I learned to cook from my mother. She would use a small bone in chuck roast. She would brown it first to get a good sear on it, then cook it with onion and spices and then shred it when the meat was cooked and tender. Lots of yummy vegetables,and barley, which I love. We had a recessed back burner on our stove (deep, with a large heavy aluminum pot) and Mom would make that full of soup.... Enough to feed 5 hungry kids! She died when I was 15, and now I am a grandmother, and I still make my vegetable beef soup this way! Kind of a tribute to her.
Not gonna lie just getting into UA-cam for things other than music. I am so glad I found you love your recipes love your cookware. Also love that I grew up watching you with my mamaw on TV I have some really great times watching you and trying to.do.your recipes for her. She's been going a bit now and I miss her terribly )she was our families rock things aren't the same without her) finding you today melted my heart. Now I'm baking corn bread (my mamaw was from Texas corn bread with every dish fresh homemade pan every morning) making this vegetable soup with my niece and nephew that live with me. Tbh I've been living off homemade veggie soup for the last couple of months. Not to do with shortages of food but just the ease of coming home after a long shift ( I'm a nurse in CA) and just reheating. It makes life far easier for me at the moment. Nutritious and easy on my stomach after my day.

They all taught me as I was growing up to cook and I’m so glad they did and so glad I stayed in the kitchen with them and my mother as well! Now I cook and take care of my mother and have been for many years being my mother is 78 years old and with all this covid running around I’m so scared she is going to catch it if she gets out in it so I do everything I can for her! Regional difference for sure.We start with cabbage, carrots, onions and tomatoes then add potatoes and whatever vegtable we have on hand. I freeze any leftover peas, corn, green beans and lima beans and add those. Then we add whatever beef we cooked or had leftover or simply a can of corned beef. Theres a long history of how our Applachian Mountain/coal field recipes came to be here in Southern West Virginia. Whatever is or is not in it, vegetable beef soup is very much a comfort food. And, we eat it with corn bread.
Paula is such a sweet lady and I love watching her. I wish she would explain how to fry chicken and make chicken gravy with biscuits. I miss that from my mama. She passed away 16 years ago.

My Mother made the absolute best vegetable soup. She always saved leftover vegetables in the freezer until she had enough to make a big pot of soup. I even still have one of the bowls that I always ate her soup from. ❤️ Precious memories.

I have always made my homemade soup with macaroni bc the ladies in my high school lunchroom made the BEST homemade beef vegetable soup and it had macaroni in it. They would serve it with these wonderful grilled cheese sandwiches which were made with hamburger buns. I would love to dip those great sandwiches in that delicious soup. Oh so good.
I love that you also put potatoes with pasta in your soups. It just makes it so much hartier. I also usually have a bunch of 1 serving leftover bags of frozen veggies that I use for my soups.

She would put them is a half gallon milk carton and freeze them When it was full she would put all the other stuff , her meat was usually any leftover meat from a roast.i have to say it was delicious. Sounds very good. I make a beef barley soup in which I use beef shank. It comes with the bone in so I get the marrow and the bone. I brown the beef in the stockpot so you get the flavor from the browning and the fond on the bottom of the pot. Then I cube the meat very small. Then add tomato paste and brown that. Then I put the water in with the meat and bring to a simmer, cooking till the meat is tender. Season with salt and black pepper (for me I also add a bit of Crystal Louisiana hot sauce to taste 😃) Then add the barley, then bring to a boil, then add bay leaves and a tied up bunch of parsley and thyme sprigs, simmer after adding diced carrot and celery and mushrooms till veg is tender. Gawd, it's GUUUUUUD!!!! Enjoy!!!

It makes my day when I see Paula Deen has uploaded a new video in her series Quarantine Cookin'. The soupl looks AMAZING as everything always does. I'm going to tweek my recipe after seeing this. We definitely have controversy over to add noodles or not add noodles. My son and I love the potatoes and noodles and my husbands sweet Mama didn't add noodles and he just thinks that should settle that. I love seeing you Paula. Please, Please NEVER stop making videos. My grandmother made the best veggie soup. She'd keep a large rectangular and tall Tupperware container in our freezer. Every time we had even a lil left over cooked veggie( except broccoli and asparagus) in that container l. Any left over broth, gravy even rice or pasta ( long pasta would be broken up preferably elbows was thrown in. When this was full. Granny would nake her soup adding whatever was needed like, broth. V8 cabbage chopped really makes it extra special she'd add some whole or chopped canned tomatoes garlic onion 🌿 herbs mmmmmmm. Best soup ever

Sometimes I put macaroni in my vegetable soup like my great aunt did. Also, towards the end, I add some sliced smoked sausage or kielbasa, whatever I have on hand. I've even used those little smoked sausages. Really good with cornbread!!

Looks great Paula. My mother's secret was to brown the beef FIRST in a frying pan - then deglaze with some water - scrape all the residue browned bits from the pan - and use that 'brown gold' as part of the required amount of water. This imparts a great cooked beer flavor to the soup!

