I'm not sure, but I think they mean cottage cheese when it says curd. Maybe ricotta? It looks a little dry, tho. Perhaps it's been strained in cheese cloth a bit or gently pressed between paper towels, IDK.

What I liked most about this video is that there is no unnecessary comments or explanations which I do not like to watch, which wastes a lot of time when you are in a hurry. This is perfect! And I loved the ease with which you are doing this making it look so easy and making the viewer want to try all of them :-) I would... one day! :-)
I want my 20 minutes back. None of these 'recipes' to use the term loosely were rare, or particularly old. Several of them have very bad bake times; ff you bake 80g rolls at 180 C for 25 minutes expect they will be very burnt. The powdered sugar will not save them. Calling for 'Dough' is a bit ludicrous given how many types of dough there are and 'curd' could be lots of things and each one would present its own conditions. This is mostly a video about how to make decorative shapes with dough, not recipes of any kind.
@itachisasku I have been cooking for 48 years. Do not show impudence. If I told you flour, salt, water, yeast mix and bake, I wouldn't call that a recipe. Except perhaps a recipe for failure. It doesn't prescribe specific instructions, measures, procedures or times. It could apply to hundreds of types of bread and unless you already knew a decent recipe, this one wouldn't help you make anything but a burnt mes.. So ka?

The title of this video promises a 200 year old recipe that I've definitely never had before... My mother, was a professional chef and I know what a recipe is, quite specifically. I am aware of the vagaries of the 18th century style of recipes too but if you are going to bring such a recipe into the modern era then you translate it and update it with the necessities. I've adapted recipes from the 14th century but I wouldn't tell people that I had a recipe for them and the say" Take some good gravy and some flour along with rasped crust of a day old penny-loaf with salt and pepper as you like and a half pint of sac. Add a measure of minced galengal to taste" That might give a chef enough guidelines to figure something out but not a cook who is just trying to learn something. The title of the video was disingenuous 'click-bait' and that is what I objected to. Anyone who watches this video has the right to comment on IT and share their opinion. That is the purpose of this section. You 'Peony & Roses' practically called me a liar, disputing my age and experience, which I didn't post in this particular thread, so you must have gotten that from another of my comments' and then you alluded to my upbringing as being deficient in social grace. I think they would call that, projection these days.
What recipes ? a recipe is not the same as a list of ingredients you do know that don't you. Unless it's a magic show, throw all into a hat, shake it up, say the magic word and hey presto - pastry. Or go to supermarket, buy it ready made or frozen, copy list of ingredients from back of packet, hey, nobody will know, just don't film the making of the '200yr' old recipe.
So making fancy shapes with puff pastry is a 200 year old 'recipe?' Is this video a joke? I feel like I just got pranked. There isn't even a recipe here. It's 8 minutes of B roll. Seems more like a dude showing off than anything else.

The presentation of this video is absolutely gorgeous! Just amazing! So professionally done! Seriously, your videography is next to perfection! So, why the clickbait? Why did you think it necessary? That part actually leaves me feeling a bit angry. People really don’t like clickbait. You should hear that, if you don’t listen to anything else I say. Even though you showed how to shape the various pieces of dough (that were such creative variations), it left me wanting... I found myself wanting you to tell me about this dough! You say it’s over 200 years old? How do you know that? There’s no explanation...no narrative. Where did the recipe come from? How did you get it? Some type of explanation would’ve been much more interesting...fulfilling. And, how did you make the dough? Ingredients can be put together in so many different ways...even in baking. And, how much of each of the ingredients were used for the fillings and toppings? Just listing the ingredients by name doesn’t help. I’d love to see you add “voice” to your videos! Why not? Even a “voice over” version. It would be so much more satisfying...more than just eye candy. You could still have sections of this beautiful video in it, if you wanted. And I certainly would want to still see it! Don’t cheapen your beautiful videos by using clickbait. It won’t help your membership, it will frustrate people and make them not want to watch anymore...especially if you don’t even address what it says! It will make them give up and leave. You know I felt the same way, and even typed out a comment saying something similar to yours.... Then I looked in the description box for the video and found not 1 but 2 recipe's for the dough and all the others too. It's not click bait, it's all there.
@@mattl9070 No. You found a list of ingredients for two recipes. That’s very different. As I explained in my comment, the same ingredients can be combined in different ways with very different results. Take gravy and biscuits. Same ingredients...oil, flour, water or milk...totally different results. Nuances, even in bread recipes, can make huge differences. And he also listed the recipe with 100 mls MORE milk, and only 10 grams difference in flour as the “thick” dough, which doesn’t make sense at all. Neither did he tell where the recipe came from, or how he knew it was 200 years old, etc. I can find two lists of varying ingredients for bread, but that doesn’t make it 200 years old. So, in my opinion, it IS clickbait. If you’re going to make such a huge emphasis in the title, you should be professional enough to follow through.

