the rice I swapped the tofu for shrimp though. Both of the recipes were absolutely delicious and my wife was super impressed. “Restaurant quality” were her exact words! I am by no means a chef but your videos made it very easy to pull off. And I can’t believe how great it tasted! Bursting with flavor! Thank you!

    Dude, as soon as this video came out I decided to try it. My father has type 2 diabetes and I have been trying to get him on a more plant based diet so I have been cooking with tofu more. I didn't have all the ingredients but I did substitute alternatives and it seriously WORKS! After tasting it, it's so hearty and makes good for the soul. Thank you for making this video! 💜

      Meat is not bad for diabetics. Sugar is, which is abundant in a vegetarian diet if you are not careful. Bread, rice and other grains (I hear oats is good though, havent tried it) , bananas, fruit juices in stores, all these need to be limited. My dad's relatives often have type 2 diabetes and he kept his in check for decades without any medications (he passed away due to illness acquired due to his work). Type 2 diabetes is quite common where I am from so we know how to handle it.
      Diabetes is literally insulin resistance, so body is unable to process sugar the way normal people do, i.e convert it into fat and store it. This is also the reason they often lose weight a lot and have other issues caused by too much sugar floating around in their body. I hope your father manages his diabetes well and I wish him a long helathy life.

      @@angelas5099 Glycemic index is a much more effective metric to use than 'sugars'. Complex carbohydrates vs simple carbohydrates is much more effectvie than 'no grain'

      @@jessegreywolf You are right. Complex sugars act differently from simple sugars. Does not change the fact that most grains when digested have larger amount of simple sugars instead of complex ones, hence need to be limited (I never said "no grain", since grains are nutritional)

      @@angelas5099 you need to look at Roy Taylor’s work and more diabetes research. Diabetes is not caused by sugar and complex carbs as part of a high fibre (e.g. proper whole grain) is not in any way bad for diabetes. There is increasing evidence that it’s actually fat deposition in the pancreas causing type 2 diabetes. Moving to ‘keto’ or high meat/high protein/high fat diets, may improve diabetic control in the short, almost all studies conducted over a longer period result in worsening of diabetes.
      Increasing evidence for low fat diets helping reverse diabetes… not low sugar/carbohydrates.

    The masala sauce is so delicious and versatile, I made a large pot and canned 4 and 8 oz jars. I ommited the oil and coconut cream. I can use oil with each recipe. This sauce is great in dahl. Thanks again for a fantastic recipe adding to our culinary journey.❤❤

    I will try this recipe with my red lentil tofu. We have a company in Chicago that uses beans and lentils to make great tasting tofu. This is the perfect recipe to try. Thank you again.❤❤ Success. I made the masala with my friend's red lentil tofu. It went over very well. Even folks that can't take a lot of heat, enjoyed this dish. I did use fewer chilis.

    I made it last night, we had double serving each. I took it for lunch and enjoyed it even more. Now we will be having it again for dinner tonight and am looking forward to it. As soon as I get to the shops on Saturday, l'll buy more tofu and make it again! This is now going on our weekly menu; for a long time I'm sure.

    I am not totally vegan but made this last evening and it proved that Wil can take vegan food to a new level. All the recipes I’ve tried are simple yet really full of flavour and I can recommend that you make the chilli oil as it’s delicious. Thank you Wil.

    Very nice.
    Next time, Wil, keep the Cardamom pods. Dry-roast them for a couple of minutes along with the Cumin and Corriander seeds. Also add half-a-stick of cinnamon. Let cool. Then, coarsely grind the spices. When added to the hot oil (I cook in either Peanut or Sesame Oil), the ensuing aroma will drive you crazy.
    Guarantee.
    My idea of adding fresh Coriander is at least 1/2 cup... chopped. LOL

    When I was a young woman, I could have cooked/eaten this recipe as written. Now that I am a senior citizen, I can’t do so much spice but still! I just ate this for my supper and whoa! Is it good! I told my son to buy me your cookbooks for Christmas. I can’t wait to try more of your recipes!

    I’m from India and this is exactly how I cook tofu. Some variations to this recipe are
    1. cashew nut paste instead of coconut cream
    2. Adding some finely minced ginger along with garlic

    Small suggestion: You can add coloured peppers 🫑 or just the green pepper while sautéing shallots & tofu. Peppers too bring great flavour to this dish….. thumbs up for the recipe though.

