How to Clean a Blue Claw Crab

  • This video shows how to clean a blue claw crab (Callinectes sapidus).
    -Please put your crabs in ice water to numb them so this is as humane as possible. Then just follow what is done in the video. It is easy...
    There is a recipe at the end of the video and below:
    water
    vinegar
    1 dozen live blue crabs
    1/2 cup OLD BAY Seasoning
    DIRECTIONS (from the old bay website)
    In a pot with a raised rack (minimum of 2 inches high), add equal quantities of water and vinegar to just below level of rack. Bring to a boil.
    Carefully layer crabs on rack; sprinkle each layer with OLD BAY. Cover and steam for about 10 minutes depending on size of crabs or until crabs turn red.

    I hope you are kidding. The whole idea of the ice and the rupturing of the brain is to numb them then kill them instantly (aka the total opposite of torture)... Throwing them into boiling water alive is torture.

    That is a good idea too! My new method is to actually rip the top part of the shell off really fast which kills them instantly.

      @@dpitt9195 you could do that, but boiling crabs whole makes the meat taste really fishy and unpleasant at least on my end. So it's better to just get rid of unnecessary parts

    Yea man, It kills them instantly and since they are on ice, they dont feel anything (they are cold blooded so the external temp is directly related to how they feel). When they are cold, their body slows and they go dormant (so hopefully they dont feel a thing)

      ChrisFix We have a house in Manahawkin, NJ and we keep crab traps off the dock in the back. All summer we can just pull them up and have fresh crabs whenever we want. All we pay for is bunker which is only like $5 per dozen. Places sell blue claws for around $20 a dozen. We can get around 40-50 crabs on 5 bunker so the bunker more than pays for itself.
      I clean the crabs the same way you do. Then I just sprinkle on some Old Bay and steam 'em. It's better than steaming or boiling them with the shells on because you get the flavor of the spices throughout the whole crab instead of it being just on the shells. Sometimes I'll make a butter, lemon and garlic sauce and brush the crabs after they're steamed just to change it up.

    Chris, noticed you are hosing them off but where? I do that and I'm going to bring all sorts of flies and other vermin running. I've done the sink and it makes for an easy clean up.

      +Scott Neuman We live in Whidbey Island, WA and for dungeness crab we just gut and rinse them in the ocean. Less mess in the kitchen or the driveway. Also for killing them we just hit them on the belly at the tip of the triangle with whatever you can find (small 1x1 piece of wood or stick), it kills them instantly.

      Scott Neuman Clean them on the boat or at the dock. Every dock I've been to by the Chesapeake has a hose. I clean on the docks so all waste goes in the water to continue the cycle.

    Def ask questions, that is what this is all about! Fresh crabs taste really great. Cleaning them isnt about being fun, it's about looking forward to eating them! It's fun/interesting the first few times, but after that it is work. My friends and I sit around on the back porch eating these guys after they are cooked and just have a blast talking and chilling. That is what is all about! This is def a good animal to start with to learn how to clean.

    We steam them live in Old Bay for about 20 minutes and then pick them apart. Not that we can absolutely claim to be the one right way to do it, but most of us cranky Marylanders think that leaving all the innards inside adds to the flavor. And half the fun is drinking beer as you pick them apart methodically.

    Thanks for that tip on how to wash the guts and gills away with a sprayer. I had just cleaned some, cutting the gills out, before I watched your video. Some viscera still clung to the inside of the crab, so I was looking for tips on how to most easily take care of that problem. It would have saved me considerable time if I had found your video before I even started cleaning them.

    The twitching is going to happen no matter what. They are such simple animals that even when their brain is severed from the rest of their body they twitch. At least you know they are not in pain. When you just boil them, they suffer. Plus, have you ever had crabs that were not cleaned? For some people they are hard to eat because the inside is gooey. In addition to that, you dont get the flavor from the old bay and whatever you cook them in when you dont clean them. Thx for the comment!

    i dont know if it matters but i appreciate you killing it first, cause ive seen people boiling them alive, and numerous times eating 'seafood' alive while its moving in your plate... its like a torture... i respect people who have the decency to kill the animal in the fastest way possible, so it wont suffer further...

    Do you live near saltwater? Can you catch them yourself? Crazy cheap if you do that lol. Plus it is fun! They dont feel pain if you put them on ice and then separate the top shell from the bottom one (a little different than in the video). It kills them instantly.

    I did this yesterday with 16 of them and it was not fun. They were iced but a knife through the brain and a crack down the front did not kill them outright (the nerve twitching of the legs did not help either) and then having to clean out the guts with the hose (and all the gunk splattering everywhere). Oh and the flies today. I think I will just throw them in a pot whole next time. Glad I'm not a butcher by trade. But thanks for the vid as the blue crab thing is new to me.

      Kyle Jenkins drain them after you clean them and you can store them in the freezer. I wouldn’t store them for more than a month or two tho.

    I pop the shell from the keeping the crab intact. Then boil in water with old bay and some olive oil for a couple minutes. Remove and immerse in cool or better even, cold water. That cause the meat to release from the shell mush easier. Just add good beer and enjoy.

    Sooo this is a weird question & I’ve tried to find videos on UA-cam & get these videos.
    My family recently went to the ocean our first time & my son found an already detached blue crab claw (not the whole crab just one pincher) well he wanted to keep it “forever”. Obviously it stinks like a different level of stink! Does anyone know how to “cure” them or preserve them in a way they won’t smell & that doesn’t ruin them? (He is 5)

    Just throw them on ice as you catch them...It keeps the meat fresh, keeps the crabs alive (make sure they dont go in water bc they will drown), and it will numb them. Good Luck! Let me know how you do! And you can skip the knife through the brain part if you can separate the top and bottom of the shell fast. That will kill them instantly too!

      I dont boil them, I steam them, but it will be a little faster because they are open. Just check to see when they turn orange/red. I prefer cleaning them first because it is easier to clean and you remove the organs that carry toxins. This is a good idea if you eat crabs multiple times a month.

    Didn’t your driveway stink for a while after spraying all of the crab innards all over the place? Few things smell worse than rotting crab. I only make crabs on trash night so I can get rid of the evidence before it starts stinking really bad. Chris

      That crab butter holds all of the toxins so it isnt worth it. Especially when you eat these guys 2 times a month. But it sure is tasty!

      Toxins?! As a molecular biologist I demand you cite evidence before I call it silly superstition. I agree I would avoid the "dead man's fingers" ie the lungs, but the rest of the world doesn't have the aversion to eating organs Americans have.

      I thought you were talking about the orange stuff. That is loaded with toxins. The gills are fine to eat. I am a marine biologist so you have no worries about your source of information ;)

    I love that you kill it humanely and clear out the fecal matter first before boiling. Then the boiling water is not contaminated with fecal matter and you can use it for boiling pasta too, or making soup. But please don't use alcohol. God Said. I ask God humbly to Bless you.

    Gotcha... I like the old bay soaked in (via the open/cleaned crabs. I also do not like to boil crabs or lobsters alive... But Maryland is big with crabs so...

    Thank you for being so humane. I was tormented by watching someone rip their little legs off while they were alive. I about cried.
    Be nice to your food and it will taste better. :3

      Crabs in general tend to be bottom feeders; they eat a combination of vegetation, clams/mollusks, and dead stuff.
