Oh my gosh, celery is sooo worth the garden space !!! I have 6 plants in a six foot row, it takes no effort, has no bugs and is amazing !!! I dehydrate the stalks and leaves for winter, so nice and fresh ! As it starts to get cooler they continue sending up new shoots !! My daughter has a horticultural degree and she is totally organic, she says store bought celery is one of the “dirty dozen” ! Plant it close together, it is worth growing ! I live in zone 3 and it thrives !!!!

Like you, I don't need any more stewed tomatoes or salsa or tomato sauce so this summer I have been roasting small batches of tomatoes and aromatics as the tomatoes accumulate. I whiz them in the Vitamix skins, seeds and all and then freeze the whole batch. When the garden is finally done I will thaw all those various batches and can the lot of them and have lots of delicious roasted tomato soup. I had been toying with the idea of adding carrots and now you have convinced me to do it on the next batch. Your batch looks so pretty and knowing what a good cook you are I know it was delicious. I put my washed jars on a tray and put them in my oven T 250 for 1/2 hour . That way it’s a time saver and easy to grab a hot jar from the oven but not from hot water. My canner is at same heat. Works for me.
Love this video. Watched it 4 times. I did 4 trays of all different tomatoes. I need to add more celery and onion and then broth. Going to can this week. Wow your vegetables look amazing Linda. Im jealous of your nice dry weather there. In the east coast it get so humid and some of my veggies get moldy in the garden. We also went to the orchard and got a bushel of Honey Crisp apples for $30 which i thought was pretty good since i did not have to pick a thing. Going to can applesauce too.

I have not canned any yet, because the Center For Home Preservation has no recipe, so I came to the experts here. I made this today. I added a potato to help thicken and this way I didn’t need to wait for the soup to reduce. I also added celery salt, because I love a hint of celery. This soup was delicious!!!!

Once I can find someone to buy my piano, then I should have the funds I need. Kind of funny to trade and old pass time / hobby for what I am now interested in. I was hoping to see a little bit of the process with the actual pressure canner. Looks like you stacked your jars at 2 levels, which tells me the water does not have to cover the jars. I thought it did. Also fires it matter if I use different shape/ size jars or must they all be the same? Thanks

Being a full time rv’er, I wish there was some sort of network for using a pressure canner. Believe it or not, I do “prep” & stock up even in my limited abode. It would be great to be able to pressure can some meats and veggies that require that method.

Do you remove the tomato skins? I heard that you don't want to can skins of tomatoes, potatoes or apples.

Tried to grow celery for the last three years and it just doesn't seem to do well in the Pacific Northwest. But I agree, what did grow was Amazing!!!

I have been roasting my tomatoes on the grill and I let them cool an hour before I touch them. It is much easier to handle.