I did however notice the differences in the recipes and common sense would suggest the one with less milk is the thicker dough and believe it or not a 200 year old recipe is not uncommon. There's only a few ingredients to either recipe so if you've made dough before.... Next time I'll let you wollow in your own ignorance.

@@madovoeffray2184 Thanks for asking. I would like to share some observations. Unfortunately, I don't know how to put a picture of them in this reply. 1. The dough is firm. You'll need a stand mixer. Let the dough rise for an hour or so. 2. I used the same amount of cinnamon sugar as I could determine from the video, but I have a sweet tooth and would definitely use more. I would generously sprinkle some just before folding the dough and after the milk. I think this would take it to another level. 3. I use a scale to measure ingredients. 4. Adjust the cook time to account for your oven. 5. Eat them the same day while they are still crisp. They don't store well. I hope you find this useful. Enjoy!
180° C is common for 350° F, however it's actually 356° F. Those are not what we call sausages in the US, they are fully cooked Hot Dogs. So, we call those a, Pig in a Blanket. I use the small round uncooked sausages but fully cook them for twenty minutes at 350° F first. Never try Pigs in a Blanket with Raw Pork Sausage.
They do it for the algorithm to make it show up in as many keyworded searches and recommendations as possible. Unfortunately the stupidest and cringiest titles and thumbnails see the best response.

What I liked most about this video is that there is no unnecessary comments or explanations which I do not like to watch, which wastes a lot of time when you are in a hurry. This is perfect! I want my 20 minutes back. None of these 'recipes' to use the term loosely were rare, or particularly old. Several of them have very bad bake times; ff you bake 80g rolls at 180 C for 25 minutes expect they will be very burnt. The powdered sugar will not save them. Calling for 'Dough' is a bit ludicrous given how many types of dough there are and 'curd' could be lots of things and each one would present its own conditions. This is mostly a video about how to make decorative shapes with dough, not recipes of any kind.
I was lured in by the click bait thinking it would be a stellar dough recipe. What a disappointment.

@itachisasku I have been cooking for 48 years. Do not show impudence. If I told you flour, salt, water, yeast mix and bake, I wouldn't call that a recipe. Except perhaps a recipe for failure. It doesn't prescribe specific instructions, measures, procedures or times. It could apply to hundreds of types of bread and unless you already knew a decent recipe, this one wouldn't help you make anything but a burnt mes.. So ka?

The title of this video promises a 200 year old recipe that I've definitely never had before... My mother, was a professional chef and I know what a recipe is, quite specifically. I am aware of the vagaries of the 18th century style of recipes too but if you are going to bring such a recipe into the modern era then you translate it and update it with the necessities. I've adapted recipes from the 14th century but I wouldn't tell people that I had a recipe for them and the say" Take some good gravy and some flour along with rasped crust of a day old penny-loaf with salt and pepper as you like and a half pint of sac. Add a measure of minced galengal to taste" That might give a chef enough guidelines to figure something out but not a cook who is just trying to learn something. The title of the video was disingenuous 'click-bait' and that is what I objected to. Anyone who watches this video has the right to comment on IT and share their opinion. That is the purpose of this section. You 'Peony & Roses' practically called me a liar, disputing my age and experience, which I didn't post in this particular thread, so you must have gotten that from another of my comments' and then you alluded to my upbringing as being deficient in social grace. I think they would call that, projection these days.

