DIY CREAM TART - alphabet cake - EASY RECIPE!

    This cream tart is bursting with flavor! The cookie layers are crisp on the outside, yet soft on the inside. The filling is a rich and creamy mascarpone whipped cream. Top it with your favorite fruits and you have a perfect mouth-watering dessert.
    This dough and filling makes enough for one double-layer letter.
    Ingredients:
    Tart Dough:
    2 egg yolks
    4 tbsp very cold water
    2 tsp vanilla extract
    2 1/2 cups all purpose flour
    2/3 cup granulated sugar
    1/2 tsp salt
    16 tbsp (2 sticks) cold unsalted butter, cut into ¼” cubes
    Cream Filling:
    8 oz mascarpone (1 cup)
    1 cup chilled heavy cream
    ¼ cup granulated sugar
    1 tsp vanilla extract
    Toppings:
    Fruits
    Cookies
    Fresh or gumpaste flowers
    Candies
    Apricot jam (for optional glaze)
    Directions:
    Preheat oven to 350 degrees.
    In a small bowl, stir together the egg yolks, water and vanilla; set aside.
    In a large bowl, stir together the flour, sugar and salt. Using a pastry cutter, cut the butter into the flour mixture until the texture resembles coarse cornmeal, with butter pieces no larger than small peas. Add the egg mixture and mix with a fork just until the dough comes together. Mix with your hands, if needed.
    If you prefer to use a stand mixer for the dough, stir together the flour, sugar and salt in the mixer bowl. Add the butter and beat on medium-low speed until the texture resembles coarse cornmeal, with butter pieces being no larger than small peas. Add egg mixture and beat until the dough comes together.
    Transfer the dough to a piece of parchment paper, and sprinkle the paper with flour. I first rolled my dough out to ¼” thick, but that was too thick, so I went a little thinner.
    Use a template to cut out 2 letters or numbers with a sharp knife. Transfer the dough to a cookie sheet and bake for approximately 12 - 16 minutes or until the edges start to brown.
    While the cookies are cooling, prepare the filling.
    Beat mascarpone and heavy cream with sugar in a large bowl until the mixture begins to thicken. Add the vanilla extract. Continue beating until the mixture holds a stiff peak.
    Place the filling into a piping bag and pipe dollops of the cream beginning with the inner and outer edges of the cookie. Place the second cookie on top and repeat the process with the filling.
    Add your favorite toppings! Brush the fruit with watered down apricot jam for shine.
    *Keep refrigerated. Best eaten the day it's prepared.

      Thank you! The cookie letters are approximately 7" x 9.5". I made an 'S' in a Word document as big as I could and printed it out on a regular sized 8.5 x 11" piece of paper. Hope this helps.

    Made this cake for my sister's birthday and everybody loved it! I reduced the sugar as we love it less sweet but my mistake was making the letter about 11" and as a result, it was a lil too thin. I didnt have the proper utensils for pipping and the cream was unevenly piped.. This recipe is a keeper!

    Hi thanks so much for this recipe! Can i just ask, the tart dough doesn't need to be put in the fridge? After making the dough and cut the letters i can put it right away in the oven to bake?

      Yes, it needs refrigeration because of the mascarpone filling. It doesn't affect the pastry. :)

      The cookie and filling will be ok overnight, but you should put the toppings on the day of.

    Hi looks amazing. If u refrigerate this cake will the biscuit base go soft? Wouldn’t the mascarpone mix do that? Thanks

      Hi, thank you! At the end of the video you can see me cutting into it. That was actually after it had been sitting in the refrigerator overnight. It wasnt soft... yay! It does need to be prepared the day you plan to eat it because the next day the cut fruit wasnt as fresh.

      The recipe in the description box is enough for a top and bottom cookie. The cookie letters are approximately 7" x 9.5". I made the 'S' template in a Word document as big as I could and printed it out on a regular sized 8.5 x 11" piece of paper.

    How would you recommend adjusting for chocolate cookie and two numbers?

      Hi Jess. My daughter and I tried making a chocolate version with this recipe and didnt care for it. I think I would try a completely different chocolate cookie recipe. If I find one that I like, I'll be sure to share it. :)

    My tart unfortunately was cracking ! Do you think I made it too thin ? Or possibly too much butter ? My letter is big also !!! I failed lol

      I wish I could have helped you! My letter was smallish (around 7" x 9.5). I've never had it crack before. I do find that if I use my pastry cutter rather than my mixer for the dough it turns out nicer.