I always brown the short ribs in butter coated with flour. After it's browned I remove the meat and add onions, carrots and celery to brown. Then I put the meat back in. Then I add a few cartons of beef broth. Can of tomato puree. Cook for a few hours until meat falls off the bones,.that means it's done. Season and add a slurry to thicken. Yum. No green beans, corn and especially no collard greens.
Paula dear, have you ever had white half runner green beans?? They are a bush bean. And the ONLY green bean I will eat. Mom and I can 2 bushel every year. I don't like them put in the freezer but some do. Mine has to come from a mason jar. We cook ours with salt pork and when they are done we eat them with a wedge of raw onion. Yummy 😋

My mother made the very best vege beef soup & she also used beef ribs,so of course I make it like mama did. It’s basically like yours but she also used cumin, thyme & cabbage & frozen Lima beans. I make a 22 qt. Pot & share with neighbors. It’s always better the next day. Now I’m gonna have to make some for my grandson who is coming home to MO to stay with me through some of this pandemic. I love beef vegetable soup. I make it every Fall as soon as we get our first cold front! And I freeze portions. I use soup bone “roulettes” because the meat is so tender and flavorful. I also add cabbage, green beans and turnips to mine. I’m a Cajun so we tend to do things like momma did!

My grandma didn't use pasta, but mostly everything else. She made buttermilk oven bread in a cast iron to accompany it.

It makes my day when I see Paula Deen has uploaded a new video in her series Quarantine Cookin'. The soupl looks AMAZING as everything always does. I'm going to tweek my recipe after seeing this. We definitely have controversy over to add noodles or not add noodles. My son and I love the potatoes and noodles and my husbands sweet Mama didn't add noodles and he just thinks that should settle that. I love seeing you Paula. Please, Please NEVER stop making videos. We love all that you share in the Granger household!!

I don’t put pasta in mine, but I might have to try that sometime. I sometimes put a little barley in mine. I’ve used a big soup bone for my stock, but I’m going to try the short ribs. This soup looks delicious. I usually put my leftover beef in my vegetable soup from the roast I made from a previous meal. Thank you for the soup recipe. Soup is one of my favorite things to eat.
I do the mac on the side so they dont get soggy next day. Thank You Paula, taking time with HENERY!!!
You MUST try it with the macaroni. I’ve always put it in my soup.
We always add cabbage and tomato juice. Cabbage is a must.

My grandmother made the best veggie soup. She'd keep a large rectangular and tall Tupperware container in our freezer. Every time we had even a lil left over cooked veggie( except broccoli and asparagus) in that container l. Any left over broth, gravy even rice or pasta ( long pasta would be broken up preferably elbows was thrown in. When this was full. Granny would nake her soup adding whatever was needed like, broth. V8 cabbage chopped really makes it extra special she'd add some whole or chopped canned tomatoes garlic onion 🌿 herbs mmmmmmm. Best soup ever

Sometimes I put macaroni in my vegetable soup like my great aunt did. Also, towards the end, I add some sliced smoked sausage or kielbasa, whatever I have on hand. I've even used those little smoked sausages. Really good with cornbread!!

Looks great Paula. My mother's secret was to brown the beef FIRST in a frying pan - then deglaze with some water - scrape all the residue browned bits from the pan - and use that 'brown gold' as part of the required amount of water. This imparts a great cooked beer flavor to the soup!

What a sweet thing to say. She surely IS loved and appreciated. Thank you, Ms. Maywell. I don’t know what we would all do without Ms. Paula’s wonderful cooking videos. They sure bring me a lot of comfort and deliciousness.
I always brown the short ribs in butter coated with flour. After it's browned I remove the meat and add onions, carrots and celery to brown. Then I put the meat back in. Then I add a few cartons of beef broth. Can of tomato puree. Cook for a few hours until meat falls off the bones,.that means it's done. Season and add a slurry to thicken. Yum. No green beans, corn and especially no collard greens.
Paula dear, have you ever had white half runner green beans?? They are a bush bean. And the ONLY green bean I will eat. Mom and I can 2 bushel every year. I don't like them put in the freezer but some do. Mine has to come from a mason jar. We cook ours with salt pork and when they are done we eat them with a wedge of raw onion. Yummy 😋

My mother made the very best vege beef soup & she also used beef ribs,so of course I make it like mama did. It’s basically like yours but she also used cumin, thyme & cabbage & frozen Lima beans. I make a 22 qt. Pot & share with neighbors. It’s always better the next day. Now I’m gonna have to make some for my grandson who is coming home to MO to stay with me through some of this pandemic. He is a Public Defender from Ft Lauderdale FL. He always asks for vegetable soup. Thanks for all the recipes Paula ❤️

I love beef vegetable soup. I make it every Fall as soon as we get our first cold front! And I freeze portions. I use soup bone “roulettes” because the meat is so tender and flavorful. I also add cabbage, green beans and turnips to mine. I’m a Cajun so we tend to do things like momma did!
