    Very bad advice. You cannot pressure can anything with a dairy product in it, let alone flour also. If you’re going to can the soup, do it without roux. Can it with just the tomato base and then add the roux when you’re ready to eat it. Never pressure can anything with butter, milk, cream or flour in it !!!!

      +Kathy Meade Hey! I always tell people to can within their comfort zone. It is not usda recommended to can with flour but my family and thousand of people have been doing it for decades. Historically, there weren’t thousands of canning books as access for rural families. They just figured out how to can stuff themselves. I know people that can butter for long term food preservation, Mac and cheese (that has flour and dairy in it), etc. people have figured out on their own how to can basically ANYTHING at home because unfortunately in 2023 our government has failed us and they still have not tested canning hundreds of ingredients for home canning. You can pressure can dairy products and flour just fine. I have done it hundreds of times and the Amish have been doing it for decades. If you aren’t comfortable, then follow usda guidelines. There is no harm in that:) Happy canning season!

      think i figured it out, roux is like a gravy starter? butter, flour, heat, stir, thickens, add the tomato mixture

    • @CollinsCountry
      @CollinsCountry  11 місяців тому +1

      +Espresso Dave Hey! Yes, a roux is made with butter and milk. It thickens the tomato soup. It’s a base for a lot of soup recipes in the country:)

      +CHAR OLNY Hello there! You’re absolutely right! I try my best to keep my videos short and to the point, so I don’t mention measurements as I make I videos. I will start adding that info into the description to help people. And it was 1 teaspoon salt:) Thanks for the advice!

    • @CollinsCountry

      +xXxM1LKYW4YxXx Hey! The lower case t is teaspoon and the uppercase T is tablespoon. Sorry. I should explain that in my videos. I don’t think that’s “correct” abbreviations but it’s how my family has always done it haha. It’s probably a hillbilly thing lol. Enjoy! :)

    • @CollinsCountry
      @CollinsCountry  11 місяців тому +1

      +Kimberly U Hey! Butter can be canned but it has to be pressure canned because it is a low acid food:) Flour isn’t “unsafe” according to the usda reccomend stinks, it just hasn’t been tested yet to see if it’s safe or not. This is an Amish canning recipe and I have done it with no issues. If you’re not comfortable with it then use tomato paste instead:) But the butter and flour adds a delicious flavor! I just ate a can yesterday from July of 2022 and it was perfection:)

    Please at least put a disclaimer on your video saying that this is not a tested and approved recipe. Canning flour and dairy is not approved and should not be

    • @CollinsCountry

      Hey! I understand that this is not a USDA approved method. Unfortunately, the USDA has not put the time or money into testing everything for home canning. Fortunately for me, I come from a family that "figured it out." They taught themselves how to safely can hundreds of different food items back before there were canning cook books or regulations. You actually can use dairy and flour in canning recipes, it just is not usda approved and it must be pressure canned. People can Mac and Cheese all the time which obviously has dairy and flour in it:) I have used butter in canning for a long time and it works great! I will make it more clear though that some of my canning videos are not usda approved. If only the internet strangers could see how my grandparents can food in giant steel tubs over fires in their backyard. There would be no more people on the internet because they would all die of heart attacks from watching the "not-approved" methods old country people use. lol But Thousands of jars have been canned that way by my family for decades and no botulism or spoiled food. All is good:)
