It depends on the thickness and how long you bake the cookie. If you want to be on the safe side you can always bake a half sheet pan cake and then trim it.

I’m sorry, I’m not too familiar with an ‘icebox cake’. I mean from what I’ve read it seems like it is just with sugar cookies instead of a chocolate biscuit.
The difference is in the amount of salt you add in. Since I use unsalted I can control how much I add to the recipe. If you use the salted butter id suggest removing the salt or cutting it in half.
There are two questions: Can I pre bake a day before the party and do the frosting the other day? And how to store pre baked cookie and the frosted one too? And I want to make number 6 so should I reduce the recipe to half?
Unless you have a letter/number mold or just cut the shape out after being baked, this method won’t work. Chocolate chip dough expands too much and won’t hold a shape if you cut the dough out like with the sugar cookie dough. Hope this helps.

A serrated knife would work best for a sugar cookie. It also depends on the thickness and firmness of the cookie.

can you put this in a freezer to eat later? looks so great to make but never have the time to make when we need it.;)
I'd recommend just keeping it in your fridge for 2 - 3 days.

They stay pretty soft depending on your baking time. I also recommend trying it with cake. You can bake a sheet cake and then trim your shapes out.

It’s easy to cut if you have a serrated knife.

It can actually stay out at room temperature in a sealed container. But you can always keep it in the fridge.

The recipe is enough for two numbers or letters. You only double if you need double digits.
