How to Make a Perfect Ratatouille

- Ratatouille is a masterpiece of French cuisine. A simple step-by-step recipe will help you to make this incredibly tasty dish.

Ingredients for sauce:
Tomatoes - 2 POUNDS (900 gr)
Pepper - 8 OZ (250 gr)
Onions - 7 OZ (200 gr)
Carrots - 7 OZ (200 gr)
Celery stalk - 3 OZ (100 gr)
Chili pepper - 2 OZ (60 gr)
Clarified butter- 2 OZ (or regular butter) (60 gr)
Garlic - 2 cloves
Herbs de Provence - 1 tbsp.
Salt - 1 tbsp.
Sugar - 1 tbsp.
Thyme
Basil
Ingredients for the top layer:
Zucchini - ½ pound
Eggplant - ½ pound
Marrow squash - ½ pound
Tomato - 10 OZ
Potato - 7 OZ
Onion - 7 OZ
Pepper - 5 OZ
Olive oil - 2 fl Oz
Salt - 2 tsp.
Thyme
Making sauce:
1. Put peppers into the preheated oven 350°F (180 °C) for 20 minutes.
2. Slice a shallow X on the tomatoes and put them into the boiling water for 10 minutes.
3. Blend the tomatoes.
4. Fry with olive oil onions, carrots and celery stalk. Add clarified butter.
5. Pour in tomato puree and add some bay leaves.
6. Peel the roasted peppers, chop and add to the pan.
7. Add herbs de Provence, garlic and chilli.
8. Cover the pan and simmer for 60 minutes, then remove the lid and simmer for another 30 minutes.
9. Slice vegetables - 3-5 mm rings. Put eggplant and marrow squash into the bowl with cold salted water for 20 minutes.
10. Add thyme and basil, then blend it a little bit.
11. Spread the sauce in a mold, lay out the vegetables, alternating the sequence.
12. Make a dressing of olive oil, thyme, salt and pepper. Pour the vegetables with it.
13. Cover the mold with foil and send to the preheated to 350°F (160°C) oven for 90 minutes.
14. Take off the foil and roast for another 40 minutes.
15. Serve hot with parmesan and parsley.

This took over 4 hours to make. I just took it out of the oven and it smells amazing. I was tasting it along the way and the roasted bell pepper and tomato sauce is incredible. I cannot wait to have it for dinner tonight. I will update on how it tastes.
Update: It is incredible. I have had ratatouille before that wasn't so great. What made this recipe stand out was the sauce and how creamy it was. This is how i imagine the dish from the movie tasting. It is really worth a try if you have all day to kill. Thanks for the recipe.

Hey I wanted to ask how many eggplants, zucchini, marrow squash, bell pepper, onions and tomatoes did you use for the last part where you have to put them on top of the mixture ??? Or just one ??
@@montserratvalenzuela8273 In my case, one of each sufficed, except for onions and tomatoes, that I had to use almost two of each one. Anyway, whatever is left over, you can use for some other purpose. BTW, I also used one potato and no pepper. In another video I watched, they strongly suggested to be generous on roasted peppers because they provide lots of flavor. The vegetable I liked the most was onions, due to it's crunchy texture, so you might want to take that into consideration. Good luck!

When I was younger I actually thought ratatouille wasn’t a real dish I thought it was just on the movie. When I found out this was real I was like people actually get to eat that their so lucky!

This was like 2.5 hours of hands on work, and 6 hours total including cooking time. I’m exhausted, but my belly is happy. 😋 Love this stuff, but it really is a labor of love.
That's why the good stuff costs so much when you order it in a restaurant.
I'm not a great cook but I followed this recipe and my god ive never felt more like a gordan ramsay 5 star chef ever in my entire life. It is really easy to make it just takes alot of time and patience. Paired it with a steak and my goodness it is just fantastic. 10/10 would reccomend even if you don't do alot of cooking.

This recipe is amazing!!! I'm definitely no cook, don't spend much time in the kitchen; my younger siblings and I attempted this for the first time for our moms birthday and it came out PERFECTLY, so easy to follow highly recommend 😋
I have made this multiple times (vegan... I just use vegan butter) and it is amazing. My entire family loves it . It does take a very long time to make, so I suggest purchasing a mandolin instead of chopping everything by hand. It really saves time. Definitely worth trying.

Ratatouille actually has no fixed recipe. It's a dish that uses up vegetables you have left over - during harvest often in abundance. Recipes like the one above merely are a variety known to come out tasty.

I made this today for my boyfriend and his mother and we all loved it!!! It was such nice, comforting food. The flavors came together so nicely. It took me all afternoon but it was worth it.
Made it by this recipe a few months ago and it took about 4 hours to make. The recipe is amazing, the taste, the smell, the texture... follow this video and you will make a perfect dish. I came back to this video to make it one more time, definitely not the last time

I just cooked it!! It is so delicious and smells amazing! I don't really love veggies, but this recipe is incredible! Result is totally worth the effort.
Just made this a couple weeks ago and I have to say it’s one of the best things I’ve ever cooked. I love the added spiciness from the peppers. If you’re looking to cook this I suggest doing it in two days. One day make the sauce and while the sauce is simmering slice up all your veggies and layer them in order. Put everything in the fridge for the night, And then the next day put it all together and cook it. This way you are not spending half of your day on this recipe as it takes about four to five hours of work and cooking.
But doesn't precutting the veggies make them wilt or brown?

This took me 4 hours to make, and was so delicious. I would suggest making the sauce beforehand and put in the fridge if you don't have that kind of time, then warm it up and assemble with cut veggies and bake

Hey guys it took me 4hrs 30mins to make it. I made these recipe today for dinner. I started from roasting the bell peppers to making the beautiful tomato sauce, to everything. Took me 2 hours and 15 mins to bake.
Got so tired after making it. But it's worth trying.

Hi! this look delicious but as a French person from Provence (the part of France were ratatouille is from) I need to say that this is not ratatouille. This is a tian, another traditional Provençal dish made out of the same ingredients but made completely differently. A tian as you can see in the video is made of thin sliced vegetables that are well organized in a dish and cooked in the oven. Whereas a ratatouille is made of roughly diced vegetables, cooked for hours on a stove, and when it's done you're not actually able to distinguish any vegetables since it was cooked so long. Both are delicious (I personally prefer ratatouille), but taste different and are different dish.

i've made this 3 times and it's better everytime so good. my first time it looked awful but was still so amazing. It's definitely easier to make if your veggies are close in width. My eggplants were huge compared to my squash the first time i made it

I made this today, it was very nice! I just added some extra chilli and served it with couscous and it was perfect
