NUMBER COOKIE CAKE || MONOGRAM COOKIE CAKE

  • Finally! Here's a twist on that trending number cake i'm sure you've seen everywhere! This is a really quick, simple, and easy take on this dessert. It's a sugar cookie with buttercream, decorated with meringues and sprinkles.
    Recipe //
    Sugar Cookie Dough |
    1 Cup Butter
    1 Cup Sugar
    1 Egg
    1 1/2 tsp Vanilla
    2 1/2 Cups Flour
    1/2 tsp Salt
    Chill for about an hour or overnight
    Bake at 350 degrees for about 12 - 15 minutes or until you notice the cookies getting golden brown.
    Buttercream |
    6 oz Butter
    6 - 8 Cups Powdered Sugar
    1/4 Cup Milk or Heavy Whipping Cream
    2 teaspoons of Vanilla Extract
    Gel Food Dye
    Tips:
    Pink - Wilton 21
    Blue - Wilton 2D
    Yellow - Wilton 1A
    Purple - Wilton 4B

    I was wondering how this is to cut through? With a soft filling I always assumed that a cake would make the most sense for this technique. Your tutorial is very helpful and the end result is so gorgeous.

      A serrated knife would work best for a sugar cookie. It also depends on the thickness and firmness of the cookie.

      It depends on the thickness and how long you bake the cookie. If you want to be on the safe side you can always bake a half sheet pan cake and then trim it.

    There are two questions:
    Can I pre bake a day before the party and do the frosting the other day? And how to store pre baked cookie and the frosted one too?
    And I want to make number 6 so should I reduce the recipe to half?

      Sorry for the late response. I tend to chill this dough for 30 minutes or even overnight.

      The difference is in the amount of salt you add in. Since I use unsalted I can control how much I add to the recipe. If you use the salted butter id suggest removing the salt or cutting it in half.

      I just printed out the number on regular paper, trimmed it and then used that to cut the shape.

    Hi. This looks amazing. I was just wondering if I make this with mascarpone cream filling and leave it in the fridge over night, will it be the texture of an icebox cake? This is the texture in looking for like a cookies and cream icebox cake but without the chocolate flavoured biscuit?

      I’m sorry, I’m not too familiar with an ‘icebox cake’.
      I mean from what I’ve read it seems like it is just with sugar cookies instead of a chocolate biscuit.

      I unfortunately do not yet. But I do like to substitute the regular all purpose flour with Cup4Cup flour in my recipes.

      It can actually stay out at room temperature in a sealed container. But you can always keep it in the fridge.

      I'd recommend just keeping it in your fridge for 2 - 3 days.

      It’s easy to cut if you have a serrated knife.
      And the firmness depends on how long you bake each letter for. 😄

      Yes I did. Just looked up ‘letter outline template’ looked for the one I liked and printed it on regular paper.

    Hi is this okay to make with chocolate chip cookie base? Or does that not retain shape?

      Unless you have a letter/number mold or just cut the shape out after being baked, this method won’t work. Chocolate chip dough expands too much and won’t hold a shape if you cut the dough out like with the sugar cookie dough. Hope this helps.

      The recipe is enough for two numbers or letters. You only double if you need double digits.

    For your recipe, how is the cookie? Is it more firm or more soft? I've been trying to look for a recipe for a "soft on the inside" cookie for this type of cake. Thank you!

      They stay pretty soft depending on your baking time. I also recommend trying it with cake. You can bake a sheet cake and then trim your shapes out.