What recipes ? a recipe is not the same as a list of ingredients you do know that don't you. Unless it's a magic show, throw all into a hat, shake it up, say the magic word and hey presto - pastry. Or go to supermarket, buy it ready made or frozen, copy list of ingredients from back of packet, hey, nobody will know, just don't film the making of the '200yr' old recipe.
So making fancy shapes with puff pastry is a 200 year old 'recipe?' Is this video a joke? I feel like I just got pranked. There isn't even a recipe here. It's 8 minutes of B roll. Seems more like a dude showing off than anything else.

So, why the clickbait? Why did you think it necessary? That part actually leaves me feeling a bit angry. People really don’t like clickbait. You should hear that, if you don’t listen to anything else I say.
Even though you showed how to shape the various pieces of dough (that were such creative variations), it left me wanting...
I found myself wanting you to tell me about this dough! You say it’s over 200 years old? How do you know that? There’s no explanation...no narrative. Where did the recipe come from? How did you get it? Some type of explanation would’ve been much more interesting...fulfilling.
And, how did you make the dough? Ingredients can be put together in so many different ways...even in baking. And, how much of each of the ingredients were used for the fillings and toppings? Just listing the ingredients by name doesn’t help.
I’d love to see you add “voice” to your videos! Why not? Even a “voice over” version. It would be so much more satisfying...more than just eye candy. You could still have sections of this beautiful video in it, if you wanted. And I certainly would want to still see it!
Don’t cheapen your beautiful videos by using clickbait. It won’t help your membership, it will frustrate people and make them not want to watch anymore...especially if you don’t even address what it says! It will make them give up and leave.

You know I felt the same way, and even typed out a comment saying something similar to yours.... Then I looked in the description box for the video and found not 1 but 2 recipe's for the dough and all the others too. It's not click bait, it's all there.
@@mattl9070 No. You found a list of ingredients for two recipes. That’s very different. As I explained in my comment, the same ingredients can be combined in different ways with very different results.
Take gravy and biscuits. Same ingredients...oil, flour, water or milk...totally different results.
Nuances, even in bread recipes, can make huge differences. And he also listed the recipe with 100 mls MORE milk, and only 10 grams difference in flour as the “thick” dough, which doesn’t make sense at all.
Neither did he tell where the recipe came from, or how he knew it was 200 years old, etc. I can find two lists of varying ingredients for bread, but that doesn’t make it 200 years old.
So, in my opinion, it IS clickbait. If you’re going to make such a huge emphasis in the title, you should be professional enough to follow through.

I did however notice the differences in the recipes and common sense would suggest the one with less milk is the thicker dough and believe it or not a 200 year old recipe is not uncommon.
There's only a few ingredients to either recipe so if you've made dough before....

@@madovoeffray2184 Thanks for asking. I would like to share some observations. Unfortunately, I don't know how to put a picture of them in this reply.
1. The dough is firm. You'll need a stand mixer. Let the dough rise for an hour or so.
2. I used the same amount of cinnamon sugar as I could determine from the video, but I have a sweet tooth and would definitely use more. I would generously sprinkle some just before folding the dough and after the milk. I think this would take it to another level.
3. I use a scale to measure ingredients.
4. Adjust the cook time to account for your oven.
5. Eat them the same day while they are still crisp. They don't store well.

180° C is common for 350° F, however it's actually 356° F. Those are not what we call sausages in the US, they are fully cooked Hot Dogs. So, we call those a, Pig in a Blanket. I use the small round uncooked sausages but fully cook them for twenty minutes at 350° F first. Never try Pigs in a Blanket with Raw Pork Sausage.