    Veni, vici… Cooked this marvellous dish for supper (second time), along with the recent Broccoli recipe, also amazing.
    I only want to mention that a study came out in the Press today (at least I saw it today), whereby vegans have a nearly 75% smaller carbon footprints than meat eaters! That is one big number. So not only delicious Mr Yeungman Cooking, but keeping this earth healthy one recipe at a time!

    At first i was sceptical about the spices letting whole. I normally use my pestle and mortar. But oh my did this dish took me to a flavor planet! The spice i cant describe it as spicy and refreshing all at once. Im starting to cook vegan cause i want to eat less meat, and it isnt a boring dish at all it is quite surprising! Thank you man

    THIS recipe pushed me over the edge! I've made this recipe several times. Except for the Roma tomatoes, I now stock all the ingredients in my pantry, and sometimes even buy Roma tomatoes to keep around so I can make this in a pinch. In the past few years I've pared my cookbook collection way down and swore I wouldn't buy anymore cookbooks, but like I said this Tofu Masala pushed me over the edge. Your first two cookbooks arrived today and I'm looking forward to spending Christmas Eve and Christmas Day browsing the cookbooks after they warm up! They were ice cold when I unpacked them. 🤣 No where to go, it's too cold, so looking forward to reading them.

      We just finished this and it was a triumph. The only differences were that we sliced the tofu about 66% of your size, used your later chills oil and Kashmir chills powder. This will become a staple in our home over the coming months and years. So easy, but you definitely need a well stocked spice cabinet. Thanks Wil!

    This looks delicious and looks even better. One small suggestion, maybe before adding in the tofu and shallots if Wil blended the sauce to give it a velvety smooth texture it will be more like traditional Masala. This dish is definitely going on my recipes to try. Cheers!

      He has a similar eggplant recipe that I made yesterday. I wasn't a fan of it, but maybe I need to redo it again as my eggplants didn't seem to cook as well and it didn't have the depth of flavor I was looking for (I had tried another eggplant curry recipe that I thought tasted much better due to pre-cooking the eggplants in the airfryer/oven first)...I'll try again as I have more eggplants, but I'll try this recipe first since I love tofu.

    This recipe is absolutely on the dot. Being an Indian and a self-professed cook, I live to eat. I love East Asian cuisine and the subtle flavors e.g., Cantonese at one end and Sichuan spicy kind on the other. What is most fascinating is the array of container of a similar type but of varied size. I have struggled in vain. Any idea where I could buy these ones...of course, in different size? I need an array of four different sizes to size composition complete the over the counter 3 shelf cabinet to adequately equip it. Notwithstanding it goes without saying...I have faithfully followed your recipe. Just outstanding!

    i'm "plant based-curious" and this was the first yeung man cooking recipe I have tried! I can't eat a lot of carbs which makes finding vegan recipes a little hard sometimes so this one was perfect. it came out so deliciously. it would be great if the recipe in the notes had some more visual cues for the steps (for example in steps 4 and 6, should the onions/shallots be browned or only softened, etc) to make the recipe a little easier to follow. thank you wil and I love your content!

      @@josephboyet9785 I used plain basmati rice but coconut rice would be good. Plus, there’s at least two turmeric rice recipes on this channel that all would also work. If you wanted a third dish - fried Asian greens: something like bok choy pan fried with garlic, ginger and soy sauce.

    Thts how i make just few things different..i add cardamon whole coz some ppl dont like when they bite them and coriander seeds i keep powder ones ..so add that with masala n salt..
    Also i season my tofu with. Cumin powder and other few seasond and than in teaspoon oil brown them all side..rest is all same just i add kashmiri chilli powder as mention n if some ppl dnt like coconut milk they can add heavy cream
    .and yummy in ny tummy..🙏💜🇺🇲

    5:07 As an indian i really want to say this, We dont Use Cardamom for Every Curry Based Dishes, and also rather using Whole Cardamom seeds and coriander seeds like that you can always use the powdered versions of both spices, so that it tastes much better and doesn't bother getting stuck between teeths while eating 😁✌🏽

      I like how you sauteėd the spices, Wil! That is a critical step. You get the best aromas and flavours that way. Too many people just sprinkile the raw spices on top, when the food is done. This tofu massala is BOSS! ❤❤🙏

    Hi, oh my God! I cannot believe all the ingredients you put in this recipe. My taste buds are jumping all over the place. I believe I have all the ingredients except the shallots, so tomorrow, I believe I’ll go out and go get some shallots.
