Simple Lentil Veggies Soup

  • A gorgeous soup that can be done in an hour!
    Ingredients:
    red lentils - 14 OZ (420 gr)
    carrots - 3 OZ (90 gr)
    cauliflower - 12 OZ (360 gr)
    potatoes - 3 OZ (90 gr)
    zucchini - 10 OZ (300 gr)
    bell pepper - 3 OZ (90 gr)
    leek - 3 OZ (90 gr)
    vegetable oil - 1/2 cup
    asafoetida - pinch
    fenugreek - 1/2 Tsp
    Cumin - 1/3 Tsp
    coriander ground - 1/2 Tsp
    dried basil - 1 Tsp
    salt - 1 Tbsp
    dill, parsley
    water - 3 litres.
    Add vegetable oil to the saucepan, add the spices and warm them up a bit.
    Alternately fry diced vegetables on medium heat. This stage takes about 10 min.
    Add dried basil. Pour boiling water in.
    Wash the lentils, put it into the saucepan and simmer for about 30 minutes.
    Salt, add finely chopped greens.
